Do you have a recipe for a coconut cake? I got a cake plate for Christmas and I thought it would be so pretty to put a white cake on it. I was very excited about it until I spoke to my mother. She said do you have a recipe for High Altitude???? duh! No, I don't. Do you? Thanks, K. K.

Sorry, no one in my family likes coconut, so I've never made a coconut cake! I have however lived in CO all my life, and been cooking for 40 + years, and can truthfully say I have NEVER ever found it necessary to make ''high altitude'' adjustments for anything I've made. (I love to bake too!). But if you are worried, most box recipes have those adjustments listed which you could apply to your own recipe. The only time I think one would need to make these adjustments is if you are living up in the mountains. Good luck!

Baking here can be such a challenge! Some things turn out great, while others have huge problems. It's not moisture that helps...it's a fine balance with baking and often extra flour is part of that mix. Pie in the Sky is a fantastic cookbook for anyone who likes to back from scratch at any altitude! It's nice to have tested recipes so I don't have to experiment. Good luck...coconut cake sounds yummy!
I just came across this and plan on using it myself, it's called The Most Delicious Coconot Cake You've Ever Tasted from Family Circle's Christmas Issue

3 cups cake flour (not self rising)
2 teasoppons baking powder
1/2 teaspoon salt
1 cup unsalted butter, softenend
1 1/2 cups sugar
3 egs
1/2 teaspoon vanilla extract
1/2 teaspoon coconut extract
1 can (13.5 oz) coconut milk
1 cup sweetened flake coconut, finely chopped
Frosting and Filling
1 packages (8 oz) reduced fat cream cheese, softened
4 Tablesponns unslated butter, softenend
1 teaspoon vanilla exract
1 box (16 oz) confectioners' sugar
1.2 cup srtawberry preserves
1 1/2 cups sweetened flake coconut
Heat oven to 350^ Coat two 8 inch round cake pans with nonstick cooking spray. Line bottoms of pans with waxed paper, and srpay paper.
Cake: In a large bowl, whisk together flour, baking powder and salt. Set aside.
In another large bowl, beat butter and sugar on medium speed until light and fluffy. Beat in eggs, one at a time beating well after each addition. Add vanilla and coconut extracs; beat until combined.
On low speed, beat in flour mixture in three additions, alternating with coconut milk. Beat well after each addition. Fold in chopped coconut. Divide batter equally between prepared pans.
Bake at 350^ for 40 minutes or until toothpick inserted in cneter comes out clean. Cool in pans on whire rack for 15 minutes. Remove cake layers from pans and cool completley.
Frosting: In a large bowl, beat cream cheese and butter until smooth. Beat in vanilla. On low speed, beat in confectioners' sugar until smooth.
Trim cake layers level if crowned. Place one cake layer on a plate spread top with preserves add remaining cake layer. Secure with Skewers. Spread top and sides of cake with frosting. Remove skewers . Gently press shredded coconut onto sides of cake. Refrigerate 1 hour before slicing.
The high altitude part really depends on how high the altitude is where you are. Where I am currently living is about 5800 feet above sea level and I have no problem with my baked goodies turning out well, I bake them at the oven temp that the recipe says and I actually end up having them done 5 - 10 minutes before the time the recipe says. I don't use any of the high altitude directions and have no issues. I think the high altitude directions are more if your living above 7000 feet or so. Wish I had some good white cake recipes for you, My family likes the Red Velvet chocolate cake that I make, and it would look scrupmtious on a white on white cake plate. Hope the altidtude suggestions work for you.
There's a great cookbook called "Pie in the Sky". It is full of high altitude recipes for all sorts of baked goods. I don't know if it has a coconut cake recipe in it, but I would suggest you get the book from the library and see. Good luck!
I have lived in the colorado mountains most my life. I have never adjusted for high altitude. So that being said, I wil find the coconut cake recipe I made one time. My husband does not like coconut so I have not repeated. So, check back. Thanks, Michele
the only difference for high altitude is the wet ingredients, i usually add about a 1/4 cup more, the baking time doenst really differ, i have a great coconut cake recipe, will go look for it and send it to you c",)
If you read the box of cake mix it already has a high altitude variation on it . Follow that and you should be fine.
