Stir fry fresh vegetables, great way to use up small amounts of each, like partial head of cabbage, peppers- green- yellow- red, onion, celery, carrots, zucchini. Also works with broccoli or asparagus thrown in. Can use stir fried chicken or left over baked, boiled, roasted. Add rice or couscous, season extra for taste, or use stir fry oriental packets.
Great as leftovers.

I have several....

tacos
pasta, you can use any type of sauce, or just some butter and parm cheese, frozen meatballs make a nice addition
chicken (oven stuffer roaster), cut up some potatoes and roast them along with the chicken
soup and sandwiches (I always have some homemade soup in the freezer)
meatloaf (hint - buy a large package of ground meat and mix 3 meatloaves at the same time. Take out the pan you use for baking and line with plastic wrap. Place the mixture in the baking dish and wrap well and place in a ziplock freezer bag. The next time you want meatloaf, just defrost.)
pork chops on the grill, just season and cook, you can also grill a few veggies at the same time, and heat up some baked beans

Brown ground beef then add can of mushroom soup.

homemade pizza (buy pre-baked crusts. You just add sauce & toppings)

My kids love cheeseburger Mac, just whole wheat macaroni noodles, ground turkey, I add frozen corn(better than canned) and a little Velveeta. So easy, and relatively healthy. I also like to put chicken breast in the crockpot a little seasoning on top and then I add some cans of diced tomatoes(chipotle or fire roasted) or for a different flavor cans of salsa verde. At the end of the day it shreds easily with a fork. You can then add corn and beans with some cheese and Fritos for a chili, or make enchiladas, taco salad, tacos, quesadillas or add some broth and veggies
for soup.

In a slow cooker place about 2-3 chicken breasts for a family of 4, add some taco seasoning (I do my own to avoid too much salt and have it in the pantry for occasions like this), about a cup of red salsa, a can of rinsed black beans and a lime. Cook for 5-6 hrs. and shred with a couple of forks.
You can use this shredded chicken for tacos, burritos, tostadas, nachos or just serve it with some white rice.
Soooo easy!!!

Gosh, I have a lot, but for easy and fast to put together it has to be hashbrown casserole with ham added in.

1 bag of hashbrowns, thawed
1/2 onion, finely chopped (or green onion if you prefer)
1 can cream of chicken soup
2 c. sour cream
2 cups cheddar cheese, divided
2 8oz. packages of julienned ham strips
salt and pepper to taste

Mix all but 1/2 c. cheddar in a large mixing bowl. Pour into a 9X13 pan. Top with remaining cheddar. Bake at 375 for 45 minutes.

Serve with a salad or veggie side of your choice.

You can mix it all in advance, cover it in foil and pop it in the fridge. Then when you come home from work, or soccer, or any other the other things moms do to make a day busy, you pop it in the oven for 45 minutes and, voila, dinner.

Easy, peasy, lemon squeezy.
