I would go the bacon route in the recipe above. Then, I would try the following:
dice onions and saute in pan with olive oil
add cubed chicken and saute
add some spices - tarragon, dill or celery, white pepper, salt
add any vegetables you may desire
pour in your cream of potato soup once the chicken is cooked through. Heat to desired temperature.
In single serve bowls, add a dollop of the colcannon and then pour your soup/chicken mixture over the top.
