Gluten Free Quick Fixes

I'm a working mom of 2 and our schedule is crazy. My husband has to have a gluten free diet--and I see all the posts about the quick and easy meals--does any one have any quick and easy meals that our gluten free? We are getting burned out on the meat and veggie combo--something different would be nice.

My mom just sent me this one, Tara. I'm GF/CF and allergic to soy and eggs. Haven't tried the recipe, but sounds more gourmet tasting than the same old stuff we're all used to having. Just use GF flour for the thickener, of course.

Pork Chops in Orange Sauce

1/4 t paprika
1/4 t pepper
4 boneless pork chops (6 oz each)
3/4 c orange juice
2 T Sugar
6 whole cloves
1/2 t grated orange peel
2 T GF flour
1/4 c cold water

Combine paprika and pepper, rub over both sides of pork chops. In a large nonstick skillet, brown chops over medium heat.
Combine the orange juice, sugar, cloves and orange peel, pour over pork. Cover and simmer for 18-22 minutes or until meat juices run clear.
Remove chops and keep warm. In a small bowl, combine flour and water until smooth, stir into cooking juices. Bring to a boil, cook and stir for 2 minutes until thickened. Discard cloves. (I didn't use whole cloves, so then you don't have to remove) Serve sauce over pork chops. Yields 4 servings.

We have been gf/cf for over three years now, and have discovered that you can make almost anything that you used to have gf/cf. Whole Foods is a great resource for lots of GF meal ideas and ingredients. Most of my "quick" meals are things that I might have done the prep work on previously and then put in the deep-freeze for later. Also, www.recipezaar.com is a great resource for recipes, and with a little tweaking, most can be made gf. Invest in a quality bread machine and a rice-cooker. Most of the good ones (rice-cookers and bread machines) have timer functions. Homemade bread isn't that much trouble with the machine and tastes way better than the stuff you can buy. Also the Gluten-Free Gourmet series of cookbooks have been invaluable for teaching me the properties of and how to use the various GF flours (and there are many!). Asian markets are also a great source for some of the GF flours such as rice flour, and tapioca starch, as well as a great place for Asian meal ideas. Be careful, though, as most soy sauces are made with wheat. Thai cuisine is often safe, if it is made with rice noodles.

Meal ideas:
1) Spaghetti and salad. GF spaghetti noodles (usually made of ride or corn) for salad dressing, I usually just use olive oil and rice vinegar.
2) Fajitas (previously marinated with GF marinade), corn torillas and canned refried beans.
4) Tacos with corn taco shells
5) crockpot chicken (put the chicken in the crockpot, add a jar of gf barbeque sauce, and let it cook all day while you are at work).
6) crockpot roast pork or beef
70 baked or grilled fish
7) Homemade burgers on GF bread
8) Shepherds' pie (mashed potates, ground beef, tomato and corn baked casserole)

okay, this one is not so quick, but delicious when you have more time ;)
9) Dolmathes (grape leaves stuffed with ground beef or lamb and rice and spices), hummous (chickpea dip), and quinoa tabouli salad (can be made ahead, substitute quinoa for the bulgar wheat).

can he have dairy? i have some chicken enchilada recipes that are gluten free, but they do have dairy in them. you can do rice and chicken and make your own sauces to dress it up or hamburgers. they sell gluten free bread or he can do the meat w/out bread at all. my mother in law and sister in law both have celiac and now that i know what i'm looking for it's pretty much how we eat too. we do wheat but in limited amounts. let me know if i can be of any help. my email address is ____@____.com luck.
