This Christmas I am making dinner at my parents in WI, & I was wondering what everyone’s favorite side-dish recipes are.
So far I’m doing your basic mashed potatoes, stuffing, cranberries and green bean casserole. But I was hoping to make at least 1 or 2 (maybe 3) more, but I can’t think of anything new.
So ladies…
What are your favorite holiday side-dish recipes?
Thanks!
Merry Christmas!!
J.

How about glazed carrots? Cook 1 lb baby carrots until tender. Drain. Put back in the pot with 4 tablespoons butter, 1/4 cup maple syrup and 1/4 cup brown sugar. Stir it all together and let it cook for about 20-30 minutes, letting the butter and sugars melt and put a real nice glaze on the carrots. My fmaily LOVES these carrots! I hope you enjoy!

My family LOVES this...I do use more cheddar cheese then it calls for though(about 1/2-1cup more). It takes a little time to make but can be prepared a few days in advance and stored in the fridge until you're ready to bake it. Merry Christmas!!

Zucchini Casserole

8 cups sliced zucchini
1 cup chopped onion
½ cup chicken broth
2 cups cooked rice
1 cup shredded sharp cheddar cheese
1 cup fat free sour cream
.¼ cup Italian breadcrumbs
1 tsp. Salt
¼ tsp. Pepper
2 large eggs slightly beaten
¼ cup grated Parmesan cheese

Pre-heat oven to 350.

Combine first 3 ingredients in large pan. Bring to boil, cover and reduce heat, simmer for 20 minutes. While that simmers combine remaining ingredients, minus the Parmesan cheese, in greased 9x13 pan. Drain zucchini mixture partially, mash. Add to pan mix all ingredients. Sprinkle with Parmesan cheese and bake for 30 minutes. Then broil for a few minutes to brown the top.

Have you ever tried succotash? It uses some standard, traditional ingredients, yet is just different enough to be interesting.

A favorite in our house which is a side dish but tastes like a dessert(even the kids like it) is Sweet potato casserole. I got the recipe from my favorite go-to website for recipes-allrecipes.com. They have a search engine and you can just type in Sweet potato casserole and it's the recipe with pecans and brown sugar and cinammon baked on top of the already mashed potatoes. I like to make appetizers too with holiday meals and they also have some great recipes. Merry Christmas!
