A friend of mine had her wedding at Barr Mansion. It was beautiful and would work really well with a Western theme.

call local summer camps and see ifyou can rent there meeting halls or mess halls most of thenm rent them out this time of yr and most have a westerny feel and won't mind the hay
Have you looked at the Salt Lick? They have a pavilion that you can rent for a wedding. It is not too close to the restaurant and is really beautiful, with a little creek that runs by it. I attended a western wedding there and it was beautiful. Lots of room to dance. The location is very natural.
i live in victoria tx. we had our wedding at the victoria art leauge. it is downtown and a old western style building.http://victoriaartleague.org/default.aspx it was once the farmers market. i belive it was a brothle (sp) house at one time. look for intreasting buildings. even the old time white wood framed churches have a slight western appeal to them. can you find a barn? not sure about the conroe area but here we have the party parn, rasin L ranch, schroder dance hall and other barns you can rent.
check out website for this place in Hempstead called Tin Hall "Old West" Rental Hall: http://www.tinhall.com/rentaloptions.html
Hey-
Check out Enchanted Springs Ranch, Don Strange Ranch and Rio Cibolo Ranch. I think Rio Cibolo Ranch would be the cheapest b/c you can bring in your own caterer, etc. But all three have really cool sites for western weddings - exactly what you're looking for. Good luck!
What about having it at the VFW but putting the bails of hay in the entrance way decorated with western themed items..hearts made out of lasso rope, gingham, bucket with flowers, etc. You could even display your portrait on there as well.
Congrats on your upcoming wedding!
There is a place in either New Braunfels, Cibolo, or Schertz that does just that. I can't remember where. It is a western hall and I believe they do the whole hay ride stuff. Google places to get married in San Antonio are and you will find it. It wasn't my cup of tea, but it did look nice if you are into the whole western thing.
Congratulations on your marriage.
Where do you live?
We're in the San Antonio area and did ours at Rio Cibolo ranch. You can have both the wedding and reception there. It's perfect for a western wedding.
There is a rustic ranch type place in Buda off of Roland Lane that does weddings.. I can't think of it at present...but if you are interested..let me know at my personal email address and I will find out from some of my customers who live in that direction.. or make a run over myself and check it out.

I saw an amazing Cowboy Church in Montgomery or Hempstead. I do not remember exactly, but it looked perfect.. Here is a link.. I also have a very good friend that lives in Conroe. I will also ask her.
Have you checked out Texas Pride bbq? Not sure how big your wedding will be and what your budge is, but this is a cool place and they have large covered outdoor area w/tabels a little ways off from the main area http://www.texaspridebbq.net/index.cfm?fuseaction=browse&...

Try looking at Cibolo Ranch on line. It is located out on IH 10 going toward Houston but every close to town. It is a great place and they can cather too if you need them to do food. Great fun/family place.
Sorry I'm late. You've already received lots of good ideas...I'm not sure of your location, but you might check to see if there is a cowboy church in your area because most of them have a western ambience and won't mind having hay bales in the church. Wherever you elect to go you can use inexpensive tarps or show curtains to place under the bales so that they don't mess up the floor. You can even use old boots for floral arrangements around them. Congratulations on your upcoming wedding.
Have you considered the Tin Hall on Huffmeister in Cypress? It's really famous and set up for just the type of thing you describe.
Whats your location?
Briscoe Manor in Richmond, TX. Very beautiful...with a western twist.
I just now realized how old this post is. I received it in my e-mail today, but your request was in January. They need to update their stuff.
My niece had her wedding at a wonderful B & B in Center Point off of Witt Road called Green Valley: http://www.backroadstexas.net/green_valley.htm
They set up chairs (could use hay bales) out on a field overlooking a wonderful lake/pond and it was a beautiful place to take pictures. They had a Pole Barn (Pavillion) nearby with a rustic shed/bathrooms that were real country and nice. They had about 150 guesta and it was catered by Buzzies BBQ (in Kerrville) and they had a DJ that did a great job. It wasn't expensive and they even stayed there for the weekend. I suggest having it at about 7:30 p.m. (Plan on 6:30 p.m. and when it is a little late, it will be perfect) so the sun is low enough to be behind the hill for better visibility.
The web site also has some in Bandera, too. I haven't been there.
