I have a garden full of cayene peppers and jalepeno's. Does anyone have/or know how to store or can them? Or maybe some great receipes to use these up. Any ideas would be helpfull.

Can them you can find any kind of receipe for them to be canned. its not that difficult either, just do a search on the net for one that sounds easy enough an go for it. I do a water bath process on all things that I can if you have a dishwasher thats half the battle on sanitzing the jars, an seals. You will also probally have to invest in a canner pot as most pots in the house are just not deep enough to hold more than one jar with water covering it completely. I just finished putting up about 12 pints of bread an butter pickles, an you can use zuccini in place of the cucumber an no one can taste the diff in it. Have proved it. so good luck

Make some salsa with them and then buy the Ball canning Jars depending on how much you eat salsa you can make quit a bit or very little.My MIL freezes the jalepenos and they turn out just fine for cooking with them or making salsa

My only suggestion is to have a gallon of vinegar on hand and thick rubber kitchen gloves available. Had an incident years ago, cleaning peppers for my friend's mom...washed my hands afterwards...then went to the bathroom. Long story short, I was in a bathtub with gallons of white vinegar being poured in...I'll never think of peppers and using the toilet the same way again!

You can simply freeze them. Wash off all your veggies, let them dry, place them in freezer containers (I use ziploc baggies) and place them in the freezer. No blanching or anything is needed. I place them on a cookie sheet, freeze them, remove from freezer when rock hard frozen, and place in baggies so they're not frozen together. They will be good for cooking when thawed out but not for fresh usage like salads. My husband was from Mexico and we used a lot of tomatoes and chili's. This works well for us. GOOD LUCK!

I had a ton of jalapenos a couple of years ago. I cut them in 1/2 and seeded them. Then, I froze them on a cookie sheet until they were hard. I put them in a freezer bag. I like the jalapeno poppers at some fast food restaurants. But didn't want the calories/carbs of breading/ deep frying. So, I'd pull out a few, mix up some softened cream cheese with some shredded cheddar cheese and fill the 1/2's. Then I'd bake them until the cheese mixture was bubbly and getting brown on the edges. mmmm! Delicious!

Good Morning D., This one is easy. Put them in zip locks and throw those babies in the freezer. They will keep for ever. I just made guacamole this last weekend, grabbed a jalapeno out of the bag, let it thaw, de-seeded it chopped it up and was great. I have peppers from 06 in the freezer, not a thing wrong with them. You can pull um out as needed for salsa or other dips or casserole's.

try www.allrecipies.com you can search by indgrediant here also and trying searching canning peppers on the web- i have just recently started looking into canning also

you could also 1/2 freeze them on a cookie sheet with wax paper then vapor seal them (1/2 freezing them first prevents smashing them and loosing the natural juices when vaporsealing them

FREEZE them! Super easy. I will tell you that if you want to maintain the heat in your jalepenos, leave them as they are. I just wash mine and put them in a ziploc bag. DONE! Then when I need some during the winter for making salsa or chili or whatever, just take out what I need. I will tell you that they do not maintain their texture, they are a little squishy, but if you are just using them to cook with anyway, no big deal! I have done this with my all of my surplus peppers for the last 10 years. Too be honest we have enough peppers every year that when the fresh ones are ready to be picked, I empty my freezer of the old ones, so I do not know how many years they will stay. I just know it is great to not pay for peppers during the winter! ;-)
