Quick & Healthy Ideas for Breakfast

Our 7.5 yo old son eats mostly carbs for breakfast....english muffin w/jelly, bagel w/cream cheese or toaster waffles/french toast w/syrup. There are several days thru the week he tells me I didn't pack him enough lunch so he's burning this breakfast off pretty quick. I'd like to get a bit more protein in there for breakfast but don't have much time to make anything too involved. My husband & I are getting slightly concerned about his weight...he's about 4'2" or so & weighs 65-67 lbs. He does have a bit of a belly...he's stocky & thick, ie: broad shoulders, chest & hands like his dad, but, overall, is not over-weight. He's active thru the day & swims 2 nights a week for 40 minutes. I'm sure, like most boys about this age, he'll hit a growth spurt soon & the weight will be re-distributed. He eats good snacks like cheese, yogurt & apple sauce. The only fruits he'll eat are bananas, melons, & oranges. Just an FYI, we're slowly going organic but not die-hard & I'm trying to buy less chemical-ly, processed foods. Any ideas for quick, filling breakfasts?

Thanks for the great ideas. I made up a batchof the 'egg muffins' that Allison K suggested. Both my boys & I LOVED them. Thanks again!

A co-worker use to make these on the weekend and bring them into work to reheat for breakfast.

Egg cups

Spray a muffin tin with non-stick spray
Line each well with a slice of Canadian bacon
Put a cube of low fat cheese (she would actually use cut up string cheese) in each well. This should help “hold down” the bacon
Fill each bacon cup with beaten egg or one of those egg substitutes

Back in a 350 degree oven until the egg is fully cooked.

You can also add veggies (love spinach with feta.)

I know this response is late, but my kids love this:

take the dough from a crescent roll. Instead of breaking it up into the perforated triangles, separate it into rectangles. Pinch the perforated edges together to the don't come apart. Cut the rectangle in half.

Spray a muffin pan with non stick spray, and put the crescent roll square into it, (looks like a quish..i know I spelled that wrong)...lol

add chopped up onions, bell peppers, cheese and tofu and egg whites or egg beaters...

bake at 350 for 10-15 min until the egg is done. The tofu makes it so creamy...and the protein is perfect to sustain energy.

Also, I think another mom suggested this, Yogurt Parfets. Yougurt - vanilla LOW FAT, granola made with honey, NOT SUGAR...we are trying to avoid the sugar crash...and any fruit you like...my kids like strawberries and blueberries. Peaches, raspberries, blackberries...you name it...it's wonderful.

You can also make lots of protien filles granola snacks..etc etc...check the internet...i like sarasnow.com and allrecipes.com...

also, if your kids really like the waffles, english muffins, etc etc..you can get all of that in whole grain. makes a HUGE difference. White flower is FULL of sugars which cause the sugar crash...which can be a big contributing factor to enery loss. Top the whole grain waffles (or whatever you have) with something else other than syrup and jelly..try fruit in some honey...peanut butter is very good for a protien source...i can honestly say, when I cut white flower and sugar (as much as possible) for our diet...the enrgy level went through the roof!! Also, in the morning, no juice...I know sounds strange...but juice is crammed full of natural sugars, but they cause the same sugar crash...drink lots and lots of milk and water...i guarantee you will see a difference... :)

Give them "School-Aid." That's the name given by Dr. Sears to a morning smoothie. My current recipe is whatever fruits you can find plus yogurt plus protein powder plus flax seed oil. Dr. Sears stressed the flax seed oil. Best to grind up your own flax seeds, apparently, but I use the oil or I'll never do it. You can get it cheap at Trader Joes.

Hi K.,

I basically enjoy the same kinds of breakfast carbs as your son, but I became anemic during pregnancy and needed some fast protein. Here are some things I did:

I bought a little "egg pan" from Bed, bath, and beyond that cooks one fried egg or scrambled egg perfect sized for an english muffin. Instead of cheese or butter, I put some salsa inside to give it a zip. You could get the egg beaters or other premade egg mixtures to save some time.

I also made breakfast rollup burritos with tortillas and deli ham meat, yogurt and granola cups, and hard-boiled eggs (set the timer while you get ready for the day).

Other ideas ~ since he likes melon, would he like prosciutto ham wrapped around a melon slice? It's a classic.
Or how about smoked salmon added to his bagel & cream cheese? Cream cheese is mostly fat - no real nutritional value so maybe he'd trade the cream cheese for peanut butter with banana slices? Would he go for avocado on his english muffin? Or how about almond butter & honey on his english muffin or waffles? Organic superfood antioxidant Berry Radical can be mixed in with the cream cheese or almond butter to make a more nutritious spread. I'd also encourage whole grains. How about quick breakfast burrito easily made on the run in the morning with leftover refried beans & sliced grilled chicken or beef from the previous night's dinner? (Slice it up to use in leftovers before you put it in the fridge that night). Good luck!

I would suggest that you try to introduce some fruit and protein in the morning. Maybe put an egg on the muffin instead of jelly. Add a banana on the side, tell him that you are trying to make his morning meal last longer. Does he like burritos, if so put scrambled eggs and sausage or bacon into the burrito. Cereal and toast are quick and easy, and it sounds like that might be his choice not yours. Do you eat with him? If he sees that you eat the same way it will encourage him to do so as well. There is nothing wrong with his fruit choices, but again if he sees you trying new fruits he will as well.

Hi K.,
Have you tried maybe doing granola with yogurt and sliced bannana's. Its healthy and quick. You can buy it organic or just regular. My son only eight months but my best friends son who's 10 loves it. You can add some whole weat toast too!! Good luck with whatever you do.
