Wow... this site is awesome! What a nice group of moms! I've decided to go with some of the ideas listed. The ones that were most similar included jello and whipped cream! Exactly what I was looking for. I also found a cute idea from BettyCrocker.com My sons theme is Pirates from the Carribean... so heres a picture of the cake I'm making. So much for simple! lol...

Update: I made the pirate cake! Very easy to do. I used pound cake mix from Betty Crocker, very good. I poured the jello-mix into holes and used whipped topping for the frosting, cut up strawberrys and place around edges! BIG HIT!!! everyone loved it! Thanks everyone!

Thanks everyone! I am going to try the Sprite in the cake mix. He loves sprite too. His favorite pop. I will let everyone know how that works.

A girl at work brought in a "Strawberry Pizza" it was really good....

2 rolls of sugar cookie dough
1-2 containers of fruit dip (enough to cover the dough)
cut up strawberries-however many you desire
2 cans strawberry glaze
powdered sugar

Roll the cookie dough onto a large round pizza pan, cover wtih fruit dip mix starwberries and glaze together, spread on top of the dough/dip and sprinkle with powdered sugar before serving!!
So easy and if you want you can always add other fruits!

A really easy and healthy recipe that kids love is a strawberry trifle. All you need is a large glass or plastic bowl (if you don't have a footed trifle dish), an Angel Food cake, a large container of strawberry yogurt, a medium/lg container of Cool Whip, a teaspoon of vanilla and two quarts of strawberries. If you buy a boxed Angel Food cake and make it at home, you will save several dollars from buying one pre-made at the grocery or bakery. This recipe can also be made with pound cake or sponge cake and custard instead of yogurt. The great thing is that you can make it low fat for adults with no real compromise in taste!

First, slice the strawberries into bite-sized pieces, reserving several whole for the top. Fold the vanilla into the Cool Whip to mix thoroughly (this makes it taste extra good, but can be omitted) - you can save dishes by just doing this straight in the container. Cut the angel food cake into three equal rings for the layers. Start at the bottom of the bowl with the bottom layer of cake. Spoon 1/3 of the yogurt over it, then 1/3 of the sliced strawberries, then 1/3 of the Cool Whip. Keep layering in that order. When you get to the last Cool Whip layer, use the back of your spoon to create a pattern and then decorate the top with the whole strawberries.

This always looks very nice and people just love it. My husband says it is extra good on the second day, but it rarely lasts that long! I often substitute whatever fruit flavors are in season (blueberry, raspberry, peach or cherry). Whatever suits your taste and looks good. Enjoy!

This may not be what you are looking for but you can use a simple pound cake (white or chocolate) top it with whipped cream and fresh stawberries.
You can do the same thing with a sponge cake or an Angel food cake. The nice thing about angel food is it can be cut in half and a center layer of whipped cream and stawberries can be put in as well as the top.
You can do the same thing with a regular cake, layering idea, and on the top just put the stawberries around the outside and still put his Happy Birthday in the middle with his name in the jell decorators in whatever color you want and the candles of course.

My mother in law had a great recipe for Strawberry Cake. It's basically a white cake...you can use a mix. Then, use Cool Whip for the icing and place whole strawberries all over it. If you do two layers and stack them, put strawberries between the layers too. Then, you just cover the entire cake with the berries. She used to have a huge strawberry patch, so this cake was a way to a bunch of berries. If some of them are too big, you can cut them in half, but it looks really impressive.

Bake a white cake....after it comes out of the oven while still warm poke holes in the top of the cake with a fork, all over. Take one small box of strawberry jello mix and mix with 1/2 cup of warm water and 1/2 cup cool water and pour over top of cake. Place in fridge. Mix one container of cool whip with one smal container of thawed frozen strawberries and then ice cooled cake with it.

Hmight like this:
Get a cake mix that is pink (I think they have strawberry).
Either color vanilla frosting or get the pink strawberry flavored kind, or use white.
If you make a layer cake, slice fresh strawberries and place between the layers with part of the frosting and also on the top of the cake around the edge and in the middle.
Or, if you make a 9x13 cake, frost and put halved berries on the top.
Since it is for your son, it might be better to make the pink cake and stick with whte frosting and the red berries.
Pink frosting just might be a bit too much for a boy.
Either way it will be yummy.
Happy Birthday!

Hi D.,

This is a family favorite. Buy the rectangle shape of angel food cake. In a 9x12 pan, slice the cake for your bottom layer. Top it with prepared instant vanilla pudding. Slice strawberries to go on top. The last layer is whip cream (not from the can) and decorate with more strawberries. Tastes delicious!

Last year I made a strawberry cake my daughter loved. Its a yellow cake cut in half, vanilla pudding layered on top of center part with strawberry slices on top of that then the rest of the cake with more pudding and strawberries and then some whip cream. Everyone loved it and it's not as sweet as with frosting.

Duncan Hines makes a great strawberry cake mix. You could always just put strawberries on top after icing it.
In fact, it might be really cool to try to spell his name with strawberries, just slice them in half or quarters to make the letters.

My kids favorite cake recipe is Jello Cake. Make 2 round cake pans. Either box cake or from scratch and then when cool use a straw and poke holes in the cakes. Put the first layer on a plate and pour the strawberry Jello (or any jello) on the cake so it drains into the holes then spread with cool whip add second layer and do the same with the jello and spread whole thing with cool whip. Add strawberries as garnish. :) Then freeze for a few hours or place in fridge.

