Leftover Boiled Potatoes

We had a large crawfish boil this past weekend. Now I am left with several potatoes that were boiled for the boil and not eaten. Since they were cooked in crawfish boil seasoning, I don't think I can turn them into mashed potatoes. Well I could, but I doubt anyone would want them. I may dice them up and cook in olive oil. I have enough for two or three meals. Any other ideas?

So What Happened?

***It's tradition to cook up potatoes and corn with crawfish. So yes, they were cooked with them, but they are fine to eat. I just need to hurry up and use them. And crawfish seasoning is similar to old bay. A little spicier and more clove.

I've used mine to make hash. Chop up some onion, garlic and bell pepper...different colors of bell peppers if you have them. Chop up the potatoes in large-ish pieces, and saute them in fairly hot oil. The crawfish seasoning will enhance the flavor of the entire dish. If you want to make this a main dish, add some chopped ham or bacon or something. And to make it extra tasty, use some butter instead of (or in addition to) the oil. Not the healthiest dish, but yyyyuuuuummmmmmmmmyyyy.

Or just keep the potatoes whole and steam them to heat them again and put them on the side of any meal.

We always have a lot of leftovers also. I make a crawfish creole or étouffée with the crawfish tails and a chowder with the corn, potatoes and sausage. It is really spicy and you won't need to add any seasoning. You can google recipes but basically just add milk to get the consistency you want. It can also be frozen for several months. Good luck!

if you cant use them right now, grate them with a cheese grater and freeze for the future. sounds like they would be great with eggs and sausage!

Hm... hashbrowns? I'm not sure what crawfish boil seasoning is, but I am assuming that it is similar to Old Bay. Dice up the potatoes with diced onion and bell pepper and either roast in the oven or in a frying pan to "crisp" with olive oil and a little salt and pepper (if needed). That's what I did with our leftover potatoes last night and they came out pretty well.

You could also try making a potato salad out of them. Add a zesty dressing (1/2 cup plain yogurt, 2 T fresh chives, 2T fresh lemon juice), bacon and diced boiled eggs and you may be able to get another side dish out of them!

One of our favorite potato recipes is to boil up small potatoes (i.e. redskins) until they are soft, then I lay them out on a baking sheet that's been coated with a small amount of olive oil, smush them down once with a potato masher, drizzle with a little more olive oil and some seasonings, then bake in an oven at 400 degrees for 20 to 25 minutes, or until they start to crisp up. Since they are already boiled, maybe you could try that - you may want to cut them in half or quarters depending on how big they are.

150! Now I am super jealous!!! No one in my family likes them.. My best friend that used to host the crawfish boils, died last year.. I need to look for a new friend.

Yummy.. how many lbs of crawfish did you all boil?

Now that they are "pre-seasoned".. they will be good in any way you use potatoes.

You could slice them and make them into scalloped potatoes. you will not have to bake the dish as long as normal.

Roasted potatoes, Twice baked potatoes, Potato skins, cube them and make soup. add them to a vegetable or chicken soup. Chowder.

Potato soup (maybe creole style)

Spicy hashbrowns topped with cheese and eggs

Cover with cheese, ranch dressing and bacon and bake

You could make mashed potatoes and add garlic, cream cheese, and horseradish to give it a different kick

Smashed potatoes. you put them on a baking sheet, smash em, season (olive oil, sea salt, etc) and bake again.

I don't know what craw fish boil seasoning is lol. Does that mean they were boiled in the same water as the fish? If so I would toss them. If it doesn't then maybe a potato salad?
