I Need an AWESOME Recipe for Funeral Potatoes!!!!!

Okay so we have my husbands work xmas party this weekend and we have been assigned funeral potatoes. My husband has only worked for this company for a little over a year so I don't really know his co-workers very well and I really want to impress them! I do have a few basic recipes but I find them to be bland. I don't know that it matters but the main dish will be a glazed ham, thanks soo much for all your help!!!!!

I have always had funeral potatoes with Cheddar cheese, but the other day my friend made it with Parmesan. They were Awesome! I think any of these recipes sound good and you could try adding half Parmesan half Cheddar or using NY sharp cheddar (which is white also) and Parmesan. or completely Parmesan. Oooh and you could put diced red and green bell peppers in it and it would be so festive!

2 lbs hashbrown defrosted
1/2 cup butter
1 small can cream chicken soup
1/2 cup sour cream
Chopped onions
1 cup cheese

you can either crush regular potaoe chips for the topping or mix kellogs corn flakes and butter and crush them for the topping. I have had both ways and they taste awesome.
sprinkle with cheese
cook 350 for 1 hour
I take these all the time for dishes and never have any left over. they are yummy

You have my word that this is the all time best way to make funeral potatoes. I have tried others and I'm telling you this is the best!
1 32 oz bag of diced hash browns
1 can cream of chicken soup
1 16 oz of sour cream
2 cups shredded cheese
3/4 cup melted butter
ruffels potato chips

Mix hash browns, soup, sour cream and cheese in large bowl. With the butter you want to add 1/2 cup of melted butter to the mixer and set aside the remaining 1/4 cup. place mixter in baking pan. Then crush up potato chips into the 1/4 cup melted butter and cover the whole top of the potatoes with the buttery chips. Then cook for 1 hour at 350. Good luck.

Cheddar Potatoes
1-24 ounce package frozen hash brown potatoes, thawed
1-10 ½ oz can Cream of chicken soup
2 c Sharp cheddar cheese, grated
½ c Sour cream
¼ c Onions, finely chopped
½ tsp Salt
¾ c Corn flakes, crushed
1 tbsp Butter or margarine, melted

Heat oven to 350°. Mix all ingredients, except corn flakes and butter, together and spread evenly in greased 8-inch square baking dish. Mix together corn flakes and butter and sprinkle over potatoes. Bake for 1 hour.

I have never heard of funeral potatoes! Would you please explain??? Based on other recipes you've been given, though, I have to offer mine. Obviously, we all think our potatoes are the best, but... bacon is WAY better than cream soups, right!?!?!?

Cheesy Potatoes

Boil 12-15 potatoes in skins. Drain when cooked. Skin and grate.
1/2 c margarine
1 1/2 c grated cheddar cheese
1 lb cooked bacon (save some of the drippings)
1 bunch green onions, chop all
1 pint sour cream
salt, pepper, dill, parsley, to taste
Melt margarine in 9x13 pan. Add a little bacon grease.
Mix everything, then fold in sour cream. Put in pan.
Sprinkle a little green onion and paprika on top
Bake at 350 for 45 minutes.
Can be made a day in advance and refridgerated until ready to bake. Will take longer to cook, though, if coming from a cold fridge.

HI Amber, at my house we call these Cheesy potatoes (although in some circles they are called funeral potatoes because people take them for family dinners at funerals). Not sure what recipe your starting with, but here is what I do. If this is for a group dinner I always make lots. 2 bags of country style frozen hash browns (the chunk ones w/out peppers), 1 can cream soup (any one you like), 16oz. sour cream, 1 1/2 - 2 cups grated cheddar cheese, about 2 Tbl. spoons chopped chives (fresh or dry) and seasonings to taste (I use some season salt and a little pepper). Put the hash browns in a 13X9 or a bean pot if you have one (visit me online if you want to look at one www.christinaforst.com). Mix all the other stuff together and pour over the top of the potatoes. Put in the oven for around 35 minutes at 350 covered. Then stir them and cook uncovered for about 15 minutes or so until they are hot all the way through and golden brown along the edges. We never have too many left but if you do then you can fry them with eggs for breakfast the next day. Good Luck.

I think the key is shredded hashbrowns, not cubes. (I have made both frozen potatoes and boil/cut your own and there is no difference. Save yourself the work). Also, add onion powder (1 tsp) and some garlic powder. After having crumbled potatoe chips on top, I can't go back to the buttered corn flakes. The chips are so salty and make it better. Good luck! I think it is darn funny that your husband is a mortician, and you were asked to bring the funeral potatoes. Check this website, the recipe looks fairly tasty! And, if you want to surprise them.... you can always add a bit of zip with some finely diced chiles.

I want to know how they turned out!

My boss' wife makes them for our Christmas party every year (mainly because I 'demand' them now), and although I'm planning to make them this year for Christmas, I haven't gotten her recipe yet. They are sooooooooooo yummy, yet soooooooooo bad for you. ;) All I know for sure is that she uses the hashbrown potatoes, and that she tops them with Frosted Flakes! I would have never guessed had she not told me one year, but she thinks it's the 'secret recipe' ingredient, and I think I'd have to agree. I emailed my boss just now, and if I get her recipe soon I'll post it.

Sorry, I can't help you, just wanted to drop a comment...Funeral potatoes? What the heck are those? Never heard of it! LOL

On the otherhand, if the main course is ham, sweet potatoes go great with it!

My mom's method after 10 years in restaraunt catering, this one takes a little work and time but worth it- Not a true funeral potato, but use shredded hashbrowns instead and add the cereal topping and voila-
Bake off a bag of potatoes (at least one good sized one per person if for a meal, can usually get away with less for a potluck if there are a lot of other sides)
slice off the outer layer/peel
cube
Fold with enough sour cream and shredded yellow cheese to get your desired consistancy (will be slightly goo-ier after baking- more cheese = more goo) I use combination of sharp cheddar and colby jack, but what ever works for you.
Add salt and pepper to taste
you can mix in what ever you want- ham, bell peppers, and onions are all good choices

Bake covered for long enough to melt everything (varies with pan and oven- 35-50 min), then uncoverd for about 10 to brown up the top and form a cheesy crust. If using a lid and/or a very full pan, make sure you put a cookie sheet undernearh to catch any cheese that may boil over.

If taking to a pot luck I ususally prep an extra small pan to keep at home for dinner later in the week, they keep well in the fridge for several days.

That IS funny! Bringing funeral potatoes to a mortician's work party! haha!
Well I always use real potatoes. No frozen hash browns. It makes a huge difference! Quarter or half, boil, peel then grate. Then the traditional sr cream, cream of chicken soup, cheese, salt , pepper and be sure to add a little grated onion for flavor. Crushed corn flakes mixed with melted butter on top. Mmmm
