We are having my younger son "Bath-tized" (according to his 3 year-old brother) on Sunday, and the family is coming for brunch after the ceremony. Anyone willing to share their favorite breakfast or brunch recipes? There will be about 10 people, and I love to cook, so I don't mind complex recipes, but easy is good too. What dishes do your families love? I would love festive drink recipes too if you have them.

Creme Brulee French Toast! Sooooooo yummy and you can prepare it the night before (you should) and pop it in the oven when you need it!

This is my fav and it is easy, best part is you make it the night before and it cooks in the crockpot all night long. So there is nothing you will need to do in the morning when you will already be rushing around getting things done and ready.

1 package of bacon (cook it)
1 package of sausage (your fav flavor cook it up)
1 package (32oz) frozen hashbrowns
2 green peppers bit sized
1 vidalia onion chopped
1 package cheese (i use cheddar or colby jack)

cook the meat and alternate layers in the crockpot (make sure to spray with non stick first!) then wisk together 1 dozen eggs and pour down over the top. I like to top it all off with cheese that will brown up nicely. Cook on low over night.

Not only does it taste so yummy but it makes the whole house smell awesome.

I have a Texas Brunch casserole. Anytime someone visits me, they request it. It is super easy and you can make it a day ahead and just reheat the next day.

Here is the basic recipe... I love this one because I don't eat eggs (as in quiche, scrambled, boiled, etc) I usually take a basic recipe and adjust it to our taste.

1 pk sausage (I use 1 and a half packs and only Jimmy Dean Hot)
1 can creamed corn
1 cup Bisquick
1 egg, beaten
1 Tablespoons oil (canola works best)
1/2 cup milk
1 can chopped green chiles (or use jar sliced jalapeno's)
Montery Jack and Cheddar cheese

Mix creamed corn, bisquick, beaten egg, oil milk and chiles together well. (NOTE: I serve peppers on the side since not everyone likes them)
Spread about 1/2 of the mixture in a casserole pan (about 8x8)
Cover this mixture with sausage and grated cheese to taste
Cover the sausage and cheese with the remainder of the mixture.
Sprinkkle cheese to taste on top.

Bake about 30 minutes at 400. Test to make sure it is fully cooked. Serve with shredded cheese and jalapenos.

Our favorite breakfast beverage for special occasions would be mimosa's and tulips (cranberry juice vs OJ)

A fritatta is always nice. There are a million recipes online, it's good hot or cold, it's good for you, it's quick and easy to make, it keeps well, and best of all it tastes great.

Heavenly Cinnamon Brunch (Excellent with Mamosa's) :)

1 16oz Bread Loaf, cut into 1 1/2 inch slices
8 eggs
2 cups milk
2 cups half and half
2 teaspoons vanilla
1/2 teaspoon cinnamon
1/2 teaspoon mace
1/2 teaspoon nutmeg

Topping:
1 1/2 cups soft butter
3 cups brown sugar
6 teaspoons dark corn syrup
3 cups chopped walnuts

Preheat oven to 350 degrees. Use 9 X 13 pan for 50 minutes. Heavily butter baking pan and fill with sliced bread pieces. Blend eggs, milk, half and half and seasonings in blender until fluffy. Pour over bread. cover and refrigerate overnight.

Topping:
For butter, sugar, syrup and nut topping: Mix together, cover and leave on counter overnight. Next day spread mixture on top of the casserole
and place in the oven.

You are going to be a bit busy that morning to be whipping up a gourmet brunch! Try to find some make ahead recipies. Like a breakfast casserole. Get people involved. You could do an omelett bar. Line up a few ingredients, and assign dad to make omelettes. Pancakes and waffles can be made ahead of time. If any kids are coming, put out a few boxes of creal, milk, and bowls. Put out a stack of bagels and smear and a toaster.

Great coffee with flavored creamers, plus Baileys or Kahlua to add. Mimosas - you can dress it up by doing a cranberry version or whatever.

CO green chile breakfast casserole - I think this came from a Jr League Cookbook

2 - 4 oz cans chopped mild green chiles
1 lb montery jack chsse, coarsely grated (I often use pepper jack for an added kick)
1 lb sharp cheddar cheese (I use 2%)
4 eggs, separated
2/3 c evaporated milk (I use lowfat)
1 tbs flour
1 tsp salt
1/2 tsp black pepper

topping: 2 med tomatoes cut in wedges & 1-4 oz can while green chiles or 4 fresh chiles sliced lengthwise

Preheat oven to 325 degrees. In a large bowl, combine chopped green chiles & both cheeses. turn mixture into well greased 9x13x2 inch casserole dish.

In a large bowl, beat egg whites until stiff peaks form. In a small bowl, combine egg yolks, evaporated milk, flour, salt & pepper. Gently fold beaten egg whites into egg yolk mixture. Pour mixture over cheese & use a fork to gently distribute egg mixture through the cheese.

Bake for 30 mins. Remove from oven & arrange tomato wedges & sliced chiles on top. Bake for 30 min longer or until a knife inserted in the center comes out clean. Serve hot.

My family loves to make bubble bread for special breakfasts or brunches, here is the recipe:
Bubble Bread

24 frozen Rhodes rolls
3 oz package Butterscotch pudding, the kind you have to cook
1/2 tsp. Cinnamon
1/2 Cup Brown Sugar
½ Cup Chopped nuts (optional)
1 stick Butter

Grease and flour a bunt pan. Place frozen rolls in pan and sprinkle dry ingredients and nuts over rolls. Melt butter and drizzle over the rolls. Let rise in oven (not turned on) overnight. Bake at 350* for 30 minutes. Let sit for 10 minutes then turn out onto a serving plate.

When it rises some of the goop can fall out fo the bunt pan so you should line the bottom of your oven in foil. Then take out the foil and the pans when you preheat the oven, return the bunt pans when the oven is preheated.

Here is another recipe I like:

Apple Pancake Souffle

1 cup + 2 tbls all-purpose flour
3 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 cups egg substitute -- equal to 8 eggs, I think the egg substitue makes it fluffier though)
2 cups skim milk
1 teaspoon vanilla extract
2 tablespoons unsalted margarine -- stick
6 apples, peeled -- sliced thin (use an apple peeler/corer/slicer if you have one)
3 tablespoons light brown sugar -- firmly packed

1. Preheat the oven to 425º F.
2. In a large bowl, combine the flour, sugar, salt and cinnamon; make a well in the center. Add the egg substitute, milk and vanilla; whisk until thoroughly combined.
3. Place the margarine in a 13x9" baking dish; place in the oven until the margarine is melted and sizzling, about 3 minutes. Add the apples and mix gently to coat. Bake until the apples are heated through, about 5 minutes. Pour the egg mixture over the apples; sprinkle with the brown sugar. Bake until the souffle is puffed and golden and a knife inserted in the center comes out clean, about 35 minutes. Serve at once.

This is good with pancake syrup on top.

It's FANTASTIC. We usually get about 6 big slices from one loaf. Plan for one slice per person, unless they're a big eater - it's that rich! Top with more strawberries and maybe some whipped cream. :)
