So, my salad was a big hit at Bunco. I used the spinach and strawberry idea. Made my dressing out of the pureed strawberries, a bit of peanut oil, vinegar, splenda and a touch of "plum loco" grape wine. It was awesome. Thanks for sharing all the good recipes. I will use more in the future!

I've made a spinach-cranberry salad before that was a big hit. Here's what you do. Get a bag of fresh spinach, 1 cup of craisins, crumbled gorgonzola cheese, small bag of blanched and slivered almonds and sesame seeds. Toast the almonds and sesame seeds on a cookie sheet in the oven. Throw all the ingredients in a bowl. Toss with Newman's Balsalmic Vinigerette dressing (not too much!)Everyone loved this salad!!
Everyone I've made this salad for loves it and it's so easy!
- spinich leaves (I usually buy the kind in a bag or the organic kind in the plastic tub depending on how many people are being served)
- 1 tub of strawberries (or two depending on people)
- Blue cheese or feta
- small bag of candied walnuts or pecans (can usually find these in the produce section)
- One bottle raspberry vinegarette dressing (I like Newman's Own)
Put everything in a large bowl and toss. Take dressing with you to bunco and let people dress their own salad. It's yummy!
Sorry I'm responding to this late. Sounds like you have a lot of good salad recipes. I just made a salad the other day that I kind of copied from an area restaurant. It's so easy to do!!
A bag of salad (which ever you prefer)
Sliced strawberries
Mandarin Oranges (I used half can of Dole's Mandarin Oranges)
Candied or plain chopped pecans
Colby Jack Shredded Cheese
Creamy Poppy Seed Dressing
Mix all the ingredients together and toss. Then top with the Poppy Seed Dressing!!
It's really good and it takes maybe 10 minutes to make!!
A really good, not your typical, salad is:
Torn spinach
Pecan pieces
Fresh sliced stawberries
Feta Cheese
Tossed with Brianna's Blush Wine Vinegarette Dressing (has a big strawberry on the front of the bottle)

