I hate, hate, hate, hate cooking! I have a 4 year old and twins that are 2. Anybody want to share quick, simple recipes that are kid-friendly? We eat a lot of ground beef, sometimes chicken. I am bored to death with my current recipes. To get the ball rolling, I'll share one that I made last night.
creamed chicken on biscuits:
2 cups diced cooked chicken
1 can cream of chicken soup
1/2 cup sour cream
1/2 cup milk
salt and pepper
frozen peas (as much as you like)

throw this all together in a sauce pan and heat until simmering. Cook a can of refrigerated biscuits in the oven and there you go!

I am with you and hate to cook as well... One thing that I have found easy is enchiladas...

Take one box of toquitos (line them up next to eachother in a pan)
top with Enchilada sauce
sprinkle with cheese
cover with foil and stick it in the oven for the time/heat it would take to cook normal toquitoes..

My girls LOVE them and it is SUPER easy.

My family really like pasta in pesto sauce. Once the pasta is cooked , stir in the pesto , a can of chopped tomatoes , a handful of baby spinach 1-2 teaspoons of philidelphia , very quick and so tasty , sometimes just to vary it a little I add cooked/chopped mild italian sausages aswell.

I'll have to try your recipe sometime!

I came up with this recipe a couple months ago. My family loves it! We eat a lot of chicken lol and we also love garlic and cheese, so you may have to adjust the amounts of garlic and cheese in this..... LOL

Garlic Parmesan Chicken Fingers

Ingredients:
14 chicken fingers, thawed
2/3 cup shredded Parmesan cheese
1/2 cup plain bread crumbs
1 tbl garlic salt
2-3 tbl melted butter (2 heaping spoonfuls)
Cooking spray
Casserole dish

Directions:
1. Preheat oven to 350 degrees.
2. Spray casserole dish with non-stick cooking spray.
3. Combine Parmesan & bread crumbs in a large bowl.
4. Combine melted butter & garlic salt in a bowl.
5. Dip chicken finger in butter & garlic to coat.
6. Dip chicken finger in Parmesan & bread to coat.
7. Place chicken finger in casserole dish.
8. Repeat with all chicken fingers, making a single layer in dish.
9. Cover chicken fingers with any leftover Parmesan & bread crumb mix.
10. Bake for 15-20 mins, or until chicken fingers are fully cooked.

This is a great idea! Here is a recipe for you.

Sloppy Joe Turnovers

1/2 lb. lean ground beef
2 tablespoons chopped onion
1/4 cup ketchup
2 tablespoons sour cream
1/4 teaspoon salt
1/8 teaspoon garlic powder
1 (6oz.) can refrigerated buttermilk flaky biscuts

Heat oven to 375 degrees. In large skillet, brown ground beef and onion until beef is thoroughly cooked. Drain. Stir in ketchup, sour cream, salt and garlic powder. Simmer 2 minutes.
Seperate dough into 5 biscuits. Press or roll each biscuit into a 4 X 4 inch square. Place about 1/4 cup beef mixture on center of each square. Fold over one corner of each biscuit to form triangles. Seal edges firmly with fork. Place on ungreased cookie sheet. Cut two 1/2 inch slits in top of each.
Bake at 375 degrees for 12 to 18 minutes or until golden brown.

While I do not hate cooking (actually kind of enjoy it) it does get tedious and I often feel rushed to just throw something together because time is so short in the evenings.

A new fav of mine:
1 or 1/2 turkey breast (bone in-w/skin-fridge thawed)
1 packet french onion soup mix
Rub the soup mix under the skin of the turkey.
Leave it in a crock pot (no water needed) - time vary (8 hrs on low...3-4 hrs on high)
As w/all slow cook recipes - Is best to leave the lid on the entire cook time. No peeking!
I suppose you could toss vaggies/potatoes in the crock pot too.

The turkey falls off the done and makes super delicious, moist sandwich meat or whatever.

My kids tend to like more kid-type food. I make Sausage McMuffins at home and they looove them. I make chicken salad in fun wraps or pitas and they gobble those up. I slather a banana sliced the long way w/peanut butter and top it with raisins and they go crazy over it. I can put any fruit or raw veggie on a kabob stick and they act like it is the best thing they've ever eaten.

Potato Hash

1-2 lbs ground beef or turkey
1small/med yellow onion, chopped
1-2 cloves diced garlic
6-8 potatoes, diced

Brown the meat with onions and garlic. Drain (if you used beef). Add potatoes and 3/4 cup water. Cover and simmer until potatoes are done. We top with a handful of grated cheese or ketchup.

