Need Meal Ideas for a Sick Friend on Restricted Diet

Hi all,
I am trying to help out a friend who is sick by bringing dinner for her and her family once per week. Due to allergy and illness, the family is on a dairy-free, gluten-free, low sugar diet. Ideally I would like to make some additional meals that can be frozen so that she can use those as she needs them. I am looking for meal ideas that are either crockpot-friendly or can be made ahead and that DO NOT CONTAIN dairy or gluten. If you have any recipes that you can share, I would appreciate it!

If your friend is sick, the last thing she needs is over processed stuff like some mentioned below. Lots of fresh veggies, beans, whole grains are great. If you wash several bunches of kale for her and tear them up and put them in a ziploc baggie, she can grab a bunch, put it in some water and lightly steam up to have fresh veg each day filled with vitamins and minerals (including calcium) Brown rice and quinoa, once cooked will store for days in the fridge as will some beans. Kidney, lima, pinto, chickpeas all different vitamins and minerals in them will really pick her up.

I cook GF CF DF for my son...Pasta, chicken dishes (fingers, cutlets, chicken taco sauce, etc), Beef dishes ( meat sauce in crock pot, beef stew). Let me know what you would be interested in and I will email you recipes. It's easier than you think.

You might ask her what meals she can have and her family enjoy. If you are doing this more than a few times she might really like to have a choice as to the meal and knowing its safe for them will ease her mind too. Id just sit down and ask her to give you some good ideas. Its nice of you to be doing this for her. Hope she is well soon. (o:

Quinoa is tasty and a great source of protein. I like this recipe, and I make it without the jalapenos so my 2 little ones can eat it too:
1 1/2 cups quinoa (cook it like you would rice)
1 1/2 cups cooked black beans, rinsed if canned
1 1/2 tablespoons red-wine vinegar
1 1/2 cups cooked corn (cut from about 2 large ears)
3/4 cup finely chopped green bell pepper
2 pickled jalapeño chilies, seeded and minced (wear rubber gloves)
1/4 cup finely chopped fresh coriander

For dressing
5 tablespoons fresh lime juice, or to taste
1 teaspoon salt
1 1/4 teaspoons ground cumin, or to taste
1/3 cup olive oil

Also, I just discovered gojee.com , which is great! You can type in ingerdieants that you have or ingredients that you don't want (like dairy and gluten) and it will find recipes to your specifications. I use it to find vegetarian recipes that I can make with what I have in the house, works like a charm!

As far as crockpot meals go, Thai Kitchen has some gluten free curry paste you could make a soup with chicken, veggies, & coconut milk. Or lentils, veggies & canned tomatoes. (most main brand canned tomatoes are gluten free but as always double check manufacturers website).

Roast works too. With a side of mashed new potatoes. Just make sure if you are using spice blends or beef broth/stock that they are gluten free. We usually use plain swanson's broth, but their organic or seasoned varieties may contain gluten.
