We like to make shepherds pie and put the leftover stuffing on top instead of potatoes. My husband and boys like the cranberry sauce in it too.

I need some good suggestions for Thanksgiving left overs. I usually have Turkey, Mashed potatoes, stuffing, green beans and cranberry sauce left over. I always just reheat most of it and it it that way, but this year I would like to try something new and delicious.

I always take all the meat of the turkey and put it into bags. We have left offers like you describe on Friday. The left over meat from that is divided into a couple bags and labeled soup, casserole, salad etc. I make turkey noodle soup, turkey and rice casserole, turkey enchiladas, turkey carbonara, turkey stir fry. Pretty much anything you make with chicken you can make with Turkey.
Turkey-a-la-King is my favourite for left overs. I also make turkey soup with the carcass.
Improvised paninis-
mix stuffing and potatoes together, to form a patty in your palm to sub for the bread, smear with cranberry sauce, top with minced turkey, green beans, and another "slice of stuffing and mashed" bread substitute. put it in your well greased panini press. crisp up and serve. super easy and super delicious.

Once we get tired of reheating the meal as-is, we love turkey sandwiches. I also like turkey salad for sandwiches.
With the turkey carcass, skin, pieces of meat that we don't eat, I make turkey stock, and use it whenever a recipe calls for chicken stock.
Turkey Chowder
1/4 cup butter
2T onion
1 cup diced celery
1 cup cooked turkey or chicken
2 cups diced potatoes
2 cups turkey broth (I use bullion cubes and water)
1 can cream corn (15 or so ounces)
1/4 tsp. paprika
1/4 tsp. ginger
1 tsp. salt
2 tsp. parsley flakes
1 can evaporated milk
Sauté butter, onion, celery, and meat. Add potatoes, broth and cook until tender. Add remaining ingredients and heat through.
(I usually use a little flour stirred into a little bit of the milk to thicken the soup.)

We usually do at least one day of just reheating the meal as is. Then we do Leftover Chicken/Turkey Ala King (recipes vary but we use the one from AllRecipes.com...just broth, chicken or turkey, peas, evaporated milk, and cornstarch). Turkey Salad. The other stuff we pair with another meat to make a new meal. If there is a lot of left over meat, we also have another night of the same meal and at least one with soup.
Beyond that, you can bad it and save for other meals later by freezing.
Either turkey/cranberry sandwiches w/spinach leaves.

looked yummy and different).
We do a turkey version of shepard's pie as well. But shepard's pie is one of my son's faves and he'll take it ANY way he can get it. :) I warm up the turkey in the skillet, add some flour. Stir it up and add some chicken stock (or skip these steps and mix in some gravy if you have it). Add the green beans or other veggies and top with stuffing. I've also done it where I have mixed the turkey with cream of chicken soup and green beans, topped with potatoes and cheese. My kids, who oddle aren't huge fans of stuffing, seem to prefer it with the stuffing topping when I make it using turkey.
Turkey tetrazzini is another one. I make a sauce from scratch and throw it on top of noodles. I have a friend who "cheats" and mixes a bit of sour cream with some cream of mushroom soup. I like her version too! (Mushrooms are one of the few things my kiddos won't eat, so I make a sauce and add mushrooms to mine and hubby's)

For the left over mashed potatoes, I have used them to make a version of baked potato soup.
You can also mash in a few eggs. Then fry them up in a hot skillet for potato pancakes. My kids don't like this as much as the difficult and time consuming shredded version, but they do like it. We serve it with applesauce. It makes a good breakfast.
Last year for a lunch I opened a package of canned biscuits and put them in muffin pans. Then I mixed some veggies, gravy and turkey. I filled the cups and topped some with stuffing and some with potatoes (we had A LOT of potatoes last year). The potato ones were better. They were like mini turkey pies.
No stellar ideas for the cranberry sauce. We skip that at thanksgiving and have a cranberry salad instead. My mother in law sometimes adds a bit of oil to it and makes a salad dressing of sorts.
Turkey sandwich with stuffing and cranberries on it! Yummy!
