I am having my parents fly in for Easter weekend. I need some easy and quick Easter breakfast ideas. Maybe an egg casserole? Or a quiche? Please help I am no good in the kitchen.

Here's an egg casserole and my favorite baked french toast. Both are made the night before and baked in the morning. Happy Easter!

Egg Casserole
(From Allrecipes)

INGREDIENTS

* 1 pound ground pork sausage (Or whatever meat you want)
* 1 teaspoon mustard powder
* 1/2 teaspoon salt
* 4 eggs, beaten
* 2 cups milk
* 6 slices white bread, toasted and cut into cubes
* 8 ounces mild Cheddar cheese, shredded

DIRECTIONS

1. Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain.
2. In a medium bowl, mix together mustard powder, salt, eggs and milk. Add the sausage, bread cubes, and cheese, and stir to coat evenly. Pour into a greased 9x13 inch baking dish. Cover, and chill in the refrigerator for 8 hours, or overnight.
3. Preheat oven to 350 degrees F (175 degrees C).
4. Cover, and bake 45 to 60 minutes. Uncover, and reduce temperature to 325 degrees F (165 degrees C). Bake for an additional 30 minutes, or until set.


Baked French Toast
(from Allrecipes)

INGREDIENTS

* 1 (1 pound) loaf French bread, cut diagonally in 1 inch slices
* 8 eggs
* 2 cups milk
* 1 1/2 cups half-and-half cream
* 2 teaspoons vanilla extract
* 1/4 teaspoon ground cinnamon
* 3/4 cup butter
* 1 1/3 cups brown sugar
* 3 tablespoons light corn syrup

DIRECTIONS

1. Butter a 9x13 inch baking dish. Arrange the slices of bread in the bottom. In a large bowl, beat together eggs, milk, cream, vanilla and cinnamon. Pour over bread slices, cover, and refrigerate overnight.
2. The next morning, preheat oven to 350 degrees F (175 degrees C). In a small saucepan, combine butter, brown sugar and corn syrup; heat until bubbling. Pour over bread and egg mixture.
3. Bake in preheated oven, uncovered, for 40 minutes.

Breakfast Casserole

(needs to be made the night before and left in the fridge overnight). Take out of fridge in the morning and let stand 5-10 minutes before putting into the oven so your dish does not crack

For a 9x13 pan

16 slices of bread
You can add Ham, Cooked Sausage or Cooked Bacon (enough to layer across the entire pan
Cheese (shredded or in slices - whatever you have on hand)
again, enough to cover the entire pan
9 eggs
3 cups milk
Softened butter

Butter bread on both sides and line pan with 8 of the slices. Add a layer of meat. Add a layer of cheese. Top with remaining 8 slices of buttered bread (both sides)
Mix the 9 eggs with the 3 cups of milk. Slowly pour mixture over layers. Soak overnight - uncovered.

Cook uncovered @ 350 for about 45 minutes. Should be solid and lightly browned. Let stand about 15 minutes before cutting.

I've made that egg casserole before too & it's easy & tasty! The other option which is a family favorite is breakfast pizza -- also made the night before. We usually take it easy on the hashbrowns since I'm not a fan of them. Another great french toast idea is to buy a loaf of Great Harvest apple pie bread (I'm pretty sure that's what it's called) -- it makes AMAZING french toast! You could have precut fruit in the fridge, do that for french toast & do some bacon or something. My stepmom has made bacon the night before & then heated it in the microwave the day of brunch & it's been great & the kitchen doesn't smell like bacon the rest of the day! Good luck! 1 (8 ounce) can refrigerated crescent rolls
1 pound bulk pork sausage
1 cup frozen shredded hash brown potatoes, thawed
1 cup shredded Cheddar cheese
3 eggs

1/4 cup grated Parmesan cheese

DIRECTIONS
Unroll crescent dough and place on a greased 12-in. pizza pan; press seams together and press up sides of pan to form a crust. In a skillet, brown sausage over medium heat; drain and cool slightly.
Sprinkle sausage, hash browns and cheddar cheese over crust. In a bowl, beat eggs, milk and pepper; pour over pizza. Sprinkle with Parmesan cheese.
Bake at 375 degrees for 28-30 minutes or until golden brown. Let stand 10 minutes before cutting.

Hi N. -
Here's a casserole that I make and everyone devours it. The downside? Every single time the family gets together for breakfast I have to make one (sometimes two)! I'm somewhat hopeless in the kitchen myself, and if I can make this - anyone can!

Chille Egg Puff
10 eggs
1/2 c all-purpose flour (unsifted)
1 tsp. baking powder
1/2 tsp salt
1 pt. (16 oz) creamed small curd cottage cheese
1 lb Jack cheese, shredded (if you want to spice it up use Pepper Jack)
1/2 c. butter or margarine melted (I always use a little less)
2 (4 oz) cans of diced green chilles
In a bowl, beat the eggs until light and lemon colored. Add flour, baking powder, salt, cottage cheese, jack cheese, and melted butter, blending smoothly. Stir in chilles.
Pour mixture into a well buttered 9x13 deep baking dish. Bake at 350 for about 35 minutes or until top is browned and center appears firm (I check it with a toothpick). Makes 10-12 servings.
You can also serve a side of salsa with it.
I've even mixed it the night before and put it in the fridge. It may take longer to get it to cook because it's cold, but it saves a lot of running around in the morning.
