Substitute for Eggs?

Normally I wouldn't mess with my cakes however a little boy is coming to my sons party tomorrow and he's allergic to eggs. I forgot to ask if that includes baked goods, but i don't want to chance it. Sooooo what can I use in place of eggs in a cake?

So What Happened?

Thanks for the advice:) I called his mom and she was sooooo great full I was willing to do this because she wasn't going to bring him at first because he feels left out at parties because he can't enjoy what the others do. I remembered my ex SILs son is allergic to eggs and she said applesauce was the best way. Soooo wish me luck in baking my FIRST eggless cake:D

I use 1/4 cup of applesauce plus 1 tsp. baking powder in cakes all the time. I've never had an issue with cakes coming out tasty. I've also used a can of soda as well and that also works as another mentioned.

While others have said you shouldn't have to cater to the little one with the allergy I do commend you on trying to do so. Just because we don't have to doesn't mean we shouldn't at least make an effort.

I am egg intolerant, and I agree that the Ener-G is too much. Applesauce is good. Please continue to let kindness be your guide. I have a daughter with severe nut allergies and I bring a nut free item wherever we go, but it would knock my socks off if someone planned a treat she could enjoy with everyone else.

You should first call his mom and ask if she is providing a separate cupcake for him. I always send my daughter to birthday parties with her own allergen-free cupcake, because I don't want to burden the host with making special food.

If you want to make an egg-free cake you can just add a can of soda (I use club soda) to cake mix. Don't add any other ingredients. Just the soda. This works best for white cake mix. You can also buy an egg replacer made by Ener-G. Whole Foods sells this in their baking aisle. It's fairly expensive, and you'll be stuck with a huge box of this stuff that you never use.

I've used both applesauce or extra oil and it works out just fine for me. I make a vegan cake that just uses a whole bunch of oil instead of any other fat and it's really tasty!

I also agree that is is very kind of you to try and accommodate that boy. I'm sure he's used to having a special snack but honestly, if he can have the same thing as everyone else and feel included then kudos to you!!

I loved all the answers!! I think it is great that you are doing this for one of you kids friends. My son is diabetic and can't have a lot of the things kids eat at parties, so he feels left out. I always bring him something, but to have what everyone else is having is a very special treat. So from one of the moms with a child with food issues, THANK YOU!!!!

First, I think it's common sense to accomodate the child that has an allergy, not simply a kind act. So, thank you for using your common sense. Second I would like to know how your applesauce cake turns out - I have subbed it for oil, but not eggs - I am hoping your party is a success!

Regarding the nut allergy - and any other allergy - in my home they would be accomodated. I too have an "odd" allergy and it is difficult to be at a party or gathering when you can not eat a single item there, I usually eat in advance and pass on the food.

I don't expect people to provide special treats for my GF child at their parties, and you shouldn't be expected to make a cake without eggs. His own mother ought to send something with him, just like I always bring something special for MY child. You've illustrated why this is very easily...you are unsure if someone who is allergic to eggs can eat them if they are cooked.

The answer would be no, first...if that were the case, we wouldn't have a problem, because I don't know too many children eating raw eggs. Not trying to be snotty, either, but that's just it...before I had a child with special food requirements, I was totally clueless too because I really didn't NEED to know. ;)

You can find egg substitutes in health food stores or in the health section at large chain retailers, but as Rosecity mentioned it's very expensive...and you'll use very little.

The soda idea is interesting...if it works, then great!

But I would still call his mom and ask, because perhaps she intends to send him something. I always do...yup, I show up at people's weddings carrying a piece of my own cake for my kiddo. ;)

It's probably too late for this, but for the future, here is what we found to be the best egg replacer when we bake:

1.5 TBSP of water
1.5 TBSP of oil
1 tsp of baking powder

Mix the three ingredients together and then add to the recipe when you would normally put in the egg. Double it for two eggs. It doesn't work great for recipes that call for three or more eggs.

You can also use flax seed as a substitute. You mix 3 Tbs water with 1 Tbs flax, microwave 30 seconds or so, and it will thicken up very much like an egg white.I have done this with baking many times when I have been out of eggs.

It is nice to omit the eggs. However, that being said I think the parent is responsible to provide food for her child. I think it is very sad that this mother will not provide a replacement for her kid. She feels its easier to keep him home!

Are there any other kids who have allergies coming to the party? That can create hard feelings. You accommodate one child, not the other.
