I need a recipe for a cake with NO EGGS OR MILK, my baby boy will turn 1 year old next month, but he has allergy to cow protein and eggs, I want him to have his birthday cake and eat it! but I'm no sure if I can find something with out this ingridients, please help me.

There is a product called Egg Replacer that you can find at whole foods and Henry's and other health food stores. Great for baking and making things that require eggs... replace dairy with either almond, rice, or soy milk, or even coconut milk.

Soy milk can be substituted milk in most recipes. Also unsweetened applesauce can be used instead of eggs. With this information you can use most recipes. Good luck!

Hi L.,
I had that same predicament a year ago with my DD's birthday. I'm not a baker and I didn't have time to experiment, so I went to my local health food store and got a cake mix from cherrybrook kitchen they specialize in baking mixes for people with allergies,(they also make a frosting mix and cookie mix). Nobody tasted the diference and my baby had her cake and ate it too ;-).

I have a fantastic chocolate cake & frosting recipe that I have used for my son the last two years. Everyone at his party raves about it and no one notices or cares that it is dairy and egg free. I don't have it in a format that I can copy and paste, unfortunately. Can you send me your email via private message and I'll email it to you? It's really easy to make, works well as cake or cupcakes, and it is delicious.

It comes from the cookbook "What to Eat," which is a cookbook entirely full of dairy, egg and nut free recipes. I love it!

"AUNT MARTHA'S" NO EGG, NO MILK CAKE 

2 c. sugar
3 c. flour (sift after measuring)
1 tsp. salt
2 tsp. soda
1/2 c. cocoa
3/4 c. salad oil
2 tsp. vanilla
2 c. cold water

Sift all dry ingredients together. Add all liquids; mix well.
Bake 35 minutes in a 350 degree oven.

NO EGG AND NO MILK CAKE 

3 c. flour
1/2 tsp. baking soda
2 tbsp. vinegar
2 c. water
2 c. sugar
5 tbsp. Hershey cocoa
3/4 c. oil
2 tbsp. vanilla

Beat together until smooth. Bake in well greased layer pans and frost with favorite icing. Bake at 350 degrees until toothpick comes out clean.

NO MILK, NO EGG CHOCOLATE CAKE 

1 1/2 c. flour
1 c. sugar
1 tsp. baking soda
3 tbsp. cocoa
1 tsp. salt
5 tbsp. oil
1 tsp. vanilla
1 tsp. vinegar
1 c. cold water

Mix dry ingredients together in a large bowl. Make 3 depressions in mixture.
Mix together oil, vanilla and vinegar. Pour into each depression of dry mixture. Pour 1 cup water over mixture. Mix until blended. Bake at 350 degrees for 30 minutes. Makes 1 layer.

CAKE WITHOUT EGGS, MILK, OR BUTTER
 

5 tbsp. shortening
2 1/2 c. hot water
2 1/2 c. raisins
2 1/2 tsp. salt
2 1/2 tsp. cinnamon
2 1/2 tsp. cloves
2 1/2 tsp. soda

2 1/2 c. self-rising flour
2 1/2 c. brown sugar

1. Combine all ingredients except flour and sugar.
2. Bring to boil, let boil 5 minutes. Let mixture cool.
3. Add flour and sugar, mix well. Pour into greased 9 x 13 pie pan.
4. Bake at 350 degrees for 30 to 35 minutes or until done (test with toothpick).

FROSTING:

While cake is cooking, boil lightly 1 stick butter, 2 tablespoons cocoa, 6 tablespoons milk. Remove from heat and add 1 box confectioners sugar, 1 teaspoon vanilla, 1 cup chopped nuts. Beat well. Pour over hot cake.

Hi L.,

Good for you for wanting to make a cake. You have it easy with just no eggs or milk. I would never substitute soy for the dairy as soy is even worse in many ways: genetically modified, mimics estrogen (not a good thing for our little boys OR girls), closely resembles dairy and you could create another allergan and soy lethecin is in just about everything.

