Does anyone have any good recipes for the leftover ham from Easter besides Scalloped Potatoes and Pea Soup ???

ham salad, make it sort of like you would tuna salad, without the sweet relish.
make egg salad and put ham in that.
we eat the ham pretty fast, since it's a breakfast, lunch or dinner meat.
Whatever is left goes into the bean pot. You can also make ham and noodles.

The good thing about ham is that it freezes great.

This is one of my best kitchen oops, I started to make scalloped potatoes and ham, I had never made it before. So my Mom tells me just cut up the potatoes and ham add a white sauce and bake. Okay easy!!! My kids love this so I made a big dutch oven full and it didn't look like I had enough white sauce so I added more milk. Baked it about 2 hours and had soup!! The best mistake I ever made. My kids have asked me to make it again and again and it tastes best if I bake it.

We've had ham and cheese omelets, and we've added bits of ham to top a green salad. Ham sandwiches. You can put it on pizza. Ham is pretty versatile.

There is always that pea salad w/ cheese thing but I guess you don't that either since you said no pea soup. How about black eyed peas or purple hull peas - ham is always good in that. I've had pasta salads w/ ham. Or just a good old fashioned ham sandwich works too!

Noodles, veggie, ham and alfredo or another white sauce. Cube it up and add it to a salad. Use it in your eggs in the morning.
