I'm not a fan of egg casseroles, so when I have to make stuff for things like that I make french toast casserole. It's far from health food, but it's delicious!

Hello- I am wondering if anyone has a good breakfast casserole recipe that I can make to take to my women's bible study group. Thank you.

Egg casseroles are good and you have some good recipes, but can be tricky at a study group if the eggs get too cold. Here is a French Toast Casserole recipe I love.
5 cups bread cubes (I use a loaf of cinnamon swirl bread)
4 eggs
1 1/2 cup milk
1/4 cup white sugar, divided
1/4 teaspoon salt
1 teaspoon vanilla
1 tablespoon butter, softened
1 teaspoon ground cinnamon (I don't add since I use cinnamon bread)
Preheat oven to 350, grease 8x8 baking pan with butter. Add bread to pan. In large bowl mix all ingredients, but only use 2 tablespoons of sugar. Pour over bread. Dot with butter, let stand 10 minutes. Combine remaining sugar and cinnamon and sprinkle on top. Bake for 45-50 minutes.
It's good plain, but I also love it with maple syrup on top and more butter.
Easy and delicious...omelet casserole.
Whisk 20 eggs and 1 c. of milk together. Add any ingredients you would want in an omelet (our favorites are sausage, cheese, peppers and onion). Bake in the oven at 350 degrees for 45 minutes. All done!
Honestly, I made this for my son's birthday party this year and everyone had to have the recipe. Enjoy!
easy breakfast casserole
12 eggs
16 oz sour cream
mix together and set aside
20-24 oz frozen hash browns (browned or fried)
1 lb sausage or bacon drained
1/2 lb sharp cheese (grated)
greased baking pan-put hash browns on bottom-then meat-then egg mixture-then cheese. bake @350 for 45-1hr until cheese and eggs are done.
great for freezing.
good luck~
I have one that everybody raves about
In a greased 9 x 13 --lay a box of cheese and garlic croutons
In a big bowl--mix 12 eggs
3 cups of milk
3 cups of mexican cheese
1 tsp garlic salt
1 tsp dry mustard
Lay 1 big can of whole green chilis (not chopped) on top of croutons. --open them up and lay them flat.- do not add chili liquid
Pour egg mixture on chilis
add jalapenos if desired (I dont)
Cover with foil and refrigerate overnight
Let it sit out for 30 min in the morning
Bake at 325 for 1 hour uncovered.
Enjoy!
Check out www.allrecipes.com. It's my favorite site for home made recipes from folks like you and me (no commercial or TV related interests). I have found some wonderful recipes there and you can use the search engine for something like "breakfast casserole" and see what pops up, read reviews, modifications from others' who've tried it! Good luck!
Hash brown Casserole:
Put hash browns in the the bottom of a baking dish. Depending on your mood either use the shredded ones or the ones with the onions and bell pepper in them. Spread sour cream over the hash browns. Then on top of that take about 4-6 eggs and beat them with a fork and pour over the hash browns till it fills the hash browns up. Next take and put crumbled almost cooked bacon or sausage over top. Bake in the oven 350 till the eggs are done....about 30 minutes. As soon as the eggs are done spread cheese over the top and bake until the cheese is melted and bubbly.

Take a can of Pillsbury biscuits take each biscuit and squish them and line a baking dish with them, you won't use all of them in the bottom, you will layer them, making 1 or 2 layers depending on the size of your baking dish. Take 1 lb of bacon and cook and crumble. Layer the biscuits and bacon. Take 1 cube of butter and 1 to 2 cups of pure maple syrup and cook them until the butter is melted. . Pour over the biscuits. Bake in the oven at 350 till the biscuits are done.