This is super easy, and my family ask for it on a regular basis.

Really Easy - Really Fast Hamburger Stroganoff

Package of Egg Noodles
1 Can Cream of Mushroom Soup
1 Jar of Heinz Beef Gravy (in glass jar)
1 pound of Hamburger
(sour cream/milk/can of mushroom stems/salt & pepper)

Boil Noodles – drain and set off to side (add a little oil to keep from sticking if desired)
Fry Hamburger. Once browned, add soup and Gravy. I add a little milk (about 1/3 of the jar) in the glass gravy jar – shake (to get the rest of the gravy) and pour in the pan. Optional – add a spoon full of sour cream and/or a small can of mushrooms drained)

Just spoon the Gravy mixture on top of noodles. Done :o)
My kids love this and it only takes me about 15 minutes to prepare.

Great idea, and thanks for the recipe too! Here's mine:

Healthy/Pretend Fried Rice

Ingredients:
-Cooked brown rice, ~18oz pkg or ~2+cups cooked (you can use regular white or brown or "instant")
-mixed frozen (or fresh if you prefer) veggies, ~1 16oz pkg (stir-fry mix or I used a mix of green beans, peas, carrots, & lima beans)
-3 eggs
-Stir-fry sauce, 2 Tbsp
-lime juice (from slices or ready to use, or I subbed lemon juice), for flavor
-Canola oil to cook with (optional)

Easy Instructions:
1) Cook rice, set aside
2) In skillet, use 2 tsp oil to cook eggs--whisk and scramble them, break up eggs in to whatever size chunks you want to see in your rice, set aside
3) In skillet, use 2 more tsp oil to cook veggies ~5min or til tender
4) Add stir-fry sauce and rice and heat through
5) Add cooked eggs, and squeeze on some lime juice for extra flavor. Done.

Eat. Yummy. Use as a side or a main dish for a lighter meal. You can add chicken or meat if you like too. You can cook regular rice the day before or even use leftover rice from a prior meal...

Here's another good for leftovers:
"Cheesy Chicken Crescents": Fill refrigerated Crescent rolls with chopped/shredded chicken and grated cheese before rolling up. (or whatever meat/leftovers you need to use up from the fridge!) Bake in the oven as directed. -OR- put in a casserole dish and cover with a can of Cream of Chicken soup and 1/2 cup milk, top with more grated cheese and bake for a little longer ( I think it took like 20 min). yum.

Crockpot chicken
3-4 defrosted boneless chixn breast (however many ppl ur cooking for )
one layer of pastrami on bottom of crockpot
Wrap each chicken breast with bacon, stack in crockpot
cover with crm. mushroom soup
high for 4-6 hrs
couple with rice and your done...

I do a lot of meals that are a protein (skinless chicken breast, fish, hamburger patty, whatever, seasoned or just lightly salted) with brown rice in the rice cooker, and a frozen vegetable cooked in the microwave. Very easy, and pretty healthy. You can dress up the rice pretty easily - stir in salsa, or raisins and cumin, or whatever complements the other seasonings you're using.

Here is a recipe I use a lot!

Chicken Parmesan
6 breaded chicken patties (I either use Tyson or Banquet frozen patties)
noodles (you need to make enough to fill a 13 x 9 pan and you can use any kind of noodles)
1 to 2 jars of spaghetti sauce (any kind - I like trying different flavors to see which is better)
2 cups of shredded Mozzarella chesse
Parmesan cheese

Boil the noodles according to the directions and then microwave your chicken patties accordingly. When the noodles are done drain and mix in some spaghetti sauce. Pour noodles into pan and then set the chicken patties on top of the noodles and then cover them with spaghetti sauce sprinkle parmesan cheese and mozzarella cheese on top of the chicken patties covered with sauce.

Chicken with wild rice casserole

1 box wild rice, cooked
1/3 c onion, chopped
(fresh mushrooms, optional)
1/4 c butter
1 t salt
dash pepper
1/4 c flour
3/4 c chicken broth
3/4 c milk
2 c chicken, cooked and cubed

saute onions in butter. add fresh mushrooms. blend in flour, salt, and pepper. gradually stir in broth and milk, will thicken. put in chicken and rice.

bake for 30 minutes at 425.

Chicken breasts with stuffing

1 box stuffing, made by box directions
4 chicken breasts, uncooked (can be completely frozen)
1 can cream of mushroom soup
1/3 cup milk

mix soup and milk. Pour a little on the bottom of baking dish. Put chicken breasts in. pour the rest of the soup mix over the top. Put stuffing over.

