I did not want to take over this post, but I will say. I am Mexican. So are both of my parents. I did google Chorizo recipes and not one included Glands and Lymph nodes. They are all pork roast, pork tenderloin. My Grandmother was considered one of the best Mexican food cooks in Austin until her death. I know what I am talking about.
I am completely offended by Wendy's post. First of all it is not true. Chorizo is made with pork roast. If cheek meat were to be used, I will guarantee you it tastes just like the regular meat. Glands would never be used..
Our family has been making chorizo for generations.
We eat it in all types of food. You just have to be careful not to over use it in a recipe, because it can over whelm your dish.
Is it the dried or the soft corizo? If it is dried you can use it on pizza or serve it with cheese on any dish. A tiny bit in Mac and cheese is very good.(children may find it spicy)
If it is soft, you can use it the way you use breakfast sausage, precook and then drain any of the fat. We like to eat it cooked with scrambled eggs on tortillas. Again can be sprinkled on Pizza or other dishes when you just was a small amount of meat.
