I have been challenged, I have accepted... We will be in the park after worship service so I have no way to keep it heated. We will be eating around 1130am.

Any recipes that will knock their socks off?

Thanks!!!!

So What Happened?

Thank you soooo much for all your input! I ended up making Red Hot Dish as my time started running short and it seemed the easiest way to go. But that doesn't mean I won't need the others soon enough! It was a big hit!
Thanks again, you ladies rock!!!!

You could make that one with rice and crushed pinapple, maybe some cool whip? Anyone know that one? My mom made that for like everything!
Or, the one with peas, cheese, ham and miracle whip...that would be easy. Just those ingredients diced and miracle whip I think!
Have fun...
Ooo Rye bread with cheez whiz and olives rings of my MN childhood!:)

Do you have any cream of chicken or cream of mushroom? Hahahaha! I am from Minnesota and have seen some crazy hotdishes. It seems like some people get out the cream soup, blindfold themselves and start emptying their refrigerator into a mixing bowl and call it a casserole! :)

I'll get out the church cookbook that I got from my husband's grandma for Christmas and update this post!
-------------------------------------------------------------------------------------------------

Okay K., do you have a crockpot and a way to plug it in? I plug mine in at church and just tote it down to the park when we have potlucks. You can either make this ahead of time and then use the crockpot to heat it, or you can start the cooking process when you wake up in the morning and then plug it in again at church.

Seriously, this one doesn't even have a name except "hotdish". :)

1 lb. ground beef
2 onions, sliced
3 carrots, thinly sliced
4 potatoes, thinly sliced
1/2 tsp. salt
1/8 tsp pepper (which is like flaming hot sauce to half of my community)
1 cup cold water
1/2 tsp. cream of tartar
10 3/4 oz. can of cream of mushroom soup
1/4 cup milk
and again- 1/2 tsp salt and 1/8 tsp. pepper

Layer in a greased crockpot: ground beef, onions, carrots, salt and pepper.
In a mixing bowl, disolve cream of tartar in the water and toss potatoes in the water - drain.
Combine soup and milk. Toss with potatoes. Add second installment of salt and pepper. Place potatoes in slow cooker over other ingred..
Cover - cook on low for 7-8 hours

You can also do tator tot hotdish - PM if you need a recipe

Goulash:
1 box of elbow macaroni -cooked to pkg. directions
1 lb. ground beef
1 small onion, chopped
1 jar spaghetti sauce - or more, depending on your tastes

Brown ground beef with the chopped onion until meat is no longer pink. Mix with the cooked pasta and stir in sauce.
If you really want to impress them - put some shredded mozzerella on the top. ;)
Pour into a crockpot and put on low to heat. 2-3 hours

I also have a Hamburger Rice hotdish recipe but it's not for the crock pot. I will try to find the recipe for you.

This is fun! I hope you brush up on your "How To Talk Minnesotan" for the occasion! ;)

I think the recipe Alana is referring to is Frog Eye Salad, made with acini di pepe pasta. I think it is better made the day before you want to serve it. It makes a lot! Another good recipe is Cornbread Salad. Here are both recipes.

Frog Eye Salad
Ingredients
1 cup white sugar
2 tablespoons all-purpose flour
2 1/2 teaspoons salt
1 3/4 cups unsweetened pineapple juice
2 eggs, beaten
1 tablespoon lemon juice
3 quarts water
1 tablespoon vegetable oil
1 (16 ounce) package acini di pepe pasta
3 (11 ounce) cans mandarin oranges, drained
2 (20 ounce) cans pineapple tidbits, drained
1 (20 ounce) can crushed pineapple, drained
1 (8 ounce) container frozen whipped topping, thawed
1 cup miniature marshmallows
1 cup shredded coconut
Directions
1.In a sauce pan, combine sugar, flour, 1/2 teaspoon salt, pineapple juice and eggs. Stir and cook over medium heat until thickened. Remove from heat; add lemon juice and cool to room temperature.
2.Bring water to a boil, add oil, remaining salt and cook pasta until al dente. Rinse under cold water and drain.
3.In a large bowl, combine the pasta, egg mixture, mandarin oranges, pineapple and whipped topping. Mix well and refrigerate overnight or until chilled. Before serving add marshmallows and coconut. Toss and serve.

Cornbread Salad
Serves: 8

Ingredients
1 (1-ounce) package dry ranch-style dressing mix
1 cup sour cream
1 cup mayonnaise
6 corn bread muffins (16 ounces total)
2 (16-ounce) cans pinto beans, rinsed and drained
1 medium-sized green bell pepper, chopped
2 (15-1/4-ounce) cans whole-kernel corn, drained
3 large tomatoes, chopped
10 slices bacon, cooked and crumbled
2 cups (8 ounces) shredded Mexican cheese blend
6 scallions (green onions), sliced
Instructions
1.In a small bowl, combine dressing mix, sour cream, and mayonnaise; set aside.

2.Crumble half of the corn muffins into a large glass bowl or trifle dish. Layer the beans over the muffins, then the bell pepper, sour cream mixture, corn, tomatoes, bacon, the remaining corn muffins, the cheese, and scallions.

3.Cover, and chill at least 2 hours before serving.

"Red Hotdish"

1 # Hamburger, seasoned and browned
3 cups Macaroni noodles (cooked)
1 can tomato soup
1 Tablespoon mustard
1 Tablespoon vinegar
Ketchup till it looks good
Brown sugar till it tastes good

Double or Triple as necessary. This was my daycare kids' favorite recipe! And yes, I'm from MN!

Heat till HOT in a crockpot or on stove top. If there is no where to keep it plugged in....... Make it good and hot at home and then wrap the whole crock pot in a big thick towel. Should keep it pretty warm for a couple hours........

Pina Colada Chicken Salad. Poach boneless chicken breasts (not too long, should only simmer @ 10 minutes) in chicken broth and cut up veggies. Cool and cut into bite size pieces. Add celery, onion and mandarin oranges. Mix equal parts sour cream and pina colada mix (the liquid kind) for the dressing. Add a drained can of crushed pineapple to the dressing. Chill well. Before serving, add chow mein noodles.

Carmel apple salad - Mix a container of Cool Whip with a small jar of carmel topping. Add cut up apples. Then stir in Heath bar bits

Grape salad - Mix together 8 oz of cream cheese and 8 oz sour cream, add 1/2 c sugar, 1 tsp of vanilla. Combine with 3 to 4 lbs of grapes. Stir in pecan pieces

Stuffed Cherry Tomatoes (labor intensive) - wash 2 pints of cherry tomatoes, hollow them (I use an apple corer). Stuff with mixture of 6 oz cream cheese, 1 tsp chili powder, 2/3 cup shredded cheddar, 1/2 cup corn. Sprinkle with paprika.

Have fun!
