Hi Ladies,

I love, love fish, but it's expensive so I don't want to experiment with it too much because there's nothing worse than overcooked fish or fish cooked wrong. I'm pretty good in the kitchen but fish is not something I've worked with very much. We've gotten the hang of cooking salmon but I want to try other fish, prepared other ways, etc. Will you share your fish recipes?

My hubby and son are kayak fishermen. So we eat a lot of fish.

We love, love, love this recipe for fish tacos. We have used everything from catfish, to cod, to tilapia with this one. We prefer it on flour tortillas. The sauce is a little spicy, but not too bad. Both our 4 and 2 year olds like just a little on their tacos, but not much. We also do this one with fish we baked or grilled for a healthier version.

We also like to rub the fish with a little butter, some kosher salt and a touch of pepper and then wrap it in tin foil. It's good baked, but we prefer it cooked on our grill. Again we have used all kinds of fish for this one. We have even do this and left the skin on the fish. It's more work afterwards, peeling the skin, but still yummy.

Generally I am not a huge Rachel Ray fan, but we do enjoy this recipe. http://www.food.com/recipe/rachael-rays-tilapia-with-toma... I usually leave out the Serrano peppers. And I cheat, instead of chopping tomatillos, I buy salsa verde or chopped tomatillos in the can. It's worth the time savings to me. I like Tilapia for this one best.

Catfish is usually best fried. Roll it in a half corn meal and half flour mixture with some salt, pepper and cayene.

Butter, garlic, pepper, lemon in the broiler, watch to make sure it doesn't over cook.

I tend to work more with bland fish like talipia. Anything with a bit of kick makes it pop. Like the lemon reacting with the garlic and peper, ya know?

Try the Neely's Triple Citrus Salmon on Food Network. I made half the recipe but kept the soy sauce and garlic the same. My picky 3 year old loved it.

MaMa's Supper Club Tilapia Parmesan
* Prep Time: 15 mins
* Total Time: 35 mins
* Servings: 4
Ingredients -
o 2 lbs tilapia fillets ( orange roughy, cod or red snapper can be substituted)
o 2 tablespoons lemon juice
o 1/2 cup grated parmesan cheese
o 4 tablespoons butter, room temperature
o 3 tablespoons mayonnaise
o 3 tablespoons finely chopped green onions
o 1/4 teaspoon seasoning salt ( I like Old Bay seasoning here)
o 1/4 teaspoon dried basil
o black pepper
o 1 dash hot pepper sauce
Directions -
1. Preheat oven to 350 degrees.
2. In buttered 13-by-9-inch baking dish or jellyroll pan, lay fillets in single layer.
3. Do not stack fillets.
4. Brush top with juice.
5. In bowl combine cheese, butter, mayonnaise, onions and seasonings.
6. Mix well with fork.
7. Bake fish in preheated oven 10 to 20 minutes or until fish just starts to flake.
8. Spread with cheese mixture and bake until golden brown, about 5 minutes. (I found baking for 5 minutes didn't brown well enough so I actually broil on high for 3 minutes after adding the cheese mixture and it comes out perfect)
9. Baking time will depend on the thickness of the fish you use.
10. Watch fish closely so that it does not overcook.
11. Makes 4 servings.
12. Note: This fish can also be made in a broiler.
13. Broil 3 to 4 minutes or until almost done.
14. Add cheese and broil another 2 to 3 minutes or until browned.

Tuna with teryiaki. So simple. Add toasted sesame seeds if desired.

You can grill it, bake it or sear it. Kepp it really rare for the best taste.

Also, try talapia - it's pretty cheap. You can bread it or use lemon/oil/garlic. My hisband likes it coated in Old Bay seasoning with a little olive oil. So easy.

I use this recipe with halibut.
Make a marinade with spicy mustard, honey, brown sugar, and either lemon juice or vinegar (whichever you have on hand). The amounts are all really just to taste, but make enough to coat the fish really well.
Add the fish to the marinade and let sit for at least 4 hours. (Many people will say that fish doesn't need a long time to marinade, but I love it when the flavors really get inside the meat).
Bake the fish in a 375 degree oven for 20-25 minutes (maybe a bit more depending on your oven) checking every 5 minutes once you hit the 20 minute mark to avoid overcooking and the fish drying out.

Tilapia is cheap. Sams and WalMart have huge packages of frozen Tilapia for $10. I like to try flavor combos out on the cheap fish before I try them on more expensive cuts.
I usually pan fry, broil, bake, or grill fish.
Bake in a foil packet laying on a bed of veggies, sprinkled with salt, pepper, garlic and a squirt of lemon, pour a little white wine in with it and the wine will steam the fish and veggies. Use small cut veggies because fish is quick cooking.
Blackened - rub with room temp butter, roll in blackening spices or just cajun spice off the shelf. Pan fry in a screaming hot skillet. Don't try to turn it until you see it start to pull away from the pan on its own. it will let you know when it's ready to turn. Once both sides are blackened, put it in a 350 oven for 7-10 minutes to finish cooking.
I love fish with olive oil and fresh herbs, thyme, rosemary, basil, salt, pepper, and garlic under the broiler.
