i love breakfast but as we all know it's hard to make every morning so these are some things that i have come up with to make sure breakfast is still a healthy meal for us
french toast, i like to use eggs with a little buttermilk bc it makes the crust thicker, i add in cinnamon too. then cook in a pan sprayed with evoo (you can make your own sticks by cutting the bread before dipping then cook & let cool completely then freeze...then warm in oven)
fruit with granola & yogurt in a cup
bird in a nest, take a piece of bread & use small cup to take out a circle, put butter in a pan or a spray of evoo. put in bread & then crack egg in hole (i use a fork to puncture the yolk so it doesnt stay runny) cook until firm enough to turn over
we also do sausage rolls (i look for the breakfast sausage when its on sale, its like little smokies but a little bigger) then wrap in a crescent roll & bake
pancakes (i make a big batch on the weekends & then freeze the leftovers & then just heat them up in the oven. you can do waffles too)
breakfast sammies on english muffins, egg & cheese with whatever breakfast meat you like)
oatmeal (i buy i big container of oatmeal then i take coffee filters & portion out 1 serving into the filter, then stack the filters back in the container, i also add 1tsp of brown sugar to it...i hope that made sense) then you just add some boiling water & butter to it in a bowl & it cooks in 3min.
toasters: take phylo dough, use several sheets (i like about 6 layers) cut into rectangle (like the breakfast toasters at the store) use an egg wash to brush down layers...
take cooked egg with cheese & cooked bacon or sausage crumbled & fill in square leaving an edge. top with another 6 layers of phylo dough, again using egg wash on the outer square that you filled & then to keep the layers together.
bake on a sheet until dough is just slightly brown (like right before it actually browns) then take out & let cool...then freeze & warm up in toaster when ready to use!!
