I was wondering if you have any good BBQ recipes that my husband and I can try. The weather has been really nice lately. It's also so nice to get a break from cooking. I am trying to get my husband to cook 4 out of the 7 nights. I used to cook 5 out of the 7 nights. I am trying to give myself a break. We love to eat chicken and beef (Briskets too when we can afford it)with veggies of course. I also LOVE seafood. If you love it, please share it. Thanks in advance mamas!!
My favorite is tri-tip roast, it's kinda spendy though, You get two big ones at costco for about $20-$25. Your small family would probably only eat half of one, you might be able to find smaller ones at a regular grocery store, I've found them at Smiths Marketplace, but no where else. Just rub it with your favorite meat rub (the best ones I've found are in the meat department), and refrigerate for a few hours or overnight. Turn the grill on high for several minutes, to get it hot. Put the meat on the grill, then lower the heat to medium to medium low and cook it about 20 minutes or until desired doneness turning only once. Let rest for about 10 minutes before slicing. make sure you use tongs and never pierce it or cut it till it's done. Use a meat therm and don't take it out once it's in, if you don't know how to tell doneness by touch.
Kabobs are a favorite too, you can do basically the same thing as the roast just cut the meat into cubes and cook it for less time. It actually works better to cook your meat and vegis separately. You can use zucchini, peppers, onions, tomatoes, my brother puts butter on them, which you are supposedly not supposed to do in bbq, but he makes to best kabobs. if you don't use butter, use some olive oil and season them with garlic, salt and pepper.
I just remembered another family favorite. Bacon wrapped chicken. Use chicken tenders and roll them with the small side in the center, or cut up chicken breasts into large cubes. Season them with your favorite chicken seasoning, Then wrap a half slice of bacon around it and secure it with a toothpick. BBQ them, and eat them plain or with your favorite BBQ sauce.
Okay, one last one, BBQ pineapple. Cut the top and bottom off the pineapple, then cut the skin off. Quarter it lengthwise and cut the core out, slice each one in half lengthwise again, you should have 8 spears. Cover it with brown sugar, melted butter and lemon juice some people use cinnamon too, I don't (sorry I don't measure). BBQ on med heat till you get some good grill marks on them. They are so yummy, we usually eat them with our meal but it can also be a dessert, it is good with ice cream. Yummy!

My hubby and I do competition bbq, so if you like bbq, visit a contest this summer. They are relatively cheap and involve a great bunch of people. There are 12 in Colorado this summer.
My best advice, however, would be to invest in some different rubs. You can get them at the grocery store or order online. If you have a King Soopers, look for Bad Byron's Butt Rub - it's good on everything from port (butts) to chicken and beef.
We grill year round, and I think that's what you are asking about. We preheat our grill on high for 15 minutes or so and then adjust the temperature according to what we are having. High for most veggies, medium for meats and MOM (medium, off, medium) for hamburgers or fish. (Put the burgers and fish in the off part of the grill).
If you are cooking brisket, slow and low is the key! Use a charcoal grill or smoker. Keep the temperature at 250 and cook for several hours. When your brisket reaches 185 degrees, pour some beef broth or apple juice on top and wrap in foil. Cook it until it reaches 205 degrees.
In any cooker you use, get some wood chips and put them in foil. Contort the foil to make a little plate with raised edges and place on the grill (or in the charcoal). It will give your food extra flavor. Favorite wood flavors are cherry, oak, and apple. You can also use grape vines! We steer clear of mesquite, but that's a personal preference. You don't have to soak the wood chips in water (waste of time).
Here's our recipe for baked beans - use a can of Bush's baked beans. Add some rub (your choice and add to your taste), bbq sauce, smoked meat (sausage, brisket, pork...) and brown sugar. Saute green pepper and onion and add to the beans. Cook at 350 for an hour to heat through. Yum!

We like to make chicken kabobs. We got the idea when we went to a brazilian churrascaria. I loved the bacon wrapped chicken. And we made our own version which is awesome.
You cut your chicken breast into cubes. Sprinkle with seasoning, we like garlic pepper (garlic salt and pepper if you can't find it). And wrap half a slice of bacon around the chicken and push onto the stick. Feel up the stick and then start another till you run out of chicken. Put kabobs on the grill until cooked about 10 minutes. Enjoy!
After a while you get sick of the taste of BBQ sauce, then you want soemthing with a new flavor. This recipe is really good and different!
Lime Chicken
4 boneless, skinless 1/4 cup minced cilantro
Chicken breasts 1/2 clove garlic, minced
1/2 cup lime juice 1/2 tsp. salt
1/4 cup olive oil
Mix lime juice, oil, cilantro, salt, and garlic in resealable plastic bag. Put chicken in marinade and refrigerate for several hours, or overnight. Grill chicken over medium heat 20-25 minutes, until center of chicken is no longer pink. Serves 4.