I have a very simple cake recipe and it is easy to do. You take a box of yellow or white cake mix and a can of sprite, mix them together and bake for a little less time than what the cake mix calls for. Test the cake with a toothpick in the center to see when it is done. Mix up a batch of Strawberry or Cherry Jello, and poke holes in the cake with a fork. Pour the Jello into the holes. The icing is just cool whip of any kind and some sliced strawberries. That's it, you can put in the fridge until time to serve.

betty crocker or hines has a strawberry cake mix, i made it for my sons' snack day at school but in brownie form & was asked to make it again the rest of his snack days. it's very easy & you can't mess it up...
1/3 cup evaporated milk
3/4 cup melted butter or margerine
one box cake mix

open the cake mix and pour it into a bowl(DO NOT MAKE IT LIKE IT SAYS ON THE BOX), add the milk & butter and stir until everything is mixed well dump into a greased 13X9X2 baking pan and flatten out with your hand, bake at 350deg for 25-30 min..cool on counter for one hour then cut & eat.it will be very moist.

Try one white cake with whipped cream on top. Slice strawberries and mix with glaze and pour over top. Infortunatly you won't be able to write Happy Birthday on it or my mom used to make a white cake and boil jello. Poke holes in the cake and pour the jello on top, frost at usual.

D.,
My recipe is mostly for Angel food cake but could work for yellow cake mix also.

Angel food cake or yellow cake mix
Fresh strawberries(as many as you like)
1 box strawberry jello mix
bamboo skewer (wooden spoon handle works, too)

Bake cake and cool in refrigerator until cold. Take skewer or handle and poke holes into cake all around it. Cut strawberries into halfs or fourths. Mix jello per box insructions except use cold OJ or apple juice for the other cup of water. Add strawberries, chill jello until thick soup consistancy then take a big spoon or ladel and spoon jello and berries over the cake making sure to fill the holes and cover the cake, if you plan on taking the cake out of the pan and onto a serving plate-make sure to put the jello mixture around all sides of the cake. Place back into refrigerator to chill over night (hours). Take out, cut into pieces add a spoonful of cool whip on top and Ta-Da!!

Hope you like it!!

One of the cake mix brands (which one escapes me at this moment) makes an awesome strawberry mix. My 7 yr. old requested it for his birthday back in October. I took him to the grocery store to pick out what kind of cake he wanted, and that's what he wanted. They also had a strawberry icing to go with it. So I used those, made just your basic cake, wrote Happy Birthday on it, and all that jazz, then cut fresh strawberries to go around the outer edge of the cake. It was a big hit!

I love jello cake made with strawberry jello and then topped with cool whip or whipped cream and strawberries. Someone else left you the same recipe. The only difference in my recipe is to use a large box of jello made with 1 cup boiling water and 1/2 cup cold water. Also you can top it with this yummy recipe....Prepare 1 small package instant vanilla pudding then mix with 1 8oz. container of cool whip. Spread on cake and refrigerate for at least 2 hours.

Maybe this is too simple for what you want, but I just made it this past weekend for my daughters comformation cake.
I used just a box white cake. I needed a little bit bigger cake so I baked two 9 X 13 cakes. I put a layer of cool whip topped with thin slices of fresh strawberries in between the 2 layers and then I used the whipped icing in tub. It was very easy and good.

Always a hit... angel food cake, with cool whip and dice up a bunch of strawberries and mix them with a tiny bit of sugar over night. It will form a sauce and when you are ready to serve... put the cool whip on the cake (bought at your grocer's bakery) and sprinkle with strawberries... EVERYONE loved it on mother's day when I made it. Good luck.

Ok, I saw that you had gotten lots of responses and seemed pretty certain of what you will do. I just thought I would send you this recipe and then you at least have the option of it. If you try it and it's any good, let me know. I haven't tried it but it sounds good.

Barb's Strawberry Whip Cream Cake
1 Duncan Hines yellow cake mix
Whip cream, sweetened (Real whipping cream is best)
Strawberries

Grease and line with wax paper, or grease and flour, 2 (9 in.)cake pans. Bake cake as directed on package, beating well. Cool and cut layers in 2 (Using thread is easiest). Carefully put on wax paper, making 4 layers. Assemble together each layer with whipped cream and (frozen) thawed, drained strawberries, or if strawberries are in season, use sweetened fresh strawberries, drained, over the whipping cream on each layer. Arrange whole berries on top of cake to add beauty.

I know it's too late to help you for his birthday this year - but you might like this...

I have made a cake that my hubby loves

You buy (or make) an angel food cake and slice it horizontally in two or three layers... then mix a container of cool whip and strawberries and frost just the tops of each layer. You COULD add a box of instant vanilla pudding to make the frosting a little thicker.

1 Cake Mix (yellow or lemon)
Vanilla or Lemon Instant Pudding (1 large box or 2 small boxes)
Pineapple (1 large can crushed)
Strawberry or Cherry Pie Filling
Cool Whip (16 oz.) (you can use strawberry flavored Cool Whip if you want and if you can find it)
Pecan Pieces

Follow directions for cake mix, making 2 round cakes. After cakes have cooled, place one cake in the punch bowl. Layer half of the ingredients as listed above. Place the second cake on top of the layered ingredients and layer with remaining ingredients. Refrigerate.

This is better if made up the day before. You would scoop it out with a spoon, so it's certainly not a traditional "cake"! But it's delicious and easy. Maybe you could make a cupcake with some of the cake mix for the candle, then serve everyone scoops of the punchbowl cake.

Ok this is one of my favorite recipes, however it isn't really a cake, but it is soooooo good! You make it on a pizza pan. You take two rolls of sugar cookie dough and spread them out like you are making a home made pizza, and bake according to package directions. After it is baked you spread cream cheese on the top (you can even do strawberry cream cheese) then on top of that you mix the strawberry gel and strawberries (mix this is a bowl first.)Good luck