Cover and bake 45 minutes @ 400

Meatloaf

1 1/2 pound hamburger
1 egg
2 slices bread, cubed
1 package dry onion soup mix

mix egg in bowl. add all other ingredients. put in loaf pan.

bake 1 hour at 350

My favorite ground beef recipes are some old stand bys...shepard's pie and tator tot casserole.

Shepard's pie

ground beef (1-2 lbs)
frozen peas or other vegetables (1-2 cups)
cooked, mashed potatoes (enough to cover the beef)
cheddar cheese (about 1-2 cups)
onion or onion flakes
salt
pepper
clove of garlic or other spices you like in ground beef

Sorry I'm not more exact in my measurements but to be honest, I just throw it all together. I usually brown 1-2 lbs of ground beef, salt, pepper, garlic, onion (and other spices if you wish) in a fry pan. Drain the beef and put it in a 9 x 9 or 9 x 13 inch pan (depending on how much beef you used). Cover the beef with peas or other frozen vegetables. Cover the vegetables with cooked, mashed potatoes (Good way to use up left over mashed potatoes). Sprinkle with cheddar cheese. Cover and cook in oven at 350 F for about 45-60 minutes.

Tator Tot casserole

1 lb ground beef
1 can cream of mushroom soup
1/2 can milk
1 small onion, chopped
1- 16 oz pkg. tator tots
salt & pepper
1 cup shredded cheddar cheese

Preheat oven to 350 F. Brown meat and onion. Drain and season with salt & pepper. Put in 1.5-2 quart casserole dish. Top with tator tots. Combine soup and milk and pour over. Sprinkle with cheese. Cover. Bake 1 hour. **I usually bake closer to 2 hours because for some reason the tator tots are never quite cooked in 1 hour so the amount of time will depend on your oven.

I hate cooking as well so I use my slow cooker almost daily. My favorite (and easiest) recipe is for pork chops. Place 4-8 frozen (or thawed - it doesnt matter) pork chops in the slow cooker. Add one family size can of cream of mushroom soup (or 2 ten and a half oz. cans). Add one large can of mushrooms, drained. Slow cook 8 hrs on low...they are super tender and delicious! You can always add cut up potatoes as well for the 8 hours and you'd have a complete meal. Enjoy!

Tortilla Soup:
Boil (then shred chicken) in water and chicken bouillon, salt and pepper... to taste.
Cut and fry up tortillas in oil ,until crispy
Tomato
onion
avocado
cilantro
limes
Cojita/Cotija cheese (mexican cheese, in every grocery store by block cheese, white and round)
Jalapeno (husband likes it)

Cut up veggies. Add as you like to a bowl. Add tortilla chips then pour over soup.Yummy!
This is VERY GOOD and essentially you are just boiling water and cutting up veggies.

My all time favorite

I call it forgot to defrost but way good.

3-4 frozen chicken breasts cut in about 2 inch wide strips or left whole
3-5 baker potatoes
I bag baby carrots (or cut up carrots which ever you choose)
I/2 white onion cut up
I can cream of chicken soup
Salt, pepper, and minced garlic to tast

throw in crockpot and cook on low 8-10 or medium 6-8 hours. My kids love this one. a really good leftover also (with a little butter)

Salsa Chicken:

Skinless Boneless Chicken Breast
Jar of favorite salsa (I use Newman's Own Black Bean and Corn Salsa)
2 Cups Shredded Chedder

Preheat to 350
Cover chicken with salsa then cover with foil
Bake for 1 hour
Cover with chedder bake for additional 10-15 min

I serve it with brown rice and fat free refried beans.
Super easy!!!

My daughter hates to cook too - here are some easy ones that she really likes

Chicken with Crust:

Boneless Skinless Chx breast or tenders

Mix together in a bowl
2 cups Peperidge farms Seasoned stuffing mix (in the bag but not the cornbread one)
1/2 cup Parmisian Cheese

Melt 1/2 stick of Butter (could be more/depends on how much chicken you are making)
add Garlic (optional with kids)

Coat the chicken in the butter then in the bread stuffing and put in a pan - not touching each other. Dump the leftover stuffing and butter on top of the chicken and cook 1 hour uncovered in a 350 oven.

Here's another one that is sooper easy:

1 can corn
1 can creamed corn
1 box jiffy cornbread mix
1 stick of butter melted

Dump all of it into a cassarole dish and bake for 1 hour at 350

3 for the price of one:

Leftover chicken or turkey (or rotissery)
instant stuffing mix
1 jar chicken or turkey gravy

Make the stuffing according to package directions, add chicken or turkey and gravy
Bake until it is hot...
