Birthday Cake for Child with Egg Allergy?

Hello, My 11 month old was just diagnosed with an egg allergy. With the 1st bday on the way, has anyone attempted an egg-free cake? If anyone has any input, I'd really appreciate it!

There is an egg replacer that you can use. It is a powder that you mix with water and it will act as an egg in cooking. My sister-in-law used to use it all the time while she was a vegan. Check your local natural foods store or sometimes certain grocery stores even carry it. I don't remember the brand name, but it comes in a box. I hope that helps you.

Hi L.,
I've got two of the most delicious egg-free cakes that I make all the time. They're so good, you can even eat without frosting. The first is a chocolate cake:
3 C. flour, 1 1/2 C. sugar, 6 TBSP cocoa powder, 2 tsp. baking soda, 1 tsp. baking powder, 1 tsp. salt, 2 tsp. vanilla, 2 TBSP vinegar, 2 C. water, 2/3 C. veg. oil. Put all dry stuff into bowl and mix. Make a well in center and add wet stuff all at once. Mix thoroughly and put in ungreased 9x13 pan. Bake at 350 for 30-35 minutes. Done when you can tap lightly on top and it rises back up. This is so easy and so good.
The second recipe is for applesauce cake: 2 C. flour, 1 C. sugar, 1 tsp. salt, 1 tsp. cinnamon, 1/2 tsp. nutmeg, 1/4 tsp. cloves (or allspice if you don't have cloves), 2 tsp. baking soda, 1/2 C. melted butter, 1 1/2 to 2 C. applesauce, 1 C. raisins and/or 1 C. chopped nuts (both optional). Throw all in a bowl and mix thoroughly. Bake in 9x13 pan 35 minutes at 350. This cake is really good plain, or with cream cheese frosting. You will never miss the eggs in either of these cakes. You can make a chocolate cake and it comes out great. It's called "crazy cake". Check all recipes.com and search for it. I've been making it for the past few years.

My son is also allergic to eggs and peanuts... I have found that if you take a cake mix and 8 oz of any soda it makes a good cake.. just dont use diet... it doesnt rise as well.

My son is also allergic to eggs. We like the wacky cake previously mentioned but I am not much of a baker. There is a boxed cake in out health food section of the grocery store called Cherrybrook Kitchen. They also carry it at stores like Whole Foods. We like the chocolate the best. We have served it at my son's last 3 birthdays and everyone (kids and adults) love it. FYI-you can substitute soft tofu for egg in many recipes but the mix is a delicious and easy alternative. Oh, and although not necessary the Cherrybrook frostings are delicious too. The cookies are only OK.