Lots of good recipes out there for you and the site that I use is by families of multiple allergies including wheat - go to www.tacanow.org to the GF-CF Diet section. There will recipes there. You could easily substitute the eggs as several have already suggested. We use Egg Replacer. Applesauce is another with some arrowroot added to it. Flaxseed. For the milk, Rice Milk is easy and get the vanilla flavored one for your cake. Almond and Hemp milk are more nutritious though.

Stay away from the dyes though if you can and find natural foods to make the colors.

Vegan Chocolate Cake With Creamy Chocolate Frosting

(Preparation 3 hours, 1 hour active)

For the cake:

1 2/3 cups natural large-crystal cane sugar (testers preferred Sugar in the Raw)

2 1/2 cups all-purpose flour

1/2 cup oat flour

2 teaspoons baking soda

3/4 teaspoon salt

I cup Dutch-processed cocoa (testers preferred Scharffen Berger Natural Cocoa Powder)

I cup natural cocoa

1 1/2 ounces unsweetened chocolate, chopped

1 cup hot brewed coffee

1 cup light coconut milk

2 tablespoons cider or white wine vinegar

1 1/2 teaspoons vanilla extract

3/4 cup vegan butter substitute (testers used Spectrum Spread)

For the frosting:

Two 10-ounce packages vegan or other semisweet chocolate chips (testers used Tropical Source)

1/2 cup hot brewed coffee

4 tablespoons boiling water

1/2 cup light coconut milk

4 ounces silken tofu

To make the cake:

Adjust oven rack to middle position and heat oven to 350 F. Spray two 9-inch round cake pans with nonstick cooking spray; set aside.

Process sugar in a food processor to a fine powder, 30 to 40 seconds. Sift sugar, flours, baking soda and salt into a large bowl, then whisk to combine.

Combine cocoas and chocolate in a large bowl and cover with hot coffee; whisk until smooth.

Combine coconut milk, vinegar and vanilla in large measuring cup. Place vegan butter substitute in a medium bowl. Add coconut milk mixture in two additions, whisking until smooth after each.

Add vegan butter-coconut milk mixture to the chocolate mixture and whisk to combine, then add this mixture to dry ingredients and fold gently with rubber spatula until just incorporated and no streaks of flour remain.

Divide batter evenly between cake pans and bake until toothpick inserted in center comes out clean, 20 to 25 minutes, switching position of and rotating pans after 12 minutes. Cool cakes in pans on wire rack to room temperature, about 2 hours.

To make the frosting:

Place chocolate chips in a medium bowl set over a saucepan of barely simmering water. Pour hot coffee and boiling water over chips, then whisk until smooth. Whisk in coconut milk until incorporated.

Process chocolate mixture and tofu in food processor until smooth and combined, 10 to 15 seconds, scraping down bowl once or twice.

Transfer the mixture to a medium bowl and cover with plastic wrap. Refrigerate until cool and texture resembles firm cream cheese, 1 to 1 1/2 hours. (If mixture has chilled for longer and is very stiff, let stand at room temperature for 1 hour.)

Transfer cooled chocolate mixture to the bowl of standing mixer fitted with whisk attachment. Whip mixture at high speed until fluffy, mousse-like, and the mixture forms medium stiff peaks, 1 to 1 1/2 minutes.

To assemble, invert cakes from their pans. Spread a dab of frosting in center of a cardboard round cut slightly larger than a cake. Place one cake, centered, on the cardboard round. The frosting helps hold it in place.

Using an icing spatula, spread about 1 cup frosting evenly onto the top of the first cake. Place the second cake on top of frosted bottom layer and spread about 1 cup frosting on top. Cover sides of cake with remaining frosting.

I just saw this on Rachael Ray. It was a chocolate cake and they added a 16 oz. can of pumpkin. That's it, no eggs, oil or water, just the pumpkin. Worth a shot!

I have the same problem - my son is allergic to everything. Not sure if you have a Whole Foods near you, but they sell the best Gluten Free cake & muffin mix. In place of the eggs, I use 2 tbsp unsweetened applesauce and sometimes add blueberries. For his 1st birthday, I made cupcakes and put candles in them. It's fantastic -- even my non-allergic friends ask for the cake/muffins and I'm the worst cook in the world. Luck to you & happy birthday to your sweet pumpkin!

