Mamas & Papas-

I bought some canned pumpkin, with the hopes of baking. I am not after a autumn recipie, as such, but rather a tried and true recipie for chocolate chip cookies, muffins, cake, bread, cupcakes that my kid, who hates vegetables, might eat. Sure I could troll the all recipies pages, but the recipies there, even when favorably reviewed, always come with a handful of modifications in the commentary, and then I am left scratching my head as to which one to follow.

So What Happened?

Made the ones from the I heart nap time link, which are identical to suz ts. They were good, but more like muffin tops than like cookies. My kid ate them. Me, I was a little non plussed.

I make a yummy pumpkin choc chip bread. It's always well received and I make mini loaves and freeze them so we enjoy small amounts. If you'd like my recipe pm me and I'll send it to you. I bake these for gifts as well and everyone raves.

We mix a box of spice cake and a can of pumpkin - so yummy!

I'll get my daughter's recipe for pumpkin cake. She may only be 11, but she is an amazing baker and she just made one for us yesterday.

You can just replace the oil/butter in your normal recipe for those things with the pumpkin.

i am emphatically not a pumpkin spice latte girl (although i do love me some caramel ones!)
i don't like pumpkin pie, and all the autumny things i adore do not include pumpkin.
but these cookies are seriously awesome and garner me raves whenever i bring 'em.
ingredients:
1 cup canned pumpkin
1 cup sugar
1 egg
1/2 cup vegetable oil
2 cups A/P flour
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla
2 cups really really good chocolate chips (i like ghirardelli dark, with a few whites or butterscotch tossed in)
1/2 cup chopped walnuts (optional)

combine pumpkin, sugar, veg oil and egg. in separate bowl stir together flour, baking powder, cinnamon and salt. dissolve baking soda with milk and stir in. add flour mixture to pumpkin mixture and mix well.
add vanilla, choc chips and nuts.
drop by spoonful onto greased cookie sheet, bake at 350 for 10 minutes or so until lightly brown and firm.

I make pumpkin banana bread with 1/2 cup pumpkin and 2 bananas mashed, and a cup of yogurt--plus of course flour etc, then add chocolate chips and sprinkle a little powdered sugar if you want on top. I make this for Halloween--chips are spiders, and powdered sugar is spider webs.

I just had a friend tell me she makes Trader Joe's boxed pumpkin bread mix by using a can of pumpkin instead of the eggs and oil it calls for - she said the employees at TJ told her to do this - and it turns out awesome (we were discussing how the TJ box mix tastes just as good as homemade pumpkin bread without all the fuss).

I agree with the poster that said mix it with a spice cake mix (carrot works too) but add about 1/2 c. Apple sauce. Makes 18 super yummy pumpkin muffins!
