Should I store the cake in a air tight cake container in the fridge? or room tempature? Any suggestion will be help full.

What can I do next?

Personally I would bake the cake and put it in the freezer until the day of the party. Wrap it up tight or put in air tight plastic container. Wait and frost it the night before or the morning of the party. It will turn out a lot better. You don't say if you are making homemade frosting or using a can. That also makes a difference....If I were you I would experment ahead of time seeing it's your first cake. Good Luck and Have Fun!!!!!

I worked as a commercial baker and we froze all of our cakes. They can be frozen and wrapped with shrink wrap for months (remove cake from pan). You do not need to thaw to ice the cake, when the cake is frozen it actually is easier to frost (and the cake is more moist). Beat this icing (even if it is store bought) right before icing and frost it the morning of the party or the night before if it's an early party and put it in the fridge until everyone arrives.

Good luck,
K.

Air tight in the fridge. It will keep it moist

Suggestions: If you can find a strawberry pudding mix, you can add it to the batter and it will make the cake easier to manipulate and moister when eating. Also, you could use the pudding mix as a goody between cake layers, just make sure you put a layer of frosting down first and pipe a dam around the outside edges.

Have fun

Why so far in advance, I usually bake my cakes the night before and leave them wrapped in foil on the counter or in the oven (make sure its cool), they are fine the next day, I think as long as you wrap it good it should be fine! But if you can do it the night before it would last longer.....

It is better to bake the cake and then freeze it until you are ready to frost. By frosting a cake that is frozen, they do not crumble and get little pieces of cake in the frosting as much.

Good luck and a strawberry cake with chocolate frosting sounds yummy! You could even decorate with chocolate covered strawberries too!

Happy early birthday to your daughter.

You can bake it at any time, put it in a container and freeze it. Alot of the grocery store chains now have their Bday cakes and other cakes sent in frozen, just take it out the night before and keep it in the fridge. It will be fine.

Also, just a tip.... cakes are easier to put icing on if they are frozen. before hand... they have less crumbs. I usually wrap mine in foil for a day then decorate them, then place back in the freezer until I need it. YOur guest will never know the difference, as they will still be moist.

Wrap the cake tightly and you can freeze or put in fridge.
I freeze my cakes un-iced for up to 2 months.