I, too, tried the Wacky Cake for my son's first birthday (he too is allergic to milk protein and eggs, among other things) and it turned out great! I made them as mini-muffins so the little kids can have their own mini-cakes. I used store-bought cream cheese frosting (which, surprisingly, has NO dairy, although it is laden with preservatives, so not really my first choice of frosting) and it tasted just like regular cake.

Also, even if you don't have to put eggs/milk in store-bought cake mixes, the mix itself contains milk, so not really a good choice for your baby.

You can always use substitues with regular recipes, too (I get these from Whole Foods), like using an egg replacer (made from soy) for eggs, and soy or hemp milk for regular cow's milk.

I have a great one - it's my Mother-in-laws recipe

1) 3c. flour 6) 1/2 c. melted butter or margarine.
2) 2c. sugar 7) 2c. water
3) 2tsp. baking soda 8) 2tsp. vanilla
4) 1tsp. salt 9) 2tsp. vinegar
5) 6T. cocoa

Mix together first 5 ingredients. Add rest of ingredients. Bake at 350 degrees for 20- 25 min. Usually takes the longer time for me. test with a toothpick.

We call this the "Can't F it up Cake"

3 cups flour
1 2/3 cup sugar
1/2 cup cocoa powder
2 tsp baking soda
1 tsp salt

Sift together 3 times.

Make a well in the center of the dry ingredients and pour in:
3/4 cup vegitable oil (do not use cannolla - it makes it taste funny) PLUS 2 tsp white vinegar PLUS 1 tsp. vanilla
Pour two cups of warm water over all and blend with a fork but do not beat. Pour into greased and floured pan and bake at 350 degrees for 30-35 min. or until it tests done.

This cake is so easy. We enjoy it with creamcheese frosting, but I have served it with just powdered sugar and fruit ontop and it was a hit! Good Luck, L.

Ok this is gonna sound strange but I just did this for my sons 2nd birthday and nobody could tell a difference. You take a box cake (I would double check ingredients to make sure it doesnt have anything in it your son is allergic to) and instead of adding the eggs and things it tells you to. Mix it with diet soda, it looks funny when your mixing it at first but you cant taste a difference. Everybody at my sons party loved it and had no idea that it was made a little "unconventionally". Wacky cake is really easy, and very good and moist. ;D

3 C flour
1 tsp. salt
6 tbsp. cocoa
2 C warm water
12 tbsp. oil
2 C sugar
2 tsp. soda
2 tbsp. vineger

Bake about 25 minutes at 350 degrees. Add nuts, raisins, or midget marshmallows before baking if desired.

ANY store bought cake mix can be baked without eggs or milk. Skip the eggs and use any liquid for the milk - Seven Up is really fun to use!

I live in Vegas and we have a really good Vegi-vegan cafe here that does specialty cakes. I thought they would be terrible but it turned out awesome. I thought I was getting the eggs butter and everything cake but they gave me vegan. I couldn't tell the difference. I'd check the phone book or call the whole foods. We also have a section in our Smiths that has vegan cakes.

Dark Chocolate Cake/Cupcakes
1 cu unbleached flour
1/4 cup cocoa powder
3 TB black cocoa powder
1 tsp baing powder
1/2 tsp baking soda
1/4 tsp salt
1 cup plain rice or soy milk
1/4 cup canola oil
1/2 cup maple syrup (the pure, real maple syrup not pancake syrup)
1/4 cup sugar
1 tsp apple cider vinegar
1 tsp vanilla extract

preheat oven to 350. sift dry ingredients except sugar into bowl. mix wet ingredients plus sugar with hand mixer for 2 minuste. add dry to wet in 2 batches, mixing as you go. beat 1 minute more.
pour into lined cupcake pan or greased cake pan. bake for 22-30 minutes (test w/toothpick.) transfer to cooling rack.

My son has those allergies too and thankfully he just has grown out of his allergies to wheat and nuts. The wheat made it tough! Anyway, you can take your favorite cake recipe and make the following substitutions. I have found that the ground flax seed works best regarding rising than the other things in place of eggs. Make a trial run first just to see what you like, that is always a good idea.

