i LOVE spaghetti with a little brown sugar, and my husband's home made cookies...and they don't harden up after a few days..they stay nice and soft!

Ahhhh...Baked Potato Soup.....
It's basically a creamed potato soup base with toppings you would put on a baked potato.
*peel and cut potatoes
*boil until tender
*drain completely
*add 1/2 cup margerine and 3-4 cups milk
*blend with a hand held mixer, adding milk until you've reached your desired consistency
*serve with shredded cheese, chopped bacon, onion greens & sour cream

My favorite "mostly" homemade recipe is goulash. My DH and DS (20 months) both love it! I make it all the time, its very easy and simple.

In a large skillet pan add the following:

1 lb of ground beef or sausage
1/2 chopped onion
1 green pepper chopped
*optional items: zuchinni, carrots, celery........
Cook til meat is brown and vegetables soft

Boil 1 box of pasta (I prefer shells or rotini)
Drain pasta and put back into pan
Add meat mixture
Add one jar of pre-made spaghetti sauce (I like vegetable garden Ragu or Prego)

Stir very well and put shredded cheese on top, heat til cheese is melted
Serve with garlic bread and salad.

Fried chicken! I've learned to make a pretty healthy version since I'm getting old and having to watch cholesterol and bp stuff these days.
Get the skinless tenders or skinless breasts or skinless thighs, soak them in buttermilk (you can use regular milk if you dont have anything else you would use buttermilk for... however it makes good pancakes), take the milk soaked chicken and season it with season salt and pepper. Put whole wheat flour in a plastic bag with a little more salt and plenty of pepper, shake your chicken up.
I fry mine in evoo, but grape seed oil is good for frying too and can take a higher temp without smoking better than olive. The wheat flour makes a really good crust on the chicken and the chicken will be tender and juicy from the milk soak. Of course we always have mashed potatoes and peas or corn with fried chick.

Homemade chicken nuggets or strips. I cook mine in the oven or in my electric fry pan with a little butter. Cut chicken breasts in chunks for nuggets, or long ways for strips. The next step is a very messy process. In 3 different bowls - one flour, one egg mixed, last bread crumbs. Coat chicken in flour, then egg, then bread crumbs, then in electric fry pan or cookie sheet if cooking in oven. Cook until no longer pink. Good luck

chicken and dumplings----

2 cans of biscuits regular
1 large low sodium can of cream of chicken
1 large breast frozen
5 thighs with skin and bones frozen
1 large carrot or 5 baby carrots
1 med onion cut in half
lo/med boil everything with your fav spices until chicken is done. pull chicken from your stock you just made. and strain your stock with a fine/medium strainer. set aside, remove the skin and bones from chicken and chop into nice bite size chunks add back to pot.
Add your cream of chicken add some of the stock bring to a low boil (be carful it will burn if you go too high) add stock until it gets to your desired thinkness add your biscuits in little pieces ( just rip pieces from each biscuit they will plump up) boil for about 12-15 mins (also the stock will thicken with the added biscuits.) enjoy.

when you say "home made" I think comfort food. These aren't all that healthy, since I use some canned ingrediants, but they are semi-homemade comfort foods that everybody loves.

chicken spaghetti - made with whole wheat noodles, diced hatch green chilis, chicken, cream of chicken soup, and cream cheese. it's supposed to be green - no tomato products please. It's like grown up tuna noodle casserole.

chicken pot pie. cooked cut up chicken, a can of veg-all drained and a can of cream of celery soup. pour in a pie pan. mix bisquick and water and pour on top. Spread it our and bake.

chicken parm - i bread boneless chicken breasts with a mixture of italian bread crumbs, parmesan cheese, and a touch of flour and pan fry for a couple minutes just to get crisp, then put in the oven to bake. Just before it is done, ladel a big spoon of spaghetti sauce over it and top with a thick slice of mozzarella cheese. Serve with spaghetti noodles and salad.

Turkey Chili (My kids love it)
1 lb of ground turkey
One White Onion Diced
1 TSP of Salt
1/2 TSP of Black Pepper
2 cans of Diced Tomotoes
1 can of Chili Beans (Mild)
1 can of Kidney Beans - Drained
One packet of Chili seasoning

Shredded Cheese to top

I cook Martha White Sweet Yellow Corn bread with it

One of my favorites to make is kraft whole wheat mac and cheese. I add a can of tuna and either corn or peas to it. A one bowl meal. My 3 yr old loves it. (and so does my husband)

I think of comfort foods. My favorite is meatloaf and mashed potatoes. Not only do I love but also reminds me of sitting around table with grandparents.
