Pumpkin Roll! I found a recipe here: http://allrecipes.com/Recipe/pumpkin-roll-ii/detail.aspx all though we make it without the walnuts. My 3.5 yo DS LOVES it!
My neighbor is moving and gave us some food. She gave us 4 cans of pumpkin. So, does anyone have any good recipes for using canned pumpkin? Any ideas are welcome, but please - no pies and no soups. Thanks mamas!

Pumpkin Nut Bread
4 cups flour
1 tblsp pumpkin pie spice
2 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 can pumpkin
2 cups packed brown sugar
1 cup apple juice
4 large eggs
1/4 cup vegetable oil
2 tsp vanilla extract
1 cup chopped nuts, divided
Preheat oven to 350 and grease 2 9x5 loaf pans
Sift flour, pumpkin pie spice, baking powder, baking soda, and salt into medium bowl. Combine pumpkin, sugar, juice, eggs, oil, and vanilla in large bowl and mix well. Stir in flower mixture and 3/4 cup nuts just until moistened. Spoon into prepared loaf pans. Sprinkle remaining nuts over top of loaves. Bake for 60-70 minutes. Cool on wire rack for 10 min, Then remove from pan to cool completely.

4 eggs
1 2/3 cup sugar (granulated)
1 cup cooking oil
1 16 oz can pumpkin
2 cups flour
2 tsp baking powder
2 tsp pumpkin pie spice
1 tsp salt
1 tsp baking soda
For icing:
13 oz cream cheese softened
1/2 softened butter
1 tsp vanilla
2 cups sifted powdered sugar
with a mixer, beat eggs, sugar, oil, pumpkin until fluffy. Stir together all dry ingredients. Add to pumpkin mixture. Spread in ungreased 15"x10"x1" pan. Bake at 350 deg for 25-30 min. Cool.
Cream together cream cheese and butter. Add vanilla and powdered sugar gradually. Beat until smooth. Spread on cooled bars.
I put pumpkin in my pancakes, sweet breads and even add them to boxes of chocolate cake!
I know you don't want soup recipes but I have a spicy pumpkin mushroom soup that everyone seems to love.
These cookies are amazing, I make them every fall. Posting this makes me want to make them now! :-)

If you want something more summery, you could try pumpkin smoothies. I haven't made them myself, but I think now I might have to, they sound really good:

You can use it to make a healthy low fat cake. Just use a small can of pumkin and any flavor cake mix and put it in the pan and bake just like normal. This is a weight watchers recipe and you can top it with cool whip, I love to make this with a spice cake mix. I also make a low fat pumpkin pie I just follow the directions on a can of evaporated/or condensed milk I get the Fat Free and use egg whites not eggs add a little less sugar then a normal recipe and either use a few sheets of Phyllo Dough or don't use any crust at all, my grandson loves it he calls it Mumkin Face Pie.

I love the muffins and bars. I also add about 1/2 c pumpkin puree or sweet potato puree (whatever I have on hand) to my storebought spaghetti sauce. The sauce hides the flavor (so no complaints from picky kids or husband--bonus!!) and you've just added a major nutritional punch to your dinner!
The weight waters recipe below I second...Baked it multiple times....in muffin pans...Mix spice cake mix with the can of pumpkin and bake!!! or carrot cake mix works just as well...so easy..tastey and moist!!! Ymm
My mother made pumpkin cookies. I've had pumpkin muffins. You can find recipes on the Internet. My mother's cookie recipe was from a Betty Crocker cookbook.
I absolutely LOVE "pumpkin dump cake" (it uses yellow cake mix, pumpkin, etc and is delicious) Also I have made a pumpkin and mushroom lasagna and used pumpkin for a sauce with pasta and sausage. (Those two recipes are from taste of home healthy cooking magazine) Plus you can't go wrong with the breads, muffins etc. Good luck and have fun!!! Pumpkin Dip
29 oz. can pumpkin pie filling
4 cup powdered sugar
2 - 8 oz. pkgs. cream cheese, softened
2 t. cinnamon
1 t. ground ginger
gingersnap cookies
Combine pumpkin, sugar and cream cheese in a serving bowl. Mix well; stir in cinnamon and ginger. Arrange bowl on a plate; surround with gingersnaps. Arrange bowl on a plate; surround with gingersnaps.
Makes 7 cups.
