We recently had a fish/fry at my house so, I was wondering what is the best way to get rid of the cooking oil that we used. we have a huge pot full.

If you are still in the San Diego area, here is the info on their website on disposing of cooking oil: Cooking Oil Recycling
City of San Diego residents can now recycle their cooking oil and grease at the Miramar Landfill Recycling Center. A cooking oil recycling bin is available to City residents for disposal of up to 30 gallons of cooking oil and cooking grease. There is no charge for the service. The recycling service is not open to commercial food preparation businesses.
Cooking oil recycling is being provided by the City's Environmental Services Department, the Public Utilities Department, the Allan Co., and Darling Restaurant Services which is donating the grease bin and recycling. The Recycling Center at the Miramar Landfill is located at 5165 Convoy St, just before the toll booth into Landfill. Hours are Monday-Friday, 7 a.m. - 4:30 p.m. Saturday and Sunday, 7:30 a.m. - 4:30 p.m.
Pour it into a plastic container using a funnel (like a gallon milk jug or the original oil container if it's empty), then you can throw it in the trash. Some places have recycling centers that will take it as well (turn it into bio-fuel). You can call yours and ask if they handle cooking oil.
Don't pour it down the drain!
If you have a gravel driveway you can pour cooking oil over the gravel.
It helps hold the dust down.
Never ever pour it down your drain.
Some people strain it and re-use it for other things. I've never done that but then again I've never had a large quantity.
Definitely look into recycling for people who use it for their vehicles! They will usually come pick it up! Try a recycling source or even something like Free Cycle where people take away all kinds of things you'd never think would be of interest!
Does SD have a sanitation department webpage? If so, seek info there. Here's what NYC has to say on the matter.

I strain and reuse cooking oil.
Freeze it and put in the trash on trash day (so it doesn't melt).
I put mine in the trash can with a lot of paper towels.
I always save empty containers like the powder coffey cream (BEIGE PLASTIC), empty coffey containers (GLASS), and pickle jars (GLASS). I than pour the oil in the container, close the lid tightly, put in a small grocery bag, tie it up, and put it in the trash outside.
Hi what I do is put the grease after it cools down in and old pickle jar, jelly jar any jar you are not using and throw it away, I do it all the time and if you happen to have just a little pickles left or whatever it is you have put it in another container like a zip lock bag tupper ware.
