A brunch favorite: myy husband chunks the chorizo up and cooks it with onions, then drains, scrambles with eggs, and serves wrapped in fresh corn tortillas.
I just bought some chorizo for the first time. I've begun my online search for chorizo recipes but was wondering if anyone has any tried and true favorites.
Thanks

Chorizo is wonderful in refriend beans, or on a taco with onions, and whatever other veggies you might like and then the beans and then some sour cream (my kids do that). Ut oh I'm starting to drool...
We had chorizo for dinner last night. The best is the house made from the store rather than the packaged. it usually has less fat. My babysitter made it with onions and chopped potatoes. You could also add eggs (theme here?) and eat with tortillas or alone. We have also had it on top of tostados with lettuce or cabbage and crema. We had it with rice and veggies on the side last night. 2 of my kids are leery of it because they think it is hot but i am sure once they try it they will. The baby certainly does. It makes a good, easy breakfast, lunch or dinner.
Hi Michelle-
Im a hugeee fan of chorizo and eggs it is excellent especially if you eat it with tortillas and salsa. My mom always puts it in her enchiladas, and thats also pretty good.
