Tofu Recipes and Preperation

My doctor has suggested that I add tofu to my daughters diet for extra protien. I have never cooked with it and was wondering if any of you have any recipes or great ways to prepare tofu so my daughter will eat it. Thank you.

I'm not sure how a 1 1/2 will feel about the recipes in this book but most of the recipes I've made (pre-baby) were terrific!

This Can't Be Tofu!: 75 Recipes to Cook Something You Never Thought You Would--and Love Every Bite by Deborah Madison

Try to see if you can get it used or at the library first before investing $ that might not be worth it.

My other tip for tofu - if the recipe has a sauce or marinate, do let the tofu marinade for at least 10-15 min (it really does take on the flavors that it's cooked/marinated it). Then pan fry it. The crispy texture on the outside and the soft texture on the inside makes a big difference than just stir-frying.

You could consider beans too as a protein source. It's a lot cheaper and less processed. Nutritionists say to eat it with grains to make it a "complete protein" but I don't think the grains even have to be in the same meal. (And I read somewhere about the idea of "complete protein" being an outdated idea, but I don't know anything more about that.) The most creative thing I've seen about cooking with beans is using ground up black beans in brownies to substitute for...something...I don't remember.

Can you make your own tofu? Today's modern tofu is made from genetically modified soy and not fermented. Non fermented soy can be very taxing on the body. I would highly suggest doing research on it, its potential allergenic symptoms and its estrogen mimicing qualities:

Slice it and dip it into egg then cornmeal. Saute it in butter and serve with soy sauce. Mmmmm, good! You could put it in stir fry too, think about what you would do with chicken and use the tofu instead; although it does fall apart pretty easy.

I add the soft tofu into smoothies or puddings or yogurts...no one in my family can even tell.
