I'm looking for a yummy eggless cake recipe to make for my son's 1st birthday. I have not given him eggs yet and don't want to test that out at his birthday.

I'd love to get recommendations of cakes people actually think are yummy... and hopefully not too complicated to make.

I was thinking maybe even banana bread as a cake or a carrot cake.

A box cake and a can of soda. If you use a light colored cake, use a light colored soda. If it is a dark cake use a dark soda. Then cook at the directions on the box.

Ingredients:
1 box Spice Cake Mix
15 oz. can of pumpkin
1/2 cup water
1/2 cup apple sauce
follow instructions on box for baking. It comes out a bit more dense than a regular cake, but it is very tasty! Both my boys love it!!

My family does "Crazy Cake". I found this online version (easier to copy and paste for you). All the ingredients and directions are almost identical (mine just calls for more salt). Its the best! We just use store bought chocolate frosting on top.

You can use 2 tbsp of white vinegar for each egg in any cake/bread recipe.

I've substituted apple sauce for both eggs and oil. (Not both in the same cake) I upped the baking soda or baking powder a touch to make up for the egg. This takes practice, so, try ahead of time. Or just buy an Angel Food Cake and serve it with whipped cream and berries!! You can buy the little cups and make strawberry shortcake tonight as a dry run.

You can sub 1 T soy flour (in the specialty flour section of the baking aisle) + 1 T water for 1 egg in most recipes.

I used to room with a vegan and we'd use an egg substitute powder that we bought in the health food section of the local grocery store. I never noticed any difference substituting that for the eggs in a baking recipe.

I was in the same boat on the egg thing for my DD's birthday cake and I attempted this spice cake recipe that I found online and yuck.... Maybe I missed something but it didnt rise and it was heavy and doughy. I brought this up to my Mom and she saved the day with a Tomato soup cake. I know it sounds disgusting but it was so good. Really moist and super yummy. It is basically just a spice cake and the tomato soup is to keep the cake moist. I unfortunately dont have the recipe to give you but Im sure you can find one online. Good Luck

Crazy Cake is what we call Wacky Cake. It works really well!
If you want carrot cake, this one is really good, too. Personally, when I make it, I leave out the raisins (cause I don't like them ;) ) and add some coconut.
If you don't need it to be vegan, a standard cream cheese icing is ideal.

OLD - FASHIONED CARROT CAKE
1-1/2 CUPS sugar
1 cup raisins
1/2teaspoon cloves
3 tablespoons shortening
2 teaspoons baking soda
1 cup chopped nuts
1 cup shredded raw carrots
1 tsp cinnamon
1 tsp nutmeg
1-1/2 cups water
2 cups flour
1/4 tsp salt
conf. sugar (opt)
Combine sugar, carrots; raisins, spices, water and shortening. Boil 5 minutes and cool. Stir together flour, soda, and salt. Stir into carrot mixture with nuts. Blend well. Spread in a greased and floured 12 x 8 inch pan. Bake in a preheated 325 oven for about 1 hour until firm. Cool in pan. Sprinkle with confectioners’ sugar or make an orange frosting. Cut into 16 squares.
Orange frosting: Cream together 1/4 cup soft margarine, 2 cups conf. sugar, and 3 tbsp. orange juice, adding more sugar if necessary. Lemon juice, almond or vanilla flavoring can be substituted.

Check out foodallergymama.com. It is a blog by a mom of five kids who loves to bake and has a child with dairy, egg and peanut allergies. She has lots of great recipes on her blog with comments from people who have tried them. I have used a few of them with great success.

using Ener-G you may need to compensate with an extra tablespoon of water or soy milk. You can get this at a health food store or big grocery stores.

Bananas and applesauce add the perfect amount of thick moisture, like eggs, but they won't help your dishes rise or turn out light and fluffy, so be sure the recipe you are using includes a bit of baking powder or baking soda to help it rise if needed.

Either one you can use to make any cake. Good luck and happy early birthday to your baby!☺

My daughter has an egg and dairy allergy. We often use the Cherrybrook Kitchen baking mixes for cakes, cupcakes, cookies, etc. They taste great (no one will know what is missing, really!), and they are quick to make. I can find them at Whole Foods and sometimes at Bed Bath and Beyond (at least in Manhattan).

I cook for vegans all the time, im a vegetarian and its so easy to go eggless i just do it anyway., there are a few different things you can try, per egg you can use

1 tbsp water with 1 tbsp cornstarch
1tbsp flaxseed meal wet with water
1 tbsp yogurt
1 tbsp vegan mayonaisse
1 tbsp silken tofu

my favorite is yogurt for a fluffy cake, cornstarch for cheesecake

*edited, ive read the ingredients on most angel food cakes they are egg white cities most of the time, anywhere from 8 to 10 egg whites in one cake

just substitute the egg in a recipe for 1 tablespoon ground flax seed (health food store, Whole Foods). 2 eggs = 2T

You don't need to do an eggless cake. If you go to a health food store, there is a product called egg replacer. It's veggie based & doesn't have a take. You'll never know the cake doesn't have eggs.
Had some luck with apple sauce too!
