I boiled water long enough to make a big bowl of macaroni salad that should last us through the weekend.

Tonight is fresh from the garden Bruschetta with fresh mozzarella on toasted french bread. We will have a side of fried zuchini to go with it. Mmmmmmm, mmmmm, mmmm!!! I can't wait for dinner now!
BIG elaborate salads, or Sandwiches
Tonight its fruit with a cool whip/yogurt dip and chips with salsa
Salads or sandwiches, with fresh fruit for dessert, and ice cold lemonade! : )
*Roisserie chicken w/potatoe or macaroni salad (p/u at grocery store)
*Cereal for dinner
*Stawberry/spinach/feta salad w/raspberry vinagrette dressing
*Tacos (ground beef made in early morning before it gets hot), nuke tortillas, chopped tomatoes/lettuce/onions, salsa)
*Bake potatoe bar (bake them in microwave, serve w/sour cream,
salsa, chives etc)
*Taco salad (grd beef made in early a.m. on stovetop), add to bag of
salad, can of drained corn, chopped olives, chopped tomatoes,
crushes dorito chips, thousand island dressing, chopped onions
*hamburgers (cook pre-made patties on grill outside - I have grill right
outside door, run out to turn on, cover, run inside, set timer, run out to
flip, run back inside air conditioned outside. I don't sit outside "manning
the bbq in 100 degree heat. voila :)
*chilled soup w/french bread
*brkfast 4 dinner: overeasy eggs, nuked hashbrowns, toast not too hot :)

send my husband out to the deck to BBQ burgers...
BLT with chips....have the bacon already cooked and warm it in the microwave...
Spinach salad....
slow cookers, pasta salad, grilled chicken, fancy sandwiches or roll ups, fresh salsa/pico de gallo served over rice...

cereal... seriously the other night we were so tired and hot and sticky, we had cereal, it was awesome.
Tonight I'm grilling pizza.
I love how people say "outside grilling" when its 110 outside. Thats what I want to do, stand over a hot grill! LOL! I have asked this question several times if you want to look over my prior questions. Our latest fav is tostadas, just heat up the beans in the micro. We also eat different kinds of salads, sandwiches with fruit and some skillet meals. we'll also do breakfast items. and I have a george foreman grill that we use inside for grilled items. Good luck.

Pasta salad with fresh veggies and fruit on the side.
It was all I ate for a week last month when the AC was on the fritz and temp was in triple digits.
A rotisserie chicken - you don't have to cook it - and it chops up nicely to add to that pasta salad.
Spinach leaves tossed w/mango, blueberries and feta cheese and drizzled w/raspberry balsamic vinegar. Serve w/a tuna fish sandwhich.
Even my meat and potatoes husband can be filled up w/that!
last night i made a greek salad topped with thin sliced cold beef
Baby mixed greens
black olives
sliced red onions
feta
tomatoes
vinigrette
and topped with a pretty piece of cold leftover steak that I thin sliced on an angle. It was pretty, healthy, quick, cool, and staisfying. I served with parmesan focaccia bought at the grocery store.
Gazpacho!! So yummy, healthy, and cool.
Also - tomatoes and cucumbers in "garlic expressions" dressing. Delicious!!
Egg/Tuna salad; great both mixed together
Crock Pot: burger w/Fiesta Party Dip Mix Seasoning (Tastefully Simple), or pop a beef or pork roast in there, or a few turkey breasts or chicken breasts...
Same Crock Pot idea with Vidalia Onion Dressing, Pomegranate Chipotle Sauce, Ole Ole Fiesta Sauce, many of our sauces/seasonings... LOVE the Crock Pot in the summer!
I LOVE cold cous cous(sp?) salad with fresh basil, tomatoes and motzarella cheese balls. Super filling and just right for summer!
