Meal for Vegitarian Mom

Hi Everyone,
My friend just had a baby and I want to bring her some food. Only thing is she is a vegetarian and I am not. So I have no idea what to cook. If I ask her she will say don't worry about it. Any suggestions?

You could make her big pot of meatless chili. No meat at all or add some of the crumbles made by Morningstar Farm, their products (frozen food aisle) are AWESOME. My son loves the chicken nuggets more than actual chicken. Or you could make some potato soup (if she eats dairy) Baked pasta always good and add a nice big tossed green salad with lots of veggies. And some crusty bread....can you tell I haven't had dinner yet? LOL What a great friend you are.

OMG!!! Right up my alley. In the frozen food section there are a variety of vegetarian products. You can buy veg chix patties. Make chicken parmesan!!! Just sauce, cheese & bake. Theres chix nuggets, you can make sweet & sour chicken, veggies "meat" crumbles, make chili, lasagna, taco salads. These products can be used as regular "meats" in any recipe you favor. There are cheeses if shes vegan and lunch meats to make subs! Giant eagle, walmart, kmart, shop & save all carry a variety.

I have to agree that a meatless ziti is so easy and delicious. You could bring it over with a green salad and some crusty bread. I just made myself hungry :)

i am vegitarian..Love bake ziti which is great reheated too!can make with morning star crumbles or with out!veggie lasagna..pasta and garlic bread..veggie sloppy joes and rolls..

I'm Vegetarian and not so much into "Frankenfoods." I would stick to something with seasonal veggies like eggplant or zucchini. If you do a veggie chili, roast the eggplant, onions, carrots, garlic, peppers, tomatoes, before you put them into the chili. Use a few different types of beans like black beans, adzuki beans, cannelini, as well as traditional kidney. I usually use three different types of beans. I also like to use canned diced tomatoes and tomato puree. Costco sells mini bread loaves that are fully baked, but when you heat them in the oven for about 10-15 minutes, they come out like fresh baked with no effort. A green salad is also a great idea.

Check the Farmer's Markets to see what veggies they have and create a meal around those. If you do a search online for ingredients you get at the market, you will come up with many good ideas.

I would caution you to watch the ingredients on prepackaged sauces when cooking for Vegetarians. Worchestershire Sauce contains anchovies. Not veggie friendly.

I am sure she will appreciate whatever you make.
