Cut off the ends, roast it on a cookie sheet with olive oil, chopped garlic, lemon zest, and a squeeze of lemon juice, salt and pepper, in the oven at 425 for about 7 minutes.

I have been asked to make a vegetable for Easter dinner so I'd love to hear some of your favorite recipes! I usually just make plain, steamed vegetables but am hoping to make something different yet easy!

How About Fresh Asparagas and Mushrooms. It's easy, pretty, and looks elegant on an obling white platter
I coast Aspragas with garlic and Olive Oil with Sea Salt and fresh cracked black pepper. Roast in the oven. After about 10 minutes, I shake the pan to roll them around for even roasting, then I toss fresh sliced mushrooms in melted butter, sea salt and pepper and pour over the top. Finish roasting until all is still al dente, but softened. You will be reheating at dinner, so don't overcook.
My hubby makes a yellow squash and zucchini mixture that even the kiddos like! He merely cubes them, coates them in olive oil, Italian Dressing, and bread crumbs and bakes them on a cookie sheet at 350 until done! Usually about 30 minutes?? That's a guess on the time, so I would watch them closely to make sure they don't over cook. (He's the better cook of the two of us) lol
Mine isn't healthy...at ALL but it is delicious!
Steamed Green Beans w/rendered Bacon!
Easy as can be...
Steam fresh green beans, while they are steaming dice up a couple slices of bacon and when its fully cooked and green beans are done poor bacon and bacon fat over green beans and salt. So Yummy!
I recently had a great mixed veggies dish that was so good and different. The julienne cut different veggies and quickly steamed them. I think the reason they seemed so good is because of the different presentation. The veggies I can remember are carrots, different colors of peppers, onion, sugar snap peas, mushrooms. They were barely cooked, still having some crunch to them. The slices were about 1/4" or less, very narrow. They looked like very small sticks about the size of thin spaghetti.
I really like broccoli and asparagus cooked with garlic and lemon. They have little specks of chopped garlic all over them. I'm not sure how they do that. I think it's steamed and doesn't have oil or butter on them, tho I think either would be delicious.
I am making Sweet & Sour Green Beans for our family Easter dinner --- because it is soooo easy and is BETTER if prepared ahead of time.
For a family of 4: (I'm doubling mine and taking in a crock pot)
3 strips of bacon, cooked to crisp (OPTIONAL --- I usually don't use it)
1 small onion, diced finely or 2/3 cup of hydrated minced onion
1 TBSP flour
1/3 cup sugar
2 TBSP cider vinegar
1 tsp. yellow mustard (from the bottle)
1 tsp. salt
pepper to taste
2 regular cans of green beans, SAVE 1/2 cup green bean juice (I like french cut green beans, but my in-laws like regular cut).
1A (if using bacon). Crisp up bacon in deep skillet and put in a ziploc bag to be adde right before serving. Use grease to cook onions.
1B (not using bacon). Saute onions until GOLDEN in deep skillet using 1-2 tbsp olive oil or butter.
2. Add flour and salt and stir until smooth and golden (about a minute)
3. Add all liquids (GB juice, vinegar, mustard) and stir
4. Add sugar and stir (will turn mixture to clear) over medium heat until thickened and smooth.
5. Add green beans and pepper to taste and heat through.
Either serve right away, or put in a container and refrigerate. If heating the next day, you can warm in sauce pan, microwave, or put in crock pot on low for about an hour or so.
I will probably heat mine up in my microwave and then put in the crockpot to travel with. Then put on warm/low while it sits on the table.
Doesn't everyone have carrots on Easter? Lol! I like corn casserole. I don't have the recipe handy but you can google it. Its basically can of whole corn and a can of creamed corn and jiffy cornbread mix (I think) and some other things. You put in a 9x13 and bake. Everyone loves it. Good luck!
Steam green beans, then mix butter & slivered almonds and a little lemon juice. Very, very good just like that!
Roasted vegetables are divine! for a quick carrot dish, just steam them in a pan of water till tender. drizzle with honey and ground ginger. mix while still warm to coat the carrots with honey.
on a side note, please make the dish minus bacon/meat. odds are, there is a vegetarian who may depend on a limited amount of dishes such as a vegetable to fill up while the rest of the people have ham. we don't like to live on salads and rolls. okay off of the soap box now.