Replace cow's milk with soy milk (soy milk has more protein than rice milk and will work better)

Replace the eggs with any of the choices below:

One egg to:

one banana

OR

1 1/2 tablespoons ground flax seed mixed with 3 tablespoons warm water (allow to set for about 5 minutes)

You can use the margarine Nucoa in place of butter too, it is an inexpensive margarine that has no cow's protein in it. Most margarines do have some kind of cow protein in them, fyi.

Hello L.. I don't have the recipe, but I remember my grandpa and I making what was called Wacky Cake. It was chocolate, but I don't remember adding very many ingredients to it, let alone milk or eggs. Of course, this was about 25 years ago, so I could be mistaken. Try Googling the recipe, it should be available somewhere. It was some good stuff!!! Good luck to you :)

In almost every recipe that calls for eggs, you can substitute 1/4 cup of applesauce. I would try apple juice instead of milk and see how it works.

The no dairy thing is relatively easy. My son is allergic to both dairy and soy. Duncan Heins Swiss Chocolate and Devil's Food mixes are both dairy and soy free. I'm not sure about the eggs because we don't avoid those... but if the mix itself doesn't have eggs in it, you can buy egg replacer at whole foods. It is a white powder. It isn't fantastic but will do. You can also google egg substitute - I think you can find the recipe online. You can substitute applesauce for eggs in some recipes. In my experience, if you substitute the eggs, you will get a funky texture but it will taste okay (my baby who is now 3 is the one allergic to dairy and soy but when he was little he was also intolerant to eggs. It has been almost 2 years since I've had to worry about eggs so I've forgotten a lot of that).

As far as recipes go, you can use plain rice milk in place of cow's milk in any baked good. Pancakes, muffins, etc... all turn out fine with rice milk. Some recipes you can also just substitute water for the milk. Bisquick pancakes turn out fine if you use water instead of milk.

One thing, if he's really sensitive, you may want to make the cake from scratch. With commercial mixes there is always a chance for cross contamination because they make multiple things on the same equipment. If your babe is sensitive, you can either make a cake from scratch so you know EXACTLY what is in it, or you can look for a mix at Whole Foods. It will tell you right on the box if the company using manufacturing processes that prevent cross contamination.

You didn't ask but Whole Foods has coconut milk yogurt and ice cream. Both are dairy and soy fee. The brand is "So Delicious" - make sure you get the ones that say "coconut milk" because they also make dairy and soy versions. The yogurt and ice cream are very, very good.

Here is a recipe for chocolate cake.... I have made it quite a few times and it is really good.

2 cups sugar
3 cups flour
2 cups water
2/3 cup oil
6 tablespoons cocoa
2 teaspoons baking soda
2 teaspoons vanilla
1 teaspoon salt
2 teaspoons vinegar
mix well, bake 30 minutes at 375 degrees

Use ground flaxseed to replace the eggs - the recipe is on the bag - very easy and you can't tell!

As for milk, maybe just buy a boxed cake from Henry's or the likes, I don't think you have to add milk to these? I made a gluten free/dairy free (no milk/eggs) cake from there a few times and it was very good. If you do have to add milk, maybe coconut milk?

Don't know if you have the "What to Expect the First Year" book, but they have a bunch of recipes in there, including one that is Baby's First Cake. That has no milk or eggs. I actually made the First Birthday Cake recipe (a carrot cake, it does have eggs) in there because I didn't want my son to have a lot of sugar (it does have sugar, but it's all from fruit), and it was pretty good. I won't type out the recipe, but you may want to see if your library has it, or definitely a bookstore will. It looks like it has other recipes without eggs and milk as well.

Search online for a chocolate cake recipe called "3 hole cake" you'll find tons of them because it's very traditional and old, long before anyone knew about vegan! It's delicious! My vegan nanny loved it.

duncan hines has no milk or milk protein in it... I'm not sure about eggs. I know you're supposed to add eggs, but you could always sub some applesauce.

besides that, check out vegan cookbooks for no-dairy, no-egg recipes. There are some amazing things there!