Field Greens, Crumbled Blue Cheese and Spicy Pecans
Vinaigrette
2/3 C. sugar
1 t. dry mustard
1 t. salt
2/3 C. distilled white vinegar
3 T. apple cider vinegar
4½ t. onion juice
2 T. Worcestershire sauce
1 C. vegetable oil
Combine sugar, dry mustard, salt and vinegars. Stir (over low heat) until sugar is dissolved. Whisk in onion juice and Worcestershire. Add oil slowly, whisking continuously until blended.
Salad
4 C. mixed field greens
2 green onions chopped
* 4 oz. blue cheese, crumbled
1 granny smith apple, chopped
Spicy Pecans (see below)
Toss salad ingredients and combine dressing.
Spicy Pecans
2 large egg whites
1 ½ teaspoons salt
¾ cup sugar
2 t. Worcestershire sauce
2 T. Hungarian paprika
1 ½ t. cayenne pepper
4 ½ C. pecan halves
6 T. unsalted butter, melted and cooled
Preheat oven to 325 degrees. Beat egg whites with salt until foamy. Add sugar, Worcestershire, paprika and cayenne pepper. Fold in pecans and melted butter. Spread pecans evenly on a baking sheet. Bake 30 to 40 minutes, stirring every 10 minutes. Remove from oven and cool. Store pecans in an airtight container.
* I always serve the bleu cheese (since I think that it is gross) on the side & also sometimes substitute goat or feta.
Spinach Salad
Dressing:
1 C. oil
1/2 C. sugar
1/2 C. ketchup
1/4 C. red wine vinegar
1 t. worcheshire
1/2 t. salt
1/3 C. finely chopped onions
Salad:
Spinach
Mandarin Oranges
Red Onions *
Black Olives
Sliced Almonds (toasted)
Sliced Mushrooms
* There is onion in the dressing – I do not put in salad.
** This is an easy salad to have everything ready and throw together right before serving.
RED LEAF SALAD WITH
RASPBERRY VINAIGRETTE
2 heads red leaf lettuce, torn ½ cup toasted cashews or almonds
1 can mandarin oranges, drained 1 pint strawberries, quartered
½ cup raisins or grapes, halved
Bake cashews on cookie sheet for about 8 minutes at 350. Mix together salad ingredients and set aside.
DRESSING:
¼ cup sugar ½ cup peanut oil
1 tsp. dry mustard ½ cup corn oil
1 tsp. salt 1 T. poppy seed
1/3 cup raspberry vinegar
Stir first three ingredients, then add the remaining and mix or shake well. Refrigerate dressing, but take out about 30 minutes before serving. Toss over salad Makes about 12 servings.
Believe me when I say this...this is the BEST salad ever!
A friend of mine at work made this for a pot luck and everyone asked for the recipe. Now, I love making this salad and everyone thinks it is fabulous!
SALAD SQUARES
Unroll 1 package of crescent rolls into a 9 x 13 baking dish. Press the dough down into the pan, to make a "base".
Bake as directed. Do not separate the rolls, just unroll the dough from the package.
When dough has cooled, spread the following on top: 1/2 a block of cream cheese, 1 cup of sour cream, and 1 package of ranch dressing mix, mixed together.
Then, on top of that you pour on one bag of broccoli cole slaw mix, and shredded cheddar cheese on top.
You serve this, by cutting it into squares. It's delicious! Hope you give it a try!
Corn Salad and Ramen Noodle Cabbage Salad
Corn Salad
2 cans whole kernel corn, uncooked & drained
2 cups shredded cheddar cheese
1 cup finely chopped red onion
1 chopped bell pepper
1 cup mayo
1 package of Nacho Cheese Tortilla chips broken up in smaller pieces - I do not buy Doritos because they are too strong. I just buy the store brand -Kroger's are good.
Add chips to all the other ingredients just before serving. It gets kind of soggy if you do it too much in advance.
Ramen Noodle Cabbage Salad
1 large package of Cole slaw mix -do not use the dressing in the package if it comes with one.
8 green onions, sliced fine
1/2 cup sunflower seeds
1/2 cup toasted almonds
2 packages of Ramen Noodles Oriental, uncooked
Break up the uncooked noodles and toss with remaining ingredients. Pour dressing over salad just before serving.
Dressing:
1 cup of oil - I use Smart Balance Omega
2 tbsp vinegar - I use Apple Cider Vinegar
4 tbsp. sugar
1/2 tsp salt
1 tsp pepper
Both Ramen Noodle Seasoning packets
Mix together.
These are always big hits at church luncheons.
Oh gosh I have the best one ever!! My cousin who is a professional chef at an exclusive country club/ golf course created it. Super simple but the contrast of flavors are unbelievable!! Get Spring lettuce (you know it comes in a plastic box and looks like it was picked from a forest?) ok thinly slice strawberries, sliced almonds, and the most important part.... Girard's Champagne dressing. I know it sounds to simple T. wonderful but trust me it is the best salad you'll ever eat!!
Shrimp and Macaroni Salad
Ingredients:
• 1 cup light mayonnaise
• 1 teaspoon seasoned salt
• 1/2 teaspoon celery seed
• 1 teaspoon salt, or to taste
• 1/2 teaspoon pepper
• 2 tablespoons brown spicy mustard
• 3 ribs celery, chopped
• 3 large tomatoes, diced
• 1 bunch green onions, chopped
• 1 pound cooked shrimp
• 16 ounces shell macaroni (cooked without salt or fat)
Preparation:
Combine mayonnaise, seasonings, and mustard, in a large bowl. Mix well. Add celery, tomatoes and green onions. Mix well. Add shrimp and macaroni. Mix well. Refrigerate about 2 hours before serving.
Chicken Pasta Salad

Dressing
• 1/3 cup mayonnaise
• 1/4 cup water
• 1 tablespoon chili sauce or barbecue sauce
• 1 1/2 teaspoons white vinegar
• 1/4 teaspoon ground black pepper
Salad
• 12 to 16 ounces boneless chicken breast halves
• 8 ounces pasta twists
• 4 slices bacon
• 3 cups bite-size pieces of romaine or iceberg lettuce
• 1 large tomato, chopped
Mix all dressing ingredients in a large serving bowl until blended.
Place chicken in a Dutch oven with just enough water to cover. Bring to a boil, reduce heat, and simmer (uncovered) for 10 minutes, or until chicken is done and no longer pink in center. Remove chicken to cutting board to cool.
Add enough water to the pot to cook the pasta twists. Bring to a boil, add pasta, and cook 8 to 10 minutes or until just tender but still somewhat firm. Drain well.
While pasta is cooking, fry bacon until crisp. Drain on paper towels then cut or crumble in small pieces. Add hot pasta to dressing in the bowl and toss to mix and coat thoroughly. Tear chicken in bite-size pieces and add to the salad with bacon, lettuce pieces and chopped tomato. Toss gently to mix.
Cornbread Salad
Ingredients
1 cup chopped onion
1 cup chopped green pepper
1 cup chopped tomatoes
1 pan cornbread, crumbled
3/4 pint of real mayonnaise
10 strips fried bacon
Directions
Crumble cooked cornbread. Add onions, peppers and tomatoes, Mix thoroughly. Add mayonnaise and mix again. Fry 10 strips of bacon until crisp, then drain. Press cornbread mixture into a baking dish and crumble bacon bits on top. Refrigerate.

