I make pasta fagiole a lot (sauteed onions, garlic, zucchini, white beans, veggie broth or boullion, pureed tomatoes, small noodles-simmer 1-3 hours), veggie chili (sauteed onions, garlic, orange pepper, chili powder, cumin, 2 cans black beans, bottle of salsa, veggie broth-simmer 1-3 hours), pasta salad w/lots of veggies and chikpeas. My kids will eat just chikpeas out of the can. I just made stuffed zucchini w/zucchini meat, italian bread crumbs or toasted italian-flavored bread, onions, garlic, basil, salt, pepper, and cashews. Cover w/tomato sauce (sauteed onion, garlic, italian spices, and basil with pureed tomatoes) and bake 375 for 30-40 minutes. Also check out vegweb.com, tons of recipes. Good luck!
