The Ladies Aid at my church sponsors two High Tea's every year. The following is the recipe we use. It is simple and very tasty and is always the favorite. My husband even likes it and he doesn't generally like this. I usually omit the nuts as my daughter has nut allergies and it is just as good, just not as crunchy. At our teas, we serve on either white or wheat bread, crusts removed and cut into either fingers or triangles. At home I generally use croissants. The sandwiches can be assembled an hour or two ahead of time. We always lightly butter the bread, but it isn't necessary.

Unbelievable Chicken Salad
4 boneless, skinless chicken beasts boiled and chopped or equivalant of rotisserie chicken
1 small package chopped walnuts
1/2 cup dried cranberries (Craisins)
1 tall stick celery, chopped small
4-5 Tablespoons Mayonnaise (more or less depending on how moist you like it)
Salt and pepper to taste
Combine diced chicken, stir in Craisins, walnuts and celery. Mix enough mayonnaise to make salad spreadable, using 4-5 tablespoons. Salt and pepper lightly. Refrigerate about 1 hour; stir again before serving.
