I agree with some of the other ladies about if she wont notice dont get her a BIG gift but my daughter did get a beanbag for her 3rd bday and it was a big hit.

My youngest daughters 3rd birthday party is this Sunday and I'm at a loss on what to get her. She has an older sister that just turned 6 so she gets all of her toys that she outgrows so she has everything. I'm really big into getting my girls the perfect gift for their birthdays, but I have no idea what to get her. When I ask her what she wants she says nemo or a baby bottle. We are going to get her some little baby doll stuff to open up on her actual birthday and we got her the princess and the frog dvd and a nemo color wonder set, but I need something big. She has a tri cycle, barbie jeep, kitchen, vanity, doll house, bitty baby, swingset, trampoline, and tons of smaller toys. I would love any suggestions!!

We ended up getting her a sit and spin, tons of baby doll stuff, the princess and the frog DVD, some color wonder finger paint and color wonder nemo coloring book, On The Night You Were Born book, and our 6 year old got her a big sister little sister baby doll set. For her actually birthday we got her a number 3 growing up girl doll, a fur real cat, a HUGE bag of tootsie rolls, a pinkaliciious doll, and a shopping cart.

Do you have an aquarium nearby? You could take her on a birthday excursion to see some real Nemo clown fish.
What about a little chair or bean bag? We bought a kid's club chair when my son turned 3 and he loves it still. You could find Disney one or even a Nemo one. There's alway finding a stuffed Nemo that she could cuddle with at night. Nemo bed sheets, princess dress-up clothes, a little DVD player (Fisher Price makes a kid-tough one).
In all honesty, do you think that she would even notice that the big gift is missing? She's turning 3, what you have gotten her will probably make her day already. Instead of getting her that big ticket item, maybe find something that the two of you or the whole family can do together instead. Or even put the money you would have spent aside in savings account to use later on.
It sounds like she has more than enough toys to keep her busy and probably doesn't use half of it like most kids.
Enjoy spending time with her on her birthday and don't stress over the gifts. It's not the presents they remember most of the time anyway, but the memories that have been made.
