Twice baked potoatos! Bake them then cut in half, scoop the flesh out and mix with shredded cheese, sour cream (or can use french onion dip!), bacon, etc. Then put back in and bake!!
Homemade french fries - just slice, season and put in oil or the oven.
Greek potatoes:
Peel and dice 6-8 potatoes. Coat with olive oil, salt & pepper & 1 tbsp greek seasoning. (or more to your liking). Bake in a 425 degree oven for 15-20 minutes. Easy & Yummy.
I make the yummiest potato soup I've ever known. (Boil turkey wings for broth. Cut potatoes into mashable chunks and boil until very soft. Pour off water place back on lowest fire. Add butter, and mash and stir until super-duper smooth. Add roasted garlic and onion--roasted just enough to bring out the flavor--and stir in. Add basil and chopped jalapeno and little rosemary. Now, add broth and stir to keep it smoooooooth. I like to add heavy whipping cream because my soup is usually for sick people who need the fat, but add whatever fat-content level of milk you desire, and STIR. Keep it smooth! Then add diced potatoes for the chunks and turn the fire up to about medium. Bring to a low boil and turn it back down to low and cover. Add sea or kosher salt to taste and parsley to appearance, and let simmer until chunks are soft, but not quite mashable. Because of the milk, you must not leave it out too long. My chef uncle told me some trick about leaving a metal spoon in it if it must be left out, but I don't know that trick, so....)
When I entertain--with flowing booze--I set up a baked potato bar. (Boil the potatoes, but not soft enough to mash. Cut them in half lengthwise. Maybe quarter them if they are huge. Set them open-faced in a large pan and mash/scramble the innards. Then butter and bake. Then serve as mini baked potatoes, and let your guests top with their favorite toppings.)
Chunky mashed potatoes. (Boil them until mashably soft, but don't mash. Pour off the water and add butter and olive oil and garlic, and lightly stir or fold over low fire. Then, season with salt, parsley, basil, pepper.)
Roasted potatoes with lemon and rosemary and olive oil. Use your hands to mix.

Parboil the potatoes first in milk to cut down on the cream and use 1/2 the heavy cream. I also use regular swiss cheese. Delicious!!
This recipe was very successful at a covered-dish supper we attended a few weeks ago (yummmm):
