I made a bunch of meatballs a few weeks ago to go with spaghetti. Then I froze a bag of them. I took them out of the freezer this morning and we will be having meatball subs and salad for dinner - no cooking needed!!!!

If it doesn't rain, I'm going to fire up my charcoal grill. Grilled shrimp, chicken, burgers, or maybe even sausage. Any meat with a little char on it tastes fantastic. And zuchini and onions. I love grilled veggies.

I'm hoping to have chicken on the grill. I pulled the chicken from the freezer before I left for work. When he calls, I'm going to tell him, lets grill out tonight... I also pulled the beef roast, so it can thaw out and we can have that for tomorrow...then the rest of the week, well, I'm not sure about...

I made baked spaghetti over the weekend and froze it. When I get home I will throw it in the oven and add a salad and french bread.

I don't like ricotta so I used sour cream instead and I added extra sauce.

One of my go-tos for quickness is potatoes. I cube or slice them and boil. Once they soften, I pour off the water and add whatever to season (butter, parsley, garlic powder; specal herb blend; olive oil, salt) and stir it up. I steam baby carrots and add butter and basil. I season tilapia with olive oil and salt and apple and stick it in the oven.

Chili. Brown the meat. Put everything in a crock pot and let simmer for the rest of the afternoon.

Pasta is also quick and easy to embellish.

Not sure this will help you tonight but when I go shopping I buy large packages of ground beef. I fry it all up at once then portion into 1 lb containers and freeze it. That way at night I can pull out one throw it in to thaw and make tacos, spag, chili, casserole, soup or whatever in just a few minutes rather than having to think. I do the same with italian sausage, and ground turkey. makes my life a lot easier. as for tonight. I would make breakfast for dinner. my kids used to love the fun of having waffles and eggs for supper instead of morning

I hear ya - so why not cook once & eat thrice... Totally unplanned for the other night I had a package of boneless, skinless chicken breasts that I had to use or freeze. It was about 5 lbs. I cleaned them and had planned to split in half and marinate each half in a different marinade. Turns out I had enough for 3. So I marinated 1/3 in teriyake pineapple marinade, 1/3 in honey dijon mixture (honey, dijon mustard, lemon juice - google for details) and 1/3 I threw in crockpot with BBQ sauce to cook for about 3 hours on high shredded after 2/2.5 hours. After letting the other 2/3 marinate, I placed each in a glass baking dish covered. We had one for dinner with carbs (rice/couscous/mashed potatoes/quinoa/baked/ sweet potato) & veggies. The other I used cut up in salads & to make wraps/quesidillas. Served the pulled chicken with carb the following day.

Yesterday we thawed out tenderized beef steaks and hamburger. Hamburger went back in the fridge to make on Friday night. We make country fried steak (egg/half and half wash with regular bread crumbs) and fried them in a bit of oil. Not the healthiest but very good! Served them with leftover mashed potatoes, mac and cheese and a salad! Also put a corned beef (3 lbs) into the crockpot over a jar of sauerkraut and let it cook for several hours. Put that in the fridge last night. Tonight we're having Reuben sandwiches, salad and probably the rest of the mac and cheese and mashed potatoes!
