Quick Healthy Breakfast/lunch Ideas for Toddler

I try to come up with new and healthy food for my son (16 months) every now and then. He is now begun trying new dishes I serve him(me so happy), there are some absolute favs of his which I end up making often.Just last week I made Zucchini pancakes for the first time, I loved how easy it is to make, how nutritious and filling and also my son loved it as it's so very tasty. I am looking for more such quick, easy and nutritious recipes. I pack food for him to daycare also(he eats home made food better), so don't want him to get bored of eating food I make regularly. I would also appreciate if you could post link for recipes that worked for you(if possible only, if not I can google :) I am willing to try other cuisines as well as I love trying out new dishes!

Some more info : My son is kinda picky eater. If he gets big chunks of moist food he spits it out. I think he had texture issues as baby, LOT better now but still doesn't eat all foods as easily. He kinda eats same food regularly until he gets tired of it, then moves on to something else.Also he doesn't eat bland food, I need to make sure it's tasty enough for him. He loves pasta, rice , pancakes. Doesn't eat bread, meat etc (spits it out).He ate some fish though. I tried peanut butter sandwich once, he didn't eat it. He loves egg, yogurt, fruits - so these have been my to-go foods most of the time.I have read that many moms have waffles frozen for their toddler, but my son didn't seemt to like waffles last couple times we tried giving that to him at the restaurant.

OK, someone put a recipe on here for "breakfast cookies" it was an oatmeal based cookie, but used mashed banana, oatmeal, craisins and applesauce. you mush it all up, put on greased cookie sheet and bake.
I did this and felt they were still perishiable, so kept them in the fridge and would heat them up in the microwave. . . I just went to my inbox to find recipe and realized I must have printed it and deleted the recipe from inbox. If you want it DM M. and I'll send it to you later tonight when I get home:)

If he likes pancakes and eggs, maybe do scrambled egg wraps? You can keep cooked rice in the fridge, microwave it with a little broth in it to soften it up. Does he eat peas? Rice and peas or beans are a fairly well balanced meal with complimentary proteins. Scrambled eggs and rice with a little soy sauce in a nonstick skillet is a really quick way to make fried rice. Put some microwaved frozen peas and carrots in if he likes them. He might like salted edamame. A lot of people claim to hate tofu, but it's really good if cooked right. You could try firm tofu, cut it into cubes, let the exterior air dry off a few minutes (its packed in water), then panfry the cubes with cooking spray in a nonstick pan. It gets golden and crispy. You can toss it in a sauce, like sweet and sour, with rice. Have you tried the frozen ravioli? Those can be appealing to kids. Can't wait to read some of the suggestions!

My son LOVES yogurt parfaits! I get the vanilla yogurt and mix in granola...loves.it.

This morning he ate a banana and granola bar.

I also have made a batch of pancakes and freeze them with a piece of wax paper between each and then pull a couple out in the morning, zap them in the microwave for about 30 seconds and viola!

Sometimes he has a peanut butter sandwich...good protein for the morning!

One last thing he likes is sliced apples that he can dip in peanut butter. I taught him to dip the apple skin in the peanut butter so it sticks better! :)

You don't have to limit breakfast to just breakfast foods - today was my daughter's first day of Kindergarten (yikes) and she really wanted vegetable soup for lunch... I had some extra left over, and since she didn't finish her cereal, she ate the soup. More veggies for her. I've also given her non-traditional breakfast snacks for her preschool - string cheese, veggie dogs/sausages.
I've gotten my daughter used to mixing veggies with her mac n cheese - peas, corn, and I will add in fresh cheese so it's not so 'processed'.
Your Zucchini Pancakes sound wonderful! I will have to look them up.

Does he like oatmeal? You can make that all different ways (raisins, dried fruit bits, etc.)

Fresh fruit is a GREAT breakfast! Fruit and yogurt.

Will he eat the cottage cheese doubles? My son always loved those.

My 2.5 y/o loves breakfast pita pockets. I just put an egg (actually like half an egg because I don't over stuff the pita), scrambled with whatever vegetables and cheese into a whole wheat pita pocket.
Wheat english muffins with peanut butter/apple butter/Nutella.
Have you tried making the waffles yourself? I make mine (both white and whole wheat) with applesauce and cinnamon, and my girl loves them. The applesauce sweetens it a bit so theres no need for syrup unless you really want it.
As for lunch maybe try stir fry vegetables or chowmein. I usually just cut down the amount of salt and starch (the noodles) so she gets more vegetables.

Im sorry I dont have any recipes for you but I thought it was funny when reading your post because my 20 month daughter is the complete opposite. She is actually a really good eater but she refuses to eat rice, pancakes, french toast, or bread that isnt toasted and crunchy. She also LOVES meat and wont eat fish. She does however LOVE her yogurt and she loves the Motts fruitsation fruit cups. She eats almost all fresh fruit and veggies but only raw - what a silly bean