It is definitely a main course salad though, and the recipe makes a ton - even if you half the ingredients. Lots of chopping, but SOOOOOOOO worth it!!

Poppy Seed Salad
1 pkg cole slaw (don't use that dressing though)
1 head of broccoli cut in small pieces
1 small can pineapple pieces, drained
1 small package chopped walnuts
1 bottle Poppy Seed dressing (you may not use all of it)
Add everything together in a large bowl and mix with dressing. The dressing sweet so it goes a long way, don't overdo it. If you want to make it more filling I boil 2-3 chicken breasts, cut into small pieces and add it in. You could probably use canned chicken if you don't want to have to cook that.
I know you've already gotten tons of ideas, but I thought I'd chime in with this one which is a little different and sounds simple but is soooo delicious (to me, anyway). My sister made this for me once and I didn't want to try it at first because the base is kael, which is bitter, but I tried it and loved it and I can eat this salad all day long:
Ingredients are: bunch of kale, grape tomatoes (halved), 1-2 lemons, pine nuts, olive oil, dried cranberries
In a small pan, sautee pine nuts with olive oil to just barely cover the pine nuts - sautee until just browned and remove from stove to cool (don't dump the olive oil because this is part of your dressing).
Chop/cut up kale and put in large bowl. Mix in halved grape tomatoes and cranberries (quantities to your liking - I like A LOT of cranberries). When cooled, add the pine nuts and olive oil and top with juice of one lemon. Toss and enjoy! You may decide it needs a little more lemon juice after tasting, which is why I said 1-2 lemons (I usually add more). Hope you like it!
Green Apple Spinach Salad
Ingredients:
1 package (9 ounces) fresh baby spinach, torn
2 medium tart green apples, chopped
1/4 cup golden raisins
1/4 cup Granulated Pure Cane Sugar (or Splenda)
1/4 cup cider vinegar
1/4 cup vegetable oil
1/4 teaspoon garlic salt
1/4 teaspoon celery salt
1/2 cup chopped cashews
Directions:
In a large salad bowl, combine the spinach, apples and raisins. In a small bowl, whisk the sugar, vinegar, oil, garlic salt and celery salt. Drizzle over salad and toss to coat. Sprinkle with cashews. Serve immediately. Yield: 6 servings.
Here's one that I make and everyone seems to love it. It's now my husband's favorite salad and it's very healthy.

Heres a very yummy simple salad:
tomatoes
cucumbers
Italian salad dressing
Either cut up 2 large tomatoes or use small cherry tomatoes. Skin the cucumbers in stripes (some skin off, some skin on) and then cut them into 1/2 inch slices. Cut smaller if you like. Get a quality Italian dressing and pour it on the salad. MMMMMM YUMMM. You can also add chunks of Mozzarella, but it's up to you.
Howdy, this one is always a hit at our church potluck.
1 head broccoli (cut into small pieces)
12 slices of crisp bacon, crumbled
optional- 1 C green or red seedless grapes, halved
1/2 c chopped nuts
1/4 c chopped finely red onion
1/2 c sugar
1 T vinegar
1/2 to 3/4 c mayo
Mix together all ingredients EXCEPT last three. Mix last three and add it at serving time.
Keep it all refrigerated until serving time.

My sister-in-law has made this for family gatherings at least 4 times over the past year, including this past weekend when we visited her and her family in Missouri. You and your Bunco ladies will not be disappointed.
Alyson's Broccoli Salad
INGREDIENTS:
* 10 slices bacon (you can sub with any kind of ham too)
* 1 head fresh broccoli, cut into bite size pieces
* 1/4 cup red onion, chopped
* 1/2 cup raisins (we prefer chopped dried cranberries or you can use red grapes cut in half too)
* 3 tablespoons white wine vinegar
* 2 tablespoons white sugar
* 1 cup mayonnaise
* 1 cup sunflower seeds (also great with chopped walnuts instead)
DIRECTIONS
1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
2. In a medium bowl, combine the broccoli, onion and raisins. In a small bowl, whisk together the vinegar, sugar and mayonnaise. Pour over broccoli mixture, and toss until well mixed. Refrigerate for at least two hours.
3. Before serving, toss salad with crumbled bacon and sunflower seeds.

