WOW! Thanks for all of the amazing responses. I am going to take and make some of these recipes for sure! And some of the ideas!! I ended up grabbing stuff for breakfast for dinner. I haven't had time to make a real breakfast in months, so I'm going to make a little of everyone's favorites. It's easy enough...and the quiche sent me in that direction! Thanks again!

Taco Salad. It's too hot to cook, but still need it to be substantial enough to fortify my meat eater. So, prebaked taco salad shells, leftover steak, a tossed slald, shredded cheese and pico de gallo and everybodys happy.
My MIL brought us cabbage rolls. I'll probably roast some zucchini to go with it and make a salad with tomato, onion, parsley and mozza.
We're having tacos. We need to use up some of our home grown tomatoes and peppers.
Don't know...I'll ask my husband when he gets home. :)

Last night was turkey burgers, corn on the cob, and a salad made of baby spinach, pecans, watermelon, and gorgonzola cheese with vinaigrette dressing... Sounds weird, tastes AWESOME!!
Baked spaghetti, salad, and garlic bread. YUM !!!!

Here is the recipe:
EASIEST & BEST HOMEMADE ALFREDO SAUCE
1/2 cup butter
1 pkg. (8 oz.) cream cheese
1 cup half and half
1/3 cup Parmesan cheese
1 tablespoon garlic powder (optional)
pepper, to taste
This by far is the easiest and best Alfredo sauce recipe I have found yet! I love pasta and Alfredo and searched forever to make it homemade. I think that too many recipes have too many ingredients and that others are too watery. My girlfriend loves it and makes me cook it at least once a week.. plus you can add it to so many different things! This is a great, simple recipe to make for someone coming over for a dinner date ;) 1. In a medium saucepan, melt butter.
2. Once butter is almost melted, add the package of cream cheese. It's easiest to cut it into 4 pieces so that it melts quicker.
3. Once butter and cream cheese are mixed well together, add the cup of half and half, Parmesan cheese, garlic powder, and then shake pepper on top. Stir all together until well mixed.
4. Once it's mixed well and sauce like, take it off the burner and set aside so it can thicken up. Stir every few moments.
5. DONE! Pour over your favorite pasta and veggies!
Chili, in honor of the beginning of pre-season football starting tonight.
Chicken Parmesan. Flatten boneless skinless chicken breasts with a mallet, dip in egg, dip in breadcrumbs, brown 2-3 minutes each side. Pour 2 jars of your fav spaghetti sauce over chicken in skillet. Simmer on low 20-30 minutes.Last 10 minutes, grate parmesan cheese over chicken, sprinkle mozzarella over parmesan and let melt. (You can add mushrooms, green peppers, olives if you like to the sauce) Serve over linguini or egg noodles. Serve with side salad and bread. Easy, not too unhealthy, and takes about 30-45 minutes. Good luck!
Store-bought quiche with green salad and garlic bread. We have Story Hour tonight, so it has to be quick and easy... plus I'm pregnant and tired!

Well take-out is on our menu tonight too! We're going to an evening kids' concert in the park and when I told my daughter we'd pack a picnic she suggested we just pick up Jimmy Johns! LOL! It was an offer I couldn't refuse!
On other lazy nights however, I love tacos. They are fast, easy, and hot!
NY strips steaks, boston lettuce salad with strawberries, blueberries, cukes, nuts, and cheese with raspberry vinegarette dressing, instant mashed potatoes and gravy for the kids.
I'm cooking bbq ribs in my slow cooker, it won't be ready until 6pm tonight and the smell from it cooking is driving me insane. ;) sooooo good.
Steamed cauliflower and brown rice as side dishes. I'll make mac&cheese for a side for our son.
Only thing missing is dessert. hmmmm....maybe I'll send hubby to the store for that.
hmm... its grocery day tomorrow for us so slim pickings lol. I think we are going with tacos though as well!
baked chicken, veggie, fruit and dinner rolls
I am making Chicken Salsa in the crock pot. It's boneless chicken breasts, chunky salsa, and taco seasoning on low all day. I shred the chicken when it's cooked and serve it with corn tortillas, sour cream, shredded cheese, and avocado slices. I think I'm going to make yellow rice with it tonight. It's super easy and my family loves it.
Indian vegetable curry (with celery, potatoes, green beans, cauliflower, onion, garlic and zucchini). Chop everything up - stir fry it in a little oil for a few minutes, then dump in 2 cups vegetable broth, one tablespoon curry powder, 1 teaspoon ginger and a tablespoon of tomato paste. Simmer for 40 minutes and voila. Super easy and delicious served over rice.
Boneless skinless chicken thighs marinated in Lawry's Teryaki suace. Served with oven steamed rice and some canned fruit.
Grill!!
I'm grilling some chicken thighs (boneless) with corn on the cob (wrapped in foil), grilling onions, some packages mashed potatoes and a salad! Yum!!
For the onions, I buy Huge ones and cut them in thinck slices and grill low for about 10 minutes on each side. So easy and delish!
I am serving on paper plates so there is hardly any clean up. This working momma has got to keep it simple.

I made Teryiaki chicken on the grill. Along with onion potato's and applesauce.
No idea for tonight (yet)... but I just woke up.

Oh, that's right, I bought Ribs yesterday. Probably I'll be bbq'ing those. Spinach salad. Microwav Mac'n'cheese. Watermelon.
We are having tortellini with carrots from Mark Bittman's recipe (have not tried it yet, am substituting for the ziti). Sauteed green beans tossed with olive oil and pine nuts on the side. Melon and blueberries for dessert. Should take less than 30 minutes.
Ziti With Carrots, Ricotta and Ricotta Salata.
Cook 4 thinly sliced carrots in 2 tablespoons olive oil and 2 tablespoons water over medium-high heat, stirring as necessary, until the carrots are tender and lightly browned, 8 to 10 minutes. Toss with ziti and 1 cup ricotta cheese. Garnish: Crumbled ricotta salata cheese and chopped parsley, if you like.
Completely on the grill: grilled bbq chicken, campfire potatoes, and squash & zucchini!
Prime Ribeye steak from our most favorite top notch butcher, baked potatoes, nice bottle of Merlot
ETA: @ McMama... I can't wait to to try that Alfredo sauce! The last one I made had way too much butter. Yours sounds awesome!!
