one tip someone gave me when I asked about this which I found to be totally awesome is buy a few of those silicone muffin trays and use those instead of ice cube trays. They aren't expensive but if you're going to be making food for months, they are WAYYYYY easier than ice cube trays. You can make "pucks" and then easily peel them out of the tray and transfer to freezer bags. The trays are easy to bend plus very easy to clean. Pucks are the right size to use in the beginning as one or two meals and later on as a side portion.
