Healthy, Inexpensive Snacks

I have a dilemma. I am more of a grazer by nature, so I get hungry throughout the day. I just don't know what to snack on!! I am deathly allergic to tree-nuts, I'm allergic to dairy, and I have celiac...so no gluten or wheat. We always have fresh fruits and veggies around, because my son is a great eater. I just get so tired of eating all this fruit (it's not very filling), and veggies are really boring on their own. I need snack ideas!

So What Happened?

Since oats and wheat are harvested together and there is bad cross-contamination...I have to get gluten free oatmeal. Which means, expensive! (unfortunately!)

Oatmeal is so versatile and inexpensive if you get the huge tubs of it. It oftens goes on sale for $1. It is very filling and you can add fruit, raisins, spices, grains, anything. You can eat it dry-toasted or add warm water. You can also use it to bake not too unhealthy cookies or muffins.

I made cinnamon apple chips, they were so good! They have to cook though for 2+ hours on your oven's lowest setting. They also went down so quickly, so I'm thinking of getting a food dehydrator. I also like to make smoothies. I've been wanting to add spinach to my smoothie, but I always remember after I make it.

Healthy & inexpensive hardly go together it seems! lol Can you do hummus with the veggies? Soy cheese & deli meat, steel cut oats? Is there a Fresh n Easy near you? You can look there for select items.

I agree with the hummus suggestion. Part of the reason you are not satisfied is because fruits/ veggies don't give you protein, which helps you stay full/ satisfied.

A friend just recently turned me on to baba ganoush - it's a roasted eggplant dip much like hummus but WAYYY more flavorful. It's amazing! Eat it with veggies, pita bread, crackers, etc. I actually spread it on tortillas and add deli turkey and avocado (can do this with hummus too). SO yummy! You can get it at Whole Foods, Sunflower, Vitamin Cottage, etc.

Make popsicles or smoothies:
1 cup yogurt (experiment with flavors if you want) or kefir
1 cup frozen fruit
1 to 2 T instant pudding (we like choc), if desired
1 T protein powder

Blend all items in blender for 30 seconds. Turn off & scrape sides if needed. Blend another 30 seconds to 1 min, until fruit is completely pureed.

Drink part of it immediately (will make 2 or 3 servnings), or freeze in popsicle molds.

Perhaps protein shakes. The one I drink is formulated without gluten and animal products or by-products. It is made with vegetable protein and provides 20 g of protein per serving. I am fully satisfied and full after drinking them and they are so yummy. You can even make protein bars for some different snacks.

Sunflower seeds. I love em, they are maybe $2.50 a pound raw. Some of my favorite healthy snacks are

A banana, drizzle with 1/2 TBS agave nectar (a bottle is about $5 and lasts me about a month), sprinkle a bit of cinnamon on top and 1 tbs sunflower seeds

Sweet potato, nuked in the microwave, sprinkled with cinnamon and agave nectar

Soup- I make soup 1x a week and freeze it in small individual-sized containers. A butternut squash or carrot soup with some lentils or black beans and corn is one of my favorites, it is low cal, about 100 cal for a cup, but fills me up and is super quick to heat up in the microwave

Hard-boiled egg or a fried egg on steamed greens (spinach, kale or brussels sprouts)

Beef jerky is a great snack because it is protien. You can make your own with a dehydrator that is less fatty and less costly than the stuff you find in the store. You can get recipes on-line for various marinades or buy some bottled marinade that you like. You can use turkey also.

Hummus for sure! Yummo! Tzatziki (sp?) dip is good as well. Homemade guacamole with quinoa crackers or Mochi is yummy. Just keep it simple with avacados, tomatoes, lime juice, onion, garlic, and cilantro. Can you do popcorn with Celiac? I can't think of the brand, but there's a super good popcorn that comes in a red bag. They have cinnamon & sugar kettlecorn that's great when you're craving sweet. Ooo, or bake some sliced up sweet potatoes. I LOVE edamame, too. The Mochi is also good dipped in gluten free soy sauce. And you could make your own corn chips baked with a little olive oil (again, not sure about the corn with celiac?), and have it with hot sauce, or guac. If you can't do the corn, you could try baking some plantains. Deviled eggs are also a good option. Just make your own mayo with some olive or grapeseed oil, and egg yolk, and a food processer. Sorry this is kind of random!

gardein(soy based, gluten free, non-meat freezer convenience food) it's delicious! things like "chicken" fingers, etc
gluten free chip or pita snack with avocado
berries with dark chocolate dipping sauce
turkey jerky
shrimp cocktail-you can buy big bags of cooked, frozen shrimp at places like Costco and thaw a handful, a little lemon...yum
7-layer dip made with black beans and a soy based sour cream substitute like tofuti

I do not know if this will work for you, but I love Veggie juice and rice crackers.. a Glass of V8 satisfies me from morning to past lunch.. Sometimes,

I add chunky pico de gallo to V8 to have it spicy chunky..
Tortilla chips and Guacamole.
Chicken soup with rice noodles or brown rice.
Veggie and beef soup.
Spring rolls with rice wrappers.
