Chicken Breast and Not Much Else

I need dinner help. Grocery shopping isn't until tomorrow so I'm down to not a lot of food. Making dinner is so much more fun when your fridge and pantry is full of fresh new food, isn't it?

Anyway, I have a boneless skinless chicken breast. What are some ideas I can make with it? I am planning on pairing it with broccoli that I have in the freezer.

So What Happened?

Thanks! Everything sounds so yummy! One thing I learned from this is I should keep some cans of cream of mushroom soup or cream of chicken in the house. I did end up using Allrecipes and found a wonderful recipe for Cajun Chicken Pasta. I didn't have all the ingredients, but this is what I did.

Cut up my chicken breast into bite size pieces/slivers and seasoned with Cajun seasoning (my Mom is from Louisiana so I'm never without Cajun spices). Then I sauteed my chicken in a little butter. When chicken was cooked I added some chopped onion and cooked until onion was clear. Then I added about a 1/4 to 1/3 can of evaporated milk. Heated it though. Meanwhile I had a pot of spaghetti noodles cooking. I drained them and added them to the sauce. Then I added some parmesan cheese, stirred it around and it was done. It was so delicious! My husband and I loved it. My kids at the broccoli, strawberries and watermelon...oh well!

Do you have a grill and Italian dressing? I love chicken breasts marinated in Italian dressing then grilled. So yummy! If you don't have a grill, you can cook the chicken in a skillet.

Well, it's too late for dinner tonight but....

cube it up, cook, and drain it. Add one can condensed cream of chicken (do not add water), one can of condensed cream of mushroom (again, do not add water), one can of Rotel ( DO NOT drain), one small can of mushrooms and one small can of sliced black olives (both drained). Heat it up and serve over noodles or rice! Quick and easy.

if you have some sesame oil and soy sauce, you can stir fry it together with the broccoli and chicken and brown rice and its delish!!

If you have potatoes you can peel and dice the potatoes, dice up the chicken the same size as potatoes, put them in a bowl and toss them with some olive oil, garlic, onion, salt, pepper and itallian seasoning then cover and bake at 350 for an hour. Goes nice with broccoli and is super easy. You can add parmesan cheese to the mixture if you have it or you can trade out the olive oil for Itallian Dressing if you have that. So then it would be the chicken, potatoes itallian dressing, onion, garlic and parm.

When I want to just bake them I take away the potatoes, take out the onion and toss them whole in all the rest of the stuff I just listed and bake uncovered at 375 for 30 min.

Do you have any pasta? Even without pasta, grilled or baked chicken with broccoli sounds like enough (even if it seems a little skimpy.) No one will complain, at least you're not making it cereal night ;)

You can use any kind of sauce or dressing you may have to marinate the chicken, or even a little olive oil and oregano and onion powder. Even cooking it in a bit of milk will make it super juicey, just add salt and pepper, or if you have it, a little seasoned salt.

BFs out fishing this evening, so the kiddos and I are having frozen pizza (per the kids request)... I WISH I was at your house for dinner, LOL!! :)

Stir-fry the chicken and broccoli with a little onion, garlic, carrots, whatever you have.

Or cut chicken in strips, brown if you wish, then lay strips over a bed of rice in a casserole. Pour enough water/broth/chicken bouillon over it to cook the rice (whatever it says on the package). Pour a can of cream soup (undiluted) over top (cream of mushroom, chicken, celery, cheddar cheese, whatever). May add sliced onion and other complimentary seasonings if you wish. cover and bake at 350 for 45-60 min until chicken is done. If too liquid-y near end of cooking time, remove cover and bake uncovered. May add shredded or parm. cheese near end of cooking time also. You can put your broccoli in with this or cook it separately and serve it as a side dish. You could probably microwave this but I wouldn't have a guess for how long.

lemon pepper chicken and its so easy and deliciouse with Lawreys lemon pepper chicken marinade i always make mine with brocilli and a garlic rice or if u prefer a baked potatoe. i use a george forman grill but of course u can bake its really simple just marinade two hours before cooking and dont drown it with the marinade while its cooking

Cut up the chicken in either strips or cubes & sprinkle on a lot of garlic salt. Either cook in skillet, or bake in a pan.

Or, if you happen to have bread crumbs and shredded mozzarella cheese too, you can...

melt butter & mix in a little garlic salt
mix cheese & bread crumbs
dip chicken strips in butter/garlic, then dip in cheese/crumbs, then place in a casserole dish
then bake for about 15 mins

Could also fix rice, or potatoes, or mac & cheese with it. Or even chicken flavor ramen!

I've got to figure out what we are eating tonight as well. We are low on groceries too!

At the top you can click on "ingredients" and type in the stuff you have or what you want to use (you can even add what you DON'T want to use in case there are food allergies you need to be careful of!)

Some things we eat that are fast with not-a-lotta ingredients are:
Cut up the cooked chicken breast, rice (southwestern or whole grain) a can of black beans, melt some cheese on it, mix it together and call it a meal. Broccoli would be good with that as well. If you have 4 hours, and a slow cooker you can add one can of cream of chicken, one can of cream of mushroom, the chicken breasts. Cook for 4-5 hours on HIGH (or 6-8 hrs on low) and you will have an awesome soft chicken with a creamy sauce, pour it over rice and it's warm and yummy. Or just a chicken pita pocket or roll up, add cheese and cooked mayo and it's a sandwich with broccoli on the side.
My hubby makes 'chicken nuggets' but i'm not sure how he does it exactly, he uses crushed 'honey bunches of oats' cereal all over the chicken and bakes them in the oven. A good dipping sauce is needed, honey mustard or honey or even ranch.
Can you tell I am starving? yep, it's 3:30!

Do you have a box of macaroni and cheese? Cook and mix = Chicken Bake!

If you have some gravy, and bisquick, make up some bisquick biscuits, serve open faced, top with the chicken and gravy.

In pan on medium heat saute chunks ofchicken in olive oil with salt pepper and garlic on it. Then remove from pan once cook thru. Add a can of cream of mushroom soup, milk and parmesean cheese. Stir on low heat until blended well.
In a pot boil pasta and broccoli until cooked to your liking. Drain.
Add pasta and sauce together stir add chicken and voila' you have Chicken Broccoli Parmesean ready to serve.
If you don't have cream of mushroom soup just use milk and chickenstock and thicken sauce with some flour. But add the flour to the olive oil before you add the milk or it will be lumpy. Enjoy!

I had this same problem the other night. We had beef, but after dinner the hubby suggested I try the recipe with chicken and thin strips of carrots. So I boiled some pasta. And I made a sauce with a little butter (3 or 4 tbls) that I added 3 tbls of flour to. Added a few tbls. of tom paste ,a can of beef broth (you'd want to use chicken or veggie broth), a little salt and just a tad of milk. I cut the meat really thin and broiled it in the oven and mixed it with the sauce and brocolli and served it over the pasta. I also made some popovers (which is basically flour and milk). I was worried about a fussy family and instead there were no leftovers and full bellies.

Another option is to check out allrecipes.com. Click on ingredients. You can list what you have on hand and what you don't want and you'll get some good suggestions.