The highest and best way to prepare zucchini is to barbeque it. It tastes great and, you can have your barbeque and veggies, too. Just cut the ends off the zucchini, split it lengthwise, and, if necessary, cut it into about 6" lengths. Then soak it for 2 to 8 hours in Italian salad dressing. Put on the grill, cook until soft, turn, cook again, and eat. It takes about as long to grill as a steak. It is juicy and delicious.
My favorite barbeque sauce is my homemade teriyaki sauce. I just look and dump, so measurements are approximate. Put in a pan 1/2 to 3/4 cup burgundy cooking wine, or, if you don't want to cook with wine, tart fruit juice. This helps to tenderize and flavor the meat. Most of the alcohol content cooks off if you use the wine.(Note: I juice those nasty little red Chinese plums that grow on those red flowering plum trees, and that are only good to throw at school bullies and to make a mess of the sidewalk. They make an excellent, gourmet quality tart juice that is great for marinades, syrup, jam, drinks, etc.) Add to that about 1/3 to 1/2 c soy sauce (get the good stuff from a Chinese food store- skip the La Choy). Mince a large clove garlic and one or two green onions into the mixture. Add about 1 T sugar and 1 T sesame oil (a little of this goes a long way.) Grate a little fresh ginger into the mix. Stir. If there is not quite enough to halfway cover your steak, dilute with a little water. Marinate your meat in it 2 to 24 hours. Barbeque to taste. Delicious! After you try this, you will wonder why you bother with any other recipe.
I see that you like seafood. Me too! They sell really nice Salmon burgers at Costco (in the freezer section). They are delicious on the grill! Another thing we like to grill are scallops. Wrap the scallops in proscuto and thread them onto skewers (soak the skewers in water beforehand).
we like to make pulled pork with our bbq... this is way easier with a gas grill.. (which is what I assume you have?)... pork shoulder is fairly cheap if you watch for sales... and it make a ton.
anyway, low and slow (good for a sat or sun afternoon)... we run with spices (your choice)... and then grill (turning every hour or so for 6-8 hrs @ 225-250 degrees... the lower the better. anyway, when you poke it with a fork and it shreds, its done. we then make pulled pork sandwiches or carnitas or freeze smaller bags and pull them out for tacos, green chili, etc.
we also like to buy a big pack of the boneless skinless chicken breast then season them simply.. then use them throughout the week... chicke fajitas, salad with chicken, etc. etc. etc. with salad there are endless possiblities... chef salad, caesar, buffalo chicken, chinese chicken.. you name it.
good luck... we grill all the time when the weather is nice... and it is great, if you have a burner on the grill.. to cook bacon outside. doesn't stink up your house.. and good for summer blt's.
I like to make "Drunken Chicken". Buy a whole chicken (fryer or small roaster). Clean out inside of chicken, and insert a can of open beer into chest cavity. Stand can up on grill (chicken will be standing upright) and cook for 1 to 1 1/2 hours. There are inexpensive racks you can buy to hold the can and chicken upright. I have also used different types of wine instead of beer, my family likes the wine better. Of course the alcohol is cooked out but the chicken will be very tender and falling off the bone. You can set this in a pan to catch drippings to make gravy also. Enjoy!
We like to cook on the grill with indirect heat. After the grill heats up you turn off the middle burner. Then place your meat in the center and cook it slow. This way you still get that great bbq taste but it doesn't burn from the flames being right on it. As for recipes I usually just take whatever meat I have on hand usually chicken thighs and drumsticks since that is what my family likes and they are usually inexpensive. Take the skins off and then put it in a marinade and let it sit on the meat for awhile. I usually just buy the packets that you add vinegar or oil to they have a ton of different flavors so you can choose what you like, I haven't bought the bottled marinades but I'm sure they would work too, or you can make your own. Just let the meat sit in the marinade at least 15 minutes up to overnight, before putting it on the grill. One recipe my family really likes is a bbq sauce that has brown sugar and ketchup in equal parts. When it cooks on the meat it makes a sweet glaze I use it like a marinade but I also keep brushing it on as the meat cooks.
This is not a typical bbq recipe, however, my husband and I make "foilie" dinners all the time in the summer.
I don't have measurements here, so bare with me...
lay out foil sheets (about a foot long)
Cube enough red potatoes for your family and divide onto foil. Dab butter, and sprinkle some garlic powder, salt and pepper. put a handful of uncooked shrimp on top of the potatoes. Put a cod fillet on top of the shrimp and dab with butter, and salt and pepper. Top it off with a sprig of dill.
Fold the edges of the foil together tightly and grill on med for about 15 to 20 minutes. Rotate the foil bags but don't flip.
We also grill corn on the cob at the same time. It's kind of a lot of preparation, but worth it in the end.
Marinate salmon fillets in terriaki for an hour and grill! :) or you can use Hussin sauce (spelling?) if you like it a sweeter flavor.
Marinate chicken in italian dressing for up to 4 hours and grill! Keeps it moist and super yummy.
Get ground turkey, mix with a little garlic salt and bread crumbs and you can add fresh avacados or guacomole after and grill up turkey burgers, only $3 a pound and SO YUMMY!
