I'm Vegetarian and not so much into "Frankenfoods." I would stick to something with seasonal veggies like eggplant or zucchini. If you do a veggie chili, roast the eggplant, onions, carrots, garlic, peppers, tomatoes, before you put them into the chili. Use a few different types of beans like black beans, adzuki beans, cannelini, as well as traditional kidney. I usually use three different types of beans. I also like to use canned diced tomatoes and tomato puree. Costco sells mini bread loaves that are fully baked, but when you heat them in the oven for about 10-15 minutes, they come out like fresh baked with no effort. A green salad is also a great idea.
Check the Farmer's Markets to see what veggies they have and create a meal around those. If you do a search online for ingredients you get at the market, you will come up with many good ideas.
I would caution you to watch the ingredients on prepackaged sauces when cooking for Vegetarians. Worchestershire Sauce contains anchovies. Not veggie friendly.