Broccoli Salad
3 c. Broccoli flowerets
6 slices bacon – fried, drained and crumbled
½ to 1 c. chopped red onion
½ c. shredded cheddar cheese
Dressing:
1 c. mayo
2 Tbsp. vinegar
¼ c. sugar
Cut flowerets off stalks. Toss together broccoli, bacon, onion and cheese. Pour dressing over salad and toss. Cover and refrigerate until ready to serve. I always double this.
I use this pasta salad A LOT and always get compaments and an empty bowl back.
Just boil multi-colored spiral pasta according to the directions on the package. Drain completely, place in bowl, add 1 (one) medium or half of a large bottol of kraft zesty italian dressing to the warm noodles and stir carefully. At this point you could serve it warm or cold, both ways are good. You can also add some chopped veggies like cucumber, carots, brocoli, tomatoes, or any veggie you like and you can even add cubed cheese,or shredded. (if you add the cheese, make sure the pasta has cooled some or the cheese melts and it is not a pleasant texture.)

Garden Vegetable Chopped Salad
6 cups chopped romaine lettuce
1 cup chopped broccoli
1/2 cup matchstick carrots
1/2 cup light ranch dressing
1/2 cup 2% shredded cheddar cheese
Toss lettuce with broccoli, carrots and ranch. Top with cheese. Note: you'll want everything in bite sized pieces.
Makes 6 serv.
Choose either spinach salad OR Mixed Field Greens. Add sliced strawberries, half a can of drained mandarin oranges, 1/2 chopped purple onion and Brianna's poppyseed dressing. You can add slivered almonds also if you would like... This salad is always a hit (and so easy)! It is great for Spring and Summer time!

Wow sounds like a lot of great recipes. I am going to add one more this one is very simple.
1 bag of your choice of salad mix
1 or 2 tomatoes
onions (optional)
1 can of Ranch style beans
1 bag of Fritos
1 bottle of Catlina dressing
Mix all of together at home except the Fritos and dessing. Right before you are ready to sit down to eat add the Fritos and dressing. Mix well, I normally just shake the bowl. You can also add shredded cheese if you would like.
It is easy and fast.

Eyvonne: You have received a lot of great ideas already but I have one to add that I borrowed from a friend and it is so easy:
Chop iceberg lettuce. Add in hard boiled eggs that are finely chopped. Add in grated swiss or mozzerella cheese. Add 1 small bag frozen peas. Put all this in a bowl. Spread a thick layer of mayo on top and let sit overnight. Top with cracked pepper in morning and mix right before serving. Personally, I think you can make it up right before the party but let the peas defrost well. This is easy & delicious and always gets compliments. I'm sure you would use any lettuce (spring mix, romaine) but the iceberg works well. I like it because it is tasty and has only a few ingredients.

Also in this salad sometimes I add "jammin jerk shrimp" (margaritaville is the brand i think) its in a blue box in frozen foods. I know Target sells it and I think Tom Thumb and Albertsons too. It is easy to prepare just saute for about 8 minutes and then put on top of the salad.

I have two favorites and they are both very simple:
Both use romaine salad mix:
For the first, use strawberries, grapes, and chicken with Ken's Northern Italian Dressing.
For the second use Cherrie Berries (can be purchased at Sam's Club $7), pecans (halves), and chicken with a Balsamic Vinaigrette of your choice.
Both are delicious and unique.

I did this for my bunko group once and it was a big hit!
Just make a huge cobb salad!! I marinated chicken breasts (whatever you choose), but I do a combo of season salt, lemon pepper, garlic pwd. Then marinate in oil, soy sauce, worstershire, lemon juice, then grilled them on the grill.
I used a really big white platter. I piled it high with mixed greens, like red tip, butter, etc. Then around the platter I piled piles of cherry or grape tomatoes, avocado, sliced boiled eggs, chopped up ham, green onions, black olives...really whatever you like. Then I made a "hole" in the middle of the greens and piled the chicken that I had cubed. I then had a variety of dressings available. I made some and used some store bought! It was kinda fun and pretty! I had an easy, lite dessert and served with good bread!

