What I have done lately with mashed sweet potatoes is peel them, cut them into chunks (just like regular potatoes), boil till tender. Add butter and a little bit of brown sugar. So good !
Hi moms...I need help, I may have bitten off more then I can chew. I decided to have my family (in-laws) over our house for Easter and I said I would do all the cooking...I AM NOT MUCH OF A COOKER....I just wanted it to be stress free for everyone because there always seems to be so much tension when we get together and it drives me CRAZY, so I thought have it at my house and I will cook AND clean everyone else chill and have fun (it won't end up that way....but thats a whole other issue!!) Can any of you give me some EASY recipes for the following....
Mashed sweet potatoes
Fresh green beans.
I think I can handle the rest which is ....
HAM
CORN CASSEROLE
SALAD
ROLLS
but feel free to give ma any other recipes or advice you have :) Its not alot of people...about 10 all together.

Thank you everyone I loved all of your responses! I think I have decided to take the easy route...I think im going to go pre-made with most of the stuff...im just way too stressed out about it...my lovely husband just informed me that a friend of his and his girlfriend and 3 kids will be visiting from out of state that day and staying the night...now im beyond FREAKED...so im just gonna get pre-made stuff and hold my breath till Easter is over!!! lol. If you need an App... Try baked Brie. Get a wheel of Brie (costco has a good price), a puffed pastry SHEET (not cups) from the frozen food area of the grocery store, one egg and some sort of fruit preserve (we use apricot). Thaw the pastry sheet and roll it so its bigger than wheel of cheese. Cut of white skin off one flat side of the wheel and put that face up in the pastry sheet. spoon the preserves over the cheese and fold the pastry sheet around it. beat the egg and brush wth pastry sheet. bake on 350 until it browns. Serve with some sort of water cracker.
So good, so easy and always a BIG hit.
I've got an awesome easy as pie cheesy potato recipe. Buy 2 bags of the frozen southern style hashbrowns ( small cubed potatos) in a large bowl mix 1 tub of sour cream, 1 can cream of chicken soup and 16 ounces shredded cheddar cheese( 2 small bags of pre-shredded cheese or 1/2 a bag of the big bag)then stir in the potatos. Grease the casserole dish and dump the mix in. Top with more shredded cheese and those French's fried onions. Bake at 350 degrees for 30-40 minutes..
Oh and wicked easy hot dip recipe to set out while everyone arrives ( will make you look like a rock star ) 1 package of cream cheese, 1 cup sour cream, 2 tbs worchestershire sauce, 2 tbs horseradish and half of a package of imitation crab. Mix it all up, bake 350 degrees for 20 minutes ( you can make it ahead and just pop it in about 10 min before people are scheduled to arrive. Serve with crackers..
Fry bacon , onion and garlic in pot,add fresh string beans, season to taste. Turn beans over , add little water and steam.
This is my favorite way to cook green beans.
Slow Roasted Green Beans
3 pounds green beans , ends trimmed
3 tablespoons extra-virgin olive oil
1 1/2 teaspoons sea salt
1/2 teaspoon cracked black pepper
Preheat oven to 300°. Place beans in one layer on a large baking sheet with a rim. Drizzle with olive oil, salt and pepper and toss with hands. Place in oven and roast 20 to 25 minutes, until tender and slightly golden in spots. Remove and serve warm or at room temperature.
For sweet potatoes, I add cinnamon and a little half and half or buttermilk to give a little flavor instead of brown sugar. For a ham, I did this last year: if you have a slow cooker, put the ham in and cover with apple cider. I used the Simply Apple Cider brand. This can cook all day or the night before depending on when you will eat for about 5 to 8 hours. It was fantastic. It will save a little sanity for you since no need to watch it or baste to prevent drying out. Just watch it near the end so it is not overcooked.
The other am. Ina Garten was on the Today show w/ an easy Easter dinner menu which consisted of lamb and a great roasted veg rissotto. Her meals are always so flavorful and have a wow factor.Look on the Today show' site for the recipes. It's is a little less healthy than plain green beans, but so delicious. I only make it once or twice a year, since I ususally opt for more healthy choices. But I figure why not indulge a little on a Holiday.
For other recipes, the site even has a function that allows you to add up to 6 ingredients to search for a recipe containing those ingredients.

You don't need a recipe - you need the phone number to your closest Honey Baked Ham store. They make the best hams, and all the other stuff, too. If you have a Publix nearby, or other higher-end grocery store, they do a wonderful job providing all the necessary stuff for holiday meals as well.
When I was pregnant with my twins, I couldn't travel so Thanksgiving was at my house. We bought everything pre-made from Publix; it was fantastic and stress-free!
My recipe is to go to Nature's Food Patch and buy it- then I relax as well.

This is my all time favorite receipt. You can make it a head of time, and it can be frozen. Makes 2 - 9"X13" pans. It is also inexpensive.
Chicken Tetrazzini Bake at 350F for approximately 45 minutes to an hour.
Makes 2 - 9 ½” X 13” pans. Freeze leftovers!
2 Chickens (I buy them already cooked at the grocery store.)
2 pounds of Angel Hair Pasta
6 cups grated cheddar cheese, or more
2 Tablespoons of butter
Milk - I buy a ½ gallon and use almost ¾ of it.
1 large bell pepper
1 large onion
1 large jar of chopped pimentos
1 can Cream of Celery soup
1 can Cream of Chicken soup
1 can Cream of Mushroom soup
Put on a large pot of water to boil. Break up the pasta and cook as directed.
When done drain and put back in large pot.
Break the chicken up into bite size or larger pieces. Add to cooked pasta.
Chop onion and bell pepper. Sauté in 2 tablespoons of butter. Use a 2 quart or larger pot.
Add the large jar of pimentos, liquid and all.
Add the 3 soups
Add ½ the container of milk, stir.
Add this mixture to the large pot of pasta and chicken and mix. Now is the time to add more milk so it won’t be to dry. (If you boil your chicken the broth may be substituted for the milk.)
I like to spray my 2 - 9 ½” X 13” pans with a non stick oil.
Lightly cover the bottom of both pans with the Tetrazzini mixture. Add a cup or more cheese on top of each. Divide the rest of the Tetrazzini mixture into each pan and cover with cheese. Bake at 350F for approximately 45 minutes to an hour. You will know it is ready when it starts to bubble around the sides and the cheese starts to brown.
I like to serve this with green peas, bread, and salad.

You cannot go wrong with the green bean casserole on the Durkee Onion Can. Or just steam fresh green beans and toss with butter and slivered almonds!

Fresh Green beans - after rinsed and cut, put italian dressing over top. About the same amount as water. You can cook in a pan or a microwave - both work. Cook for the amount of time as to how soft or hard you want them then while warm sprinkle parmasean cheese over top. Easy and very delicious. I hope this helps.
