Adopt a dolphin at the as a gift to her. My 9-year daughter has had one since her first Christmas which her aunt "re-adopts" as a gift each year. Now when we go to the zoo we visit "her" dolphin. We are usually able to pick out which one it is by the markings. You also have options for parties - a trip to the zoo, a zoo party, a dolphin-themed home party or you could even see if the zoo does affordable overnights. I know Brookfield Zoo sometimes offers them.

Good ideas so far! Another thought would be perhaps Rain Forest Cafe; dolphins are included in their decorations. If you can find the movie Dolphin Tale still playing anywhere, that would be fun too.