This is more of a mediterranean salad, but we eat with all kinds of foods. My kids love it.
Romaine lettue (I like to buy the Mesclun mix)
parmesan cheese (grated, not from the jar)
marinated artichokes
red onion
1/2 cup olive oil
1/2 cup red-wine vinegar
1 teaspoon garlic salt
1 teaspoon italian seasoning mix
Mix the olive oil and vinegar. Add the garlic salt and italian seasoning. Mix it really well and refrigerate for at least an hour before serving.
When you are ready to put it all together, pull apart the romaine lettuce into bite-sized pieces. Add as much diced red onion as you want. Add several diced artichokes (I usually use 4 or 5 for just my family, so you probably want a whole jar.) Top with parmesan cheese and then the dressing (after mixing it again). Mix it all up and serve.
For very easy and tasty:
Spinach, fruit (recommend sliced pear or apple), shaved Romano cheese, and poppy seed salad dressing (recommend Brianna's).
Fancier, but requires more work:
Mixed lettuce and herbs, orange slices, goat cheese slices, beet slices (canned, sliced beets make this easier), avocado slices, pine nuts. Make the dressing by orange juice, red wine vinegar, oil, pepper, and chopped herbs (thyme or rosemary) to taste (I usually do about equal parts OJ / vinegar, just a bit of oil, fair amount pepper and generous herbs.
Super-easy Italian pasta salad
My mother-in-law used to make this all the time in one of those big plastic jars you can buy pretzels in at Sam's. Just toss all the ingredients in, shake it up, and chill.
Cooked pasta - I like to get the colorful Wacky Pack
One can green beans
One can wax beans
one can black olives
one jar pepperoncini peppers (sold near the olives and pickles)
enough Italian salad dressing to lightly coat it all
Sometimes if I want it "beanier" and higher in fiber I'll add a can of black beans and maybe some canneloni beans
This is a wonderful salad.
1 head iceburg lettuce - sliced or chopped
5 oz. grated cheddar cheese
1 can 3 bean salad - drained
2 tomatoes chopped
1 avacado diced
onions - green onions or 1 white onion chopped
1/2 lb. hamburger meat cook & drained
1/3 of a bell pepper (I use yellow or orange)
Fritoes (small ones not big)
Good with Hidden Valley Intalian Dressing
I also use the Hidden Valley Ranch Dressing.
mix all together and enjoy!
ANOTHER RECIPE:
Marinated Spaghetti
1 lb. thin spaghetti - cooked
1 - 16 oz bottle Italian Dressing
1 bottle Salad Supreme (with the Spices)
1 Tomato chopped
1 bell pepper chopped
1 purple onion chopped
mix all ingredients together and chill at least 3 hours.
This has been a crowd pleaser for everyone I have made this for. I call this a Jessica Salad everything is in it except the kitchen sink lol!
Use which ever greens are on sale or you like.
Buy honey ham and turkey breast lunch meat deli style and roll and chop to shred ontop of greens.
Add cucumbers, tomatos, cheese(any kind shredded), fresh mushrooms, black olives, onions, bell peppers (which ever color you have on hand or prefer)and if you can find some surgar covered roasted pecansa and chopped bacon add for topping. Toss and ready to eat. Don't top with dressing since some people prefer different dressings.
If you don't like all the toppings feel free to have them in side dishes for everyone else.
I buy some crossiants from the store and warm them in the oven and make my homemade butter with honey sauce and top on the crossiants about a minute before I am taking them out of the oven and everyone loves these as well.

steam 1 inch pieces of asparagus until tender (buy a bundle and cut up)
get 2 small bags of almond slices and brown them in a skillet.
take a bag of field greens and mix all that up

I buy those spiral noodles that are vegtable. I cook them and rinse with cold water, then I add sliced black olives and I buy the real bacon bacon bits and a pack of salad fixins with the sunflower seeds, i pour Italian dressing on this mixture little at a time time just enough to cover everything.
Break up some Romaine lettuce, add Mandarin oranges, sprinkle sliced almonds on top. Serve with a vinegarette dressing! Soooo good, easy and healthy!
I make a broccoli salad similar to Nicoles, but instead of frying bacon, I use the REAL Hormel Bacon bits - much quicker. Also I've used pinon (pine)nuts instead of the sunflower seeds. It's always been a hit.

The cranberry Spinach salad is wonderful.
To the Asian Noodle Salad I make a similar Salad and call it Thai Salad as I also add Fish Sauce to it and omit Sesame oil also I sometimes make it into a meal by adding Grilled Chicken or Shrimp or Grilled Beef to it and add sliced cucumber as well..and it tastes superb
You can make a layered salad with lettuce,tomatoes, mushrooms, black olives and any other vegetable or non sweet fruit. Layer them in a large bowl. You then can top the ingredients with a Ranch or Thousand Island dressing. You can even add a side of grilled chicken or beef to to the salad.
